Abstract

PURPOSE: To obtain a yokan (sweet jelly) having improved nutritive value and useful as a healthful food, by pulverizing a roasted and steamed adlay, mixing a seed koji with the adlay to prepare a koji kneading the koji with hot water containing agar and sugar dissolved therein, and cooling and solidifying the kneaded mass.
CONSTITUTION: A polished adlay is washed with water, dried and pulverized to give powder, which is lightly roasted, steamed and spread over a hot bed and kept at about 35°C. A seed koji is mixed therewith and placed in a koji chamber to prepare a koji. The resultant koji is dried and pulverized to give powder. On the other hand, a square agar is put into 0.27l water, heated and dissolved, mixed with 220g sugar and boiled. 75g dried powder of the adlay koji is introduced in portions into the solution thus obtained and kneaded, and the heating is stopped. The mixture is then poured into a mold, cooled and solidified to give the aimed sweet jelly. Since the sweet jelly is made of the adlay having a high nutritive value, the sweet jelly has a high nutritive value and also a remedial effect on duodenal ulcer due to the oily substance contained in the adlay.
