Description
In der Regel werden jedoch senkrecht zur Schneidgutauflagefläche verlaufende Schnittflächen gewünscht, wobei in diesem Fall bei einer bevorzugten Ausführungsform der erfindungsgemäßen Schneidvorrichtung die Schneidebene bzw. die Führung des Schneidmessers bei einem Schwenkwinkel von 0° senkrecht zur Schneidgutauflagefläche verläuft und insbesondere der Schwenkwinkel in einem Bereich von ± 3° einstellbar ist. Bevorzugt ist der Schwenkwinkel dabei stufenlos verstellbar.

Claims (10)
- Schneidvorrichtung für Lebensmittelprodukte (6), insbesondere für Käse, mit einem entlang einer in einem Rahmen (7) gehaltenen Führung (4) beweglichen Schneidmesser (1) und Vorschubmitteln (8) zur Erzeugung einer im wesentlichen senkrecht zur Schneidebene gerichteten Relativbewegung zwischen dem Rahmen (7) und einer Schneidgutauflagefläche (5), wobei das Schneidmesser (1) derart mit der Führung (4) gekoppelt ist, daß ein Ausweichen des Schneidmessers (1) infolge unterschiedlicher, senkrecht zur Schneidebene wirkender Kraftkomponenten möglich ist,
dadurch gekennzeichnet , daß die fest mit dem Schneidmesser (1) verbundene Führung (4) im Rahmen (7) um eine parallel zur Schneidebene und parallel zur Schneidgutauflagefläche (5) verlaufende Achse (A) schwenkbar gelagert ist. - Schneidvorrichtung nach Anspruch 1,
dadurch gekennzeichnet, daß die Schneidebene bei einem Schwenkwinkel α von 0° senkrecht zur Schneidgutauflagefläche (5) verläuft. - Schneidvorrichtung nach einem der vorhergehenden Ansprüche,
dadurch gekennzeichnet, daß der Schwenkwinkel α im Bereich von ± 3° einstellbar ist, und/oder daß der Schwenkwinkel α stufenlos verstellbar ist. - Schneidvorrichtung nach einem der vorhergehenden Ansprüche,
dadurch gekennzeichnet, daß das Schneidmesser 1 zwischen zwei parallelen, sich entlang der Schneidebene erstreckenden Führungsstangen (4) geführt ist. - Schneidvorrichtung nach Anspruch 4,
dadurch gekennzeichnet, daß das Schneidmesser parallel beabstandet zu der durch die Achsen der Führungsstangen definierten Führungsebene angeordnet und zur Erzeugung der Schneidbewegung von einer Kurbelstange beaufschlagt ist, welche von einer Kurbel antreibbar ist, die auf der dem Schneidmesser abgewandten Seite der genannten Führungsebene angeordnet ist. - Schneidvorrichtung nach einem der Ansprüche 4 oder 5,
dadurch gekennzeichnet, daß die Führungsstangen (4) oberhalb bzw. unterhalb der Schneidgutauflagefläche (5), insbesondere an deren oberen bzw. unteren Enden schwenkbar am Rahmen (7) gelagert sind. - Schneidvorrichtung nach einem der Ansprüche 4 bis 6,
dadurch gekennzeichnet, daß die Führungsstangen (4) unterhalb bzw. oberhalb der Schneidgutauflagefläche (5), insbesondere an deren unteren bzw. oberen Enden von einem Betätigungselement (9) beaufschlagt sind. - Schneidvorrichtung nach einem der vorhergehenden Ansprüche,
dadurch gekennzeichnet, daß die Schwenkposition der Führung (4) ansteuernde Mittel zur Detektion der Vorschubposition des zu schneidenden Lebensmittelproduktes (6) bzw. zur Bestimmung der in Vorschubrichtung (C) verlaufenden Längserstreckung der vor und hinter der Schneidebene liegenden Teilbereiche des zu schneidenden Lebensmittelproduktes (6) vorgesehen sind, und/oder daß die Schwenkposition der Führung (4) ansteuernde Mittel zur Bestimmung der auf das Schneidmesser (1) wirkenden, insbesondere der senkrecht zur Schneidebene gerichteten Kräfte vorgesehen sind. - Verfahren zum Betrieb einer Vorrichtung nach einem der vorhergehenden Ansprüche,
dadurch gekennzeichnet, daß der Schwenkwinkel α vor der Ausführung eines Schnitts in Abhängig von den zu erwartenden, während des nachfolgenden Schnitts auf das Schneidmesser (1) wirkenden Kräfte eingestellt wird, wobei insbesondere die Einstellung vor der Ausführung eines jeden Schnitts vorgenommen wird. - Verfahren zum Betrieb einer Vorrichtung nach einem der Ansprüche 1 bis 9,
dadurch gekennzeichnet, daß der Schwenkwinkel α während der Ausführung eines Schnitts in Abhängigkeit von den während des Schnitts auf das Schneidmesser (1) wirkenden Kräften eingestellt wird.
