Claims (4)
- 玄麦を除菌洗浄水切りの後、乳酸菌及び糖類並びに玄麦表皮を構成する繊維状高分子を分解して表皮を軟化させる酵素であるヘミセルラーゼを含有する仕込液を調整し、前記仕込液中に浸漬して液切りし、1〜5日間の密封静置で発酵処理した後に、熟成、破砕若しくは破砕、熟成してなることを特徴とする乳酸発酵玄麦の製造方法。
- 0〜6℃の密封状態で1〜30日間の熟成を行う請求項1記載の乳酸発酵玄麦の製造方法。

- 0〜6℃の密封状態で1〜30日間の熟成を行って製出してなる請求項3記載の乳酸発酵玄麦。
