Abstract
PURPOSE: To prevent the loss and scattering of an aromatic ingredient and to age the taste of a food without requiring addition of water and, heating by blending a granular food, e.g., powdered milk, powdered cream, etc. with middle-chain fats and oils, followed by adding aromatic powder to the blend so that the surfaces of the granules are covered.
CONSTITUTION: Middle-chain fats and oils, triglyceride of 6, 8, 10C saturated fatty acid is added to a granular food, e.g., powdered milk, powdered cream, etc. and blended so that the surfaces of the granules are coated with the fats and oils. Aromatic powder is added to the granules so that the surface of the granules are added. For example, 40kg defatted powdered cream granules and 50kg sugar granules are added to a ribbon mixture, 1kg middle-chain fats and oils are added to the mixture and blended for 5min, 10kg cocoa powder and 1kg chocolate powder sprice are added to the blend and blended fully so that the granules are covered with the powder, and they are allowed to stand at room temperature for 2 weeks to give looking product. Powdered spices, cocoa powder, powdered spicery, etc. may be cited as the aromatic powder.
