本発明は、ネル内のコーヒー粉に自動で注湯してコーヒーを抽出するためのコーヒーメーカーに関するものである。

【従来の技術】
一般に、コーヒー店などにおいて簡単にコーヒーを抽出するために、ネル内のコーヒー粉に自動で注湯可能なコーヒーメーカーを使用することが多い。図11にコーヒーメーカーの一例を示す(特許文献1)。図11(a)はコーヒーメーカーの断面図、図11(b)はバスケット蓋の平面図である。

このコーヒーメーカーは、コーヒー粉101を貯める濾材102と、濾材102をセットするコーヒーバスケット103と、コーヒーバスケット103に注湯する吐出パイプ104と、吐出パイプ104に水タンク105の水を加熱して導く加熱パイプ106、ヒータ107および昇水パイプ108と、コーヒーを受けるコーヒー受容器109とを備えている。

【発明が解決しようとする課題】
ところで、熟練した人の手によるコーヒーの注出では、中心から渦巻き状に、いわゆる「の」字を描くように注湯して、湯をコーヒー粉の全体に行き渡らせるようにしている。

しかし、上記のコーヒーメーカーは、水路の孔から湯を落下させる構成であるため、コーヒー粉の特定の部位にのみ注湯され、湯の流れやすい通り道を形成するおそれがある。湯の通り道が形成された場合、通り道付近のコーヒー粉からはどんどん成分が注出され、通り道から離れた部位のコーヒー粉からは成分が抽出されない、いわゆる抽出ムラが生じやすい。

本発明は、自動で注湯して、コーヒー粉の全体に湯を行き渡らせることができるコーヒーメーカーを提供することを目的とする。

【課題を解決するための手段】
上記課題に鑑み、本発明は、コーヒー粉を貯める袋状の濾過材と、この濾過材を保持するホルダーと、濾過材内のコーヒー粉に注湯するための注湯装置とを備えた構造を前提として、注湯装置に湯を噴き出すノズルを設け、濾過材の内周に沿って湯が流れるように、ノズルからの湯の噴き出し方向を、コーヒー粉の上面周縁よりも内側に向け、かつ濾過材内のコーヒー粉の上面中央を中心とする円の接線方向に沿う斜め方向に設定したコーヒーメーカーを提供するものである。

この構成によれば、コーヒー粉の上面中央を中心とする円の接線方向に沿って湯を噴き出すことにより、コーヒー粉の周方向に湯を流すことができるので、「の」字を描く注湯に近づけて、コーヒー粉の全体に湯を行き渡らせることができる。

湯を斜めに噴き出すための構成として、ノズルの中心に一つの噴出孔を形成して、その周囲の同一円周上に複数の噴出孔を形成する。周囲の複数の噴出孔からの湯の噴き出し方向が前述の接線方向に沿う斜め方向になるように、周囲の複数の噴出孔の中心軸を鉛直方向に対して傾斜して形成する。

ノズルの噴出孔を、噴き出される湯のぶれを防止可能な長さに設定すれば、湯の噴き出しが安定して一定の方向に向かうので、ネル内の所定の部位に注湯することができる。ここで、湯のぶれとは、湯の噴き出し方向が変化して一定の方向に定まらない状態をいう。この湯のぶれを防止可能な長さは、湯の流速などによって異なるが、孔径と略同一の長さを目安にすることができる。

コーヒー粉の上面とノズルとの間隔をコーヒー粉の量に関わらず一定とすれば、異なる量のコーヒーを抽出するときにも、設定された一定の位置に湯を当てることができる。これにより、コーヒー粉の量に関わらず同じノズルを使用することができる。

つまり、湯を斜めに噴き出すので、コーヒー粉の上面とノズルとの間隔が異なれば注湯される部位がずれて、湯が全体に行き渡らなくなる。そのため、コーヒー粉の量ごとにコーヒー粉とノズルとの間隔が異なる場合、その都度、湯の噴き出し方向を調節する必要がある。そこで、コーヒー粉の量に応じて濾過材の形状を変えたり、濾過材を保持する位置を変えたりすることにより、コーヒー粉の上面とノズルとの間隔を一定とする。これにより、ノズルからの湯がコーヒー粉の上面に当たる角度を一定にすることができる。

【発明の実施の形態】
以下、本発明に係るコーヒーメーカーの実施の形態について、図面を用いて説明する。図1は本発明のコーヒーメーカーの側面図、図2は正面図、図3は平面図、図4はノズル先端のキャップの平面図、図5はA−A断面図、図6はB−B断面図である。

このコーヒーメーカーは、自動で注湯してコーヒーを抽出するためのものであり、機器本体1と、コーヒー粉2を貯めるネル3と、ネル3を保持するネルホルダー4と、ネル3内のコーヒー粉2に注湯するための注湯装置5と、注出されたコーヒーを貯めるコーヒー受容器6とを備えている。

機器本体1は、正面側が開放された略コ字形とされ、その正面側の空間にネル3およびコーヒー受容器6が配置される。この機器本体1は、基部1aと背部1bと頭部1cとからなり、頭部1cの両側から下方に向けてネルホルダー4が突設されている。このネルホルダー4にネル3を係脱させることにより、簡単に機器本体1にネル3を着脱することができる。

注湯装置5は、機器本体1の背部1bの上部に内装された貯湯タンク11と、頭部1cから下方に湯を噴き出すノズル12と、貯湯タンク11からノズル12に湯を導くパイプ13と、ノズル12を開閉する電磁バルブ14とからなり、バルブ14を開放することにより、ノズル12から湯を噴き出すようになっている。タンク11は、図示しないヒータを備え、タンク内に水を供給して湯を沸かすようになっている。タンク11からノズル12への給湯は、湯の自重又はポンプによる。

つまり、コーヒー粉2の上面周縁にお湯を注いだり過剰な注湯を行ったりしたとき、図9(b)に示すように、ネル3に沿ってお湯が引っ張られ、均一な蒸らしができない。そのため、湯の最初に通った道が周りに比べて湯の流れやすい通り道となり、この通り道付近のコーヒー粉2のみから成分が抽出され、他の部分から成分が抽出されない、いわゆる抽出ムラが生じる。

一方、良好な蒸らしにより、湯が均一に拡散して、コーヒー粉2にまんべんなく染み渡る。このとき、コーヒー粉3のバランスが崩れることなくドーム状に盛り上がり、コーヒー受容器6に落ちるコーヒーを数滴程度に抑えることができる。なお、良好な蒸らしのバランス(粉の上にお湯が乗った状態)のとき、(毛細管現象による浸透+重力+注湯の力>表面張力+コーヒー粉の膨張+発生するガス圧)の関係が成り立つ。

抽出用の注湯では、図10(a)に示すように、ネル3内の1/3程度の湯が落ちたときに注湯するようにして、数回(注湯2〜n)に分けて注湯し、抽出用の注湯時間(t2〜tn)および注湯停止時間(T2〜Tn)において、連続的に濾過するようにしている。これにより、ネル3内のコーヒー粉2および湯が中心から下に吸い込まれて、コーヒー粉2による底層および外壁が形成され、この底層および外壁がフィルターとなって、コーヒーの成分を十分に抽出すると共に、雑味成分をセーブすることができる。

ここで、蒸らしの後に一気に注湯した場合、図10(b)に示すように、コーヒー粉2の底層および外壁が薄くなり、かつ湯量が多いので濾過速度が速くなり、コーヒー粉2がフィルターとして機能しにくくなる。一方、数回に分けて注湯することにより、図10(c)に示すように、適度の厚さの底層および外壁を形成することができる。

なお、本発明は、上記の実施の形態に限定されるものではなく、本発明の範囲内において、適宜変更を加えることができる。例えば、ノズル12から湯を斜めに噴き出すための構成として、傾斜した噴出孔16bを形成する代わりに、ノズル12の外部に、噴き出す湯を所定の方向に向けるガイドを設けてもよい。また、注湯時間の設定により注湯する湯量を調節する代わりに、湯の流量を調節可能な構成にしてもよい。

【発明の効果】
以上の説明から明らかな通り、本発明によると、ネル内のコーヒー粉の上面中央を中心とする円の接線方向に沿って、湯を斜めに噴き出して注湯するようにしている。そのため、自動で注湯した湯をコーヒー粉の全体に行き渡らせることができ、人の手による「の」字を描くような注湯に近づけることができる。また、注湯する時間の長さと注湯を止める時間の長さとを、あらかじめ設定しておくので、コーヒーメーカーによるコーヒーの味を熟練した人が作るコーヒーの味に近づけることができる。
