Abstract

In mfr. of cheese by a process which includes an acidification or demineralisation stage, the acidification is effected by the immediate and controlled addition of lactic acid to the milk, this acid being formed biologically in a cheese room whey. The process is applied when it is desired to reduce the acidification time and shorten the mfg. cycle, or, for a given acidification time, to obtain a more complete removal of the mineral salts from the curd. After coagulation has taken place some of the whey which separates is sent to an acidifying plant, after a thermal treatment at 100 degrees C to ppt. the proteins and the mineral salts. The whey is re-seeded with suitable fermentation agents and re-enters the mfg. cycle, as an equivalent of a dil. lactic acid soln.
