Abstract

PURPOSE: To obtain a food additive having natural color and aroma of a citron and good storage stability, by adding condensed essential oil from the husk of the citron to the thin pieces or powder of the husk of the citron prepared by cold temperature treatment.
CONSTITUTION: The husk of a citron is cleaned, frozen, and powdered by a mixer, which is immersed in the same amount of hexane or ethanol for 24W30 hours so that essential oil contained in the husk is extracted. Hexane or ethanol is distilled away from the extracted liquid by a vacuum evaporator at low temperatures to give yellow condensed liquid. Similarly, the husk of a citron is washed, frozen, cut into thin pieces or powdered by a mixer, and subjected to freeze drying to prepare thin pieces or powder of the husk of a citron, to which the condensed liquid is added.
