Abstract

PURPOSE: To provide a creamy coating material for frying, having excellent palatability and giving fried food without bursting of the coating crust, by compounding soft flour, α-form cornstarch, and edible vegetable oil at specific ratios.
CONSTITUTION: A coating composition composed of water-containing liquid containing (A) 10W40pts.wt. of soft flour, (B) 2W7pts.wt. of α-form cornstarch (C) 4W10pts.wt. of edible oil pref. as coarse droplets of about 5W30μ in diameter, and if necessary, (D) about 0.05W0.15pts.wt. of a surface active agent such as monoglyceride, sugar fatty acid ester, etc.
