Abstract

a. Procédé pour la fabrication d'un produit alimentaire, stable, ne secrétant pas d'eau, capable d'être étalé, de préférence à base de matière grasse du lait par lequel on amène à une émulsion graisse dans l'eau, telle que de la crème, avec ou sans additifs, maturée ou non, acide ou non, une énergie mécanique, telle que s'effectue la transformation en une phase aqueuse d'émulsion d'eau dans la graisse. b. Procédé caractérisé en ce que l'amenée d'énergie mécanique est effectuée dans la même opération de traitement pour accroître la phase aqueuse dans l'émulsion d'eau dans la graisse, et l'amenée d'énergie mécanique est terminée seulement lorsque la totalité de la fraction de phase aqueuse est liée complètement et de manière stable dans la phase de graisse. c. Procédé applicable à la fabrication de beurre.
