Abstract

PURPOSE: To prepare a confection having the fully utilized aroma and flavor unique to Nemacystus decipiens, by mixing the Nemacystus decipiens with a material containing agar-agar as a substrate, and glatinizing the mixture into the form of a jelly or sweet jelly of beans.
CONSTITUTION: 40W250g, expressed in terms of the dry weight, agar-agar is added to 1l water, and dissolved under heating at 100°C with stirring. 0.3W25kg sugar is then added therto and dissolved therein at the same temperature under stirring. Nemacystus decipiens which is previously pulverized in a hydrous amount of 0.3W10kg and if necessary an adequate amount of a fruit juice and various essences are added and heated at about 90W120°C for 40W80min under stirring to dissolve the Nemacystus decipiens. The resultant solution is then allowed to cool and solidified.
