Abstract
PURPOSE: To obtan a pasty coffee composition for a candy, nougat, etc., having good taste, by blending roasted coffee beam power with edible fats and oils and a milk component.
CONSTITUTION: 10W45pts.wt. roasted coffee powder is blended with 55W35pts.wt. fats and oils (coconut oil, palm kernel oil, palm oil, soybean oil, colza oil, beef tallow, lard, shortening, butter, and 35W20pts.wt. milk component (totally fatty powder milk, defatted powder milk, etc.). When a saccharide (sugar, fruit sugar, milk sugar, dextrin, etc.) is added to the blend, 25W30wt% based on total amount of the composition of saccharide is added to the blend, which is mixed, ground by a grinding roll, and made into a pasty state.
