Abstract
本发明公开了一种解酒护肝的多肽饮品,属于一种多肽饮品,由以下原料制成:食醋、蜂蜜、植物肽溶液以及中药辅料组成,所述植物肽溶液包含玉米肽和绿豆肽;所述中药辅料包括:枸杞、黄精、桑葚、桂圆、葛根、葛花、大枣、枳椇子、玉米须和重瓣红玫瑰;所述食醋10~14份、所述蜂蜜45~90份、所述植物肽溶液50~95份、所述中药辅料20~48份;本发明主要成份为药食同源,能抑制胃对酒精的吸收,增加体内乙醇脱氢酶和乙醛脱氢酶的活性,促进酒精在体内的代谢和排出;另外,各成份相互间发挥协同作用,还能提高肝组织ADH活性,促进乙醇、乙醛代谢,加快乙醇、乙醛代谢产物的消除速率,减轻及修复肝脏组织的细胞损伤,发挥解酒促醒作用,保护肝脏的功能。

技术领域
本发明属于食品加工技术领域,尤其涉及一种解酒护肝的多肽饮品及其制备方法。
背景技术
酒是人类生活中的主要饮料之一。中国制酒历史源远流长,品种繁多,名酒荟萃,享誉中外。黄酒是世界上最古老的酒类之一,约在三千多年前,商周时代,中国人独创酒曲复式发酵法,开始大量酿制黄酒。酒渗透于整个中华五千年的文明史中,从文学艺术创作、文化娱乐到饮食烹饪、养生保健等各方面在中国人生活中都占有重要的位置。
但是酒精对人的损害,最重要的是中枢神经***。它使神经***从兴奋到高度的抑制,严重地破坏神经***的正常功能。过量的饮酒还会损害肝脏,慢性酒精中毒则可导致酒精性肝硬化,因而市面上出现了很多保健品用于解酒护肝。
目前,含片解酒产品需要进行咀嚼后才能进入肠胃,药物作用吸收慢,另外,现有的解酒饮品中只是单纯的加入具有解酒作用的成分,缺少有利于吸收的组合成分,比如葛花提取物需要配合氨基酸才可以在肠胃黏膜上形成保护层,防止酒精快速进入血液。
发明内容
有鉴于此,本发明提供了一种易吸收、作用速率快、解酒护肝、提高肝脏功能等功效的解酒护肝的多肽饮品及其制备方法,此发明的显性功能是对人体内的酒精分解代谢具有良好的作用,隐形功能是能有效地修复酒精肝。
一方面,为了实现上述目的,本发明采用了如下技术方案:一种解酒护肝的多肽饮品,由以下原料制成:食醋、蜂蜜、植物肽溶液以及中药辅料组成,其特征在于:
所述植物肽溶液包含玉米肽和绿豆肽;
所述中药辅料包括:枸杞、黄精、桑葚、桂圆、葛根、葛花、大枣、枳椇子、玉米须和重瓣红玫瑰。

另一方面,为了实现上述目的,本发明采用了如下步骤,一种解酒护肝的多肽饮品的制备方法,其包括以下步骤:
1)制备中药辅料:按比例取葛根和枳椇子,各辅料加入到食醋中浸泡,设定浸泡时间和浸泡温度,浸泡结束后并充分搅匀;
2)熬制中药辅料:按比例取枸杞、黄精、葛花、玉米须、重瓣红玫瑰、桑葚、大枣和桂圆放入锅中,同时将制备好的中药辅料放入锅中,设定熬制时间和熬制温度,熬制结束后并充分搅匀,待其冷却;
3)发酵获得中药辅料液:将熬制好的中药辅料放入一定比例的食醋中发酵,设定发酵时间和发酵温度,发酵结束后并充分搅匀,然后将液体进行过滤获得中药辅料液:
4)制备多肽饮品:取一定量的中药辅料液,取一定量的含有玉米肽和绿豆肽的植物多肽溶液,将植物多肽溶液与中药辅料液混合并充分搅匀,初步形成多肽饮品,再向初步形成的多肽饮品中加入蜂蜜并充分搅匀,形成多肽饮品成品。

1.本发明中,主要成份为药食同源,能抑制胃对酒精的吸收,增加体内乙醇脱氢酶和乙醛脱氢酶的活性,促进酒精在体内的代谢和排出;其在饮酒前或者饮酒后服用,可以快速分解醇类、醛类化合物,并能使酒精肝患者的症状逐渐得到修复和改善,具有良好的解酒护肝功能。
2.本发明中,各成份相互间发挥协同作用,还能提高肝组织ADH活性,促进乙醇、乙醛代谢,加快乙醇、乙醛代谢产物的消除速率,减轻及修复肝脏组织的细胞损伤,发挥解酒促醒作用,保护肝脏的功能。
3.本发明中,采用玉米肽和绿豆肽按比例调和成植物肽溶液,由植物食材制备成的小分子肽,可以快速地被人体吸收,不仅能够减轻肝脏的负担,而且绿豆肽中高含量的氨基酸与葛花提取物作用并在肠胃黏膜上形成保护层,从而抑制胃对酒精的吸收,玉米肽具有抑制酒精中毒和醒酒作用。

下面将结合本发明实施例中的技术方案进行清楚、完整地描述,显然,所描述的实施例仅仅是本发明一部分实施例,而不是全部的实施例。基于本发明中的实施例,本领域普通技术人员在没有作出创造性劳动前提下所获得的所有其它实施例,都属于本发明保护的范围。
实施例1:
按照下列重量份选取原料:食醋10份、蜂蜜80份、所述植物肽溶液90份,其中,玉米肽60份、绿豆肽30份;所述中药辅料36份,其中,枸杞、黄精、桑葚、桂圆、大枣、重瓣红玫瑰各3份,葛根、葛花、枳椇子、玉米须各6份。
1)制备中药辅料;按上述重量份取葛根和枳椇子,提前将枳椇子剖开,提前将葛根用破壁机粉碎成葛根粉末,放入食醋中浸泡30min,浸泡温度设置在20~ 30℃,浸泡结束后并充分搅匀;
2)熬制中药辅料:按比例取枸杞、黄精、葛花、玉米须、重瓣红玫瑰、桑葚、大枣和桂圆放入锅中,同时将制备好的中药辅料放入锅中熬制30min,设定熬制温度为160℃,熬制结束后并充分搅匀,待其冷却;
3)发酵获得中药辅料液:将熬制好的中药辅料放入一定比例的食醋中发酵3 天,设定发酵温度为20~30℃,发酵结束后并充分搅匀,然后将液体进行过滤获得中药辅料液;
4)制备多肽饮品:取一定量的中药辅料液,取一定量的含有玉米肽和绿豆肽的植物多肽溶液,将植物多肽溶液与中药辅料液混合并充分搅匀,初步形成多肽饮品,再向初步形成的多肽饮品中加入蜂蜜并充分搅匀,形成多肽饮品成品。
实施例2:
按照下列重量份选取原料:食醋14份、蜂蜜55份、所述植物肽溶液60份,其中,玉米肽40份、绿豆肽20份;所述中药辅料48份,其中,枸杞、黄精、桑葚、桂圆、大枣、重瓣红玫瑰各4份,葛根、葛花、枳椇子、玉米须各8份。
1)制备中药辅料;按上述重量份取葛根、和枳椇子,提前将枳椇子剖开,提前将葛根用破壁机粉碎成葛根粉末,放入食醋中浸泡50min浸泡温度设置在 20~30℃,浸泡结束后并充分搅匀;
2)熬制中药辅料:按比例取枸杞、黄精、葛花、玉米须、重瓣红玫瑰、桑葚、大枣和桂圆放入锅中,同时将制备好的中药辅料放入锅中熬制50min,设定熬制温度为140℃,熬制结束后并充分搅匀,待其冷却;
3)发酵获得中药辅料液:将熬制好的中药辅料放入一定比例的食醋中发酵4 天,设定发酵温度为20~30℃,发酵结束后并充分搅匀,然后将液体进行过滤获得中药辅料液;
4)制备多肽饮品:取一定量的中药辅料液,取一定量的含有玉米肽和绿豆肽的植物多肽溶液,将植物多肽溶液与中药辅料液混合并充分搅匀,初步形成多肽饮品,再向初步形成的多肽饮品中加入蜂蜜并充分搅匀,形成多肽饮品成品。

1)制备中药辅料;按上述重量份取葛根和枳椇子,提前将枳椇子剖开,提前将葛根用破壁机粉碎成葛根粉末,放入食醋中浸泡40min,浸泡温度设置在20~ 30℃,浸泡结束后并充分搅匀;
2)熬制中药辅料:按比例取枸杞、黄精、葛花、玉米须、重瓣红玫瑰、桑葚、大枣和桂圆放入锅中,同时将制备好的中药辅料放入锅中熬制40min,设定熬制温度为150℃,熬制结束后并充分搅匀,待其冷却;
3)发酵获得中药辅料液:将熬制好的中药辅料放入一定比例的食醋中发酵4 天,设定发酵温度为20~30℃,发酵结束后并充分搅匀,然后将液体进行过滤获得中药辅料液;
4)制备多肽饮品:取一定量的中药辅料液,取一定量的含有玉米肽和绿豆肽的植物多肽溶液,将植物多肽溶液与中药辅料液混合并充分搅匀,初步形成多肽饮品,再向初步形成的多肽饮品中加入蜂蜜并充分搅匀,形成多肽饮品成品。
本发明中各成分的作用原理:
玉米肽:是从玉米中提取的蛋白质,经过定向酶切及特定小肽分离技术获得的小分子多肽物质。含有人体必须的各种氨基酸,提供氨基酸及肽能营养。具有抑制血管紧张素转换酶的作用,从而降低血压;具有抑制酒精中毒和醒酒作用;具有抗疲劳、保肝、提高机体免疫力等功能;特别是玉米肽中的高浓度支链氨基酸,能促进肝脏分解酒精,减少酒精等化学成分对肝脏的伤害,对酒后的肝脏恢复具有保护作用;玉米肽中含有大量的谷氨酸,从而补充血液中因受酒精抑制而减少的谷氨酸,维持脑细胞的能量供应和神经活动,避免酒精对神经***的伤害,缓解酒后头疼头晕等症状;玉米肽能激活体内ADH(酶)的活性,通过加强酶的催化效率、生成数量,从而提升乙醇的代谢率;玉米肽能提高血液中酸的含量,产生一种福脱氢酶,福脱氢酶能够稳定地分解乙醇,从而降低乙醇在血液中的浓度,避免酒精中毒。
绿豆肽:是以绿豆蛋白为原料,利用生物复合酶酶解绿豆蛋白及采用定向酶切割技术而获得的小分子肽类物质。绿豆肽蛋白含量丰富,富含各种氨基酸,尤其是赖氨酸含量更高。绿豆中含有丰富的蛋白质,内服可保护胃肠粘膜,绿豆鞣酸和黄酮类化合物可与有机磷的农药、汞、砷、铅等有毒的元素结合形成沉淀,减轻或失去毒性,并不易被肠道吸收。
玉米须:为禾本科植物玉蜀黍的花柱和柱头,味甘、淡,性平,有利尿消肿、清肝利胆的功效,可提高肝脏解毒功能,而且能促进胆汁分泌,防止胆固醇在身体内堆积,具有护肝的功效。
枳椇子:为鼠李科枳椇属植物北枳椇和毛果枳椇的成熟种子。味甘,性平。具有解酒毒、止渴除烦、止呕、利大小便的功效。枳椇子中含有大量的葡萄糖、有机酸,既能扩充人体的血容量,又能解酒毒;具体地,枳椇子能降低乙醇在血液中的浓度,促进乙醇的清除,减轻乙醇对肝脏组织的伤害,避免酒精中毒。现代医学研究表明,枳惧子含葡萄糖、果糖、硝酸钾、过氧化物酶等。枳惧子及其复方能显著降低乙醇在血液中的浓度,促进乙醇的清除,减轻乙醇对肝组织的损伤,避免酒精中毒导致各种代谢异常。民间有“千杯不醉枳惧子”的说法。
葛根:为豆科植物野葛的干燥根,习称野葛。秋、冬二季采挖,趁鲜切成厚片或小块;干燥。甘、辛,凉。有解肌退热,透疹,生津止渴,升阳止泻之功。常用于表证发热,项背强痛,麻疹不透,热病口渴,阴虚消渴,热泻热痢,脾虚泄泻。葛根粉中的大豆甙,可以分解乙醇《药性论》称葛根“开胃下食,主解酒毒,止烦渴”;《本草拾遗》记载,葛根粉“解酒毒”;《千金方》有“葛根汁一斗二升,饮之治酒醉不醒”之说。
葛花:味甘,性凉。用于伤酒烦热口渴,头痛头晕,脘腹胀满,呕逆吐酸,不思饮食,吐血,肠风下血。葛花提取物配合氨基酸可以在肠胃黏膜上形成保护层,防止酒精快速进入血液。葛花解醒汤载于元代李东垣《脾胃论》一书,是一首解酒名方,流传广泛,无论是一时饮酒过量,还是嗜酒太过,损伤脾胃,表现为眩晕呕吐、心神烦乱、胸膈痞闷、手足战摇、食少体倦、小便不利等症状,均可使用。
食醋:有开胃、养肝、散瘀、止痛的功效。功能主治:散瘀,止血,解毒,杀虫。乙酸对甲型链球菌、卡他球菌、肺炎链球菌、白色葡萄球菌、流感病毒的多种致病菌,有很好的抑菌和杀菌作用。
蜂蜜:可以替换为蔗糖、葡萄糖、果糖或木糖醇,但优选使用蜂蜜。区别于其他成分,蜂蜜味甘,性平,可补中、润燥、止痛、解毒。三者合用,可以滋阴养肝、补中开胃。
桑葚:是桑科桑属多年生木本植物桑树的果实,具有防止血管硬化、健脾胃,助消化、补充营养、乌发美容、防癌抗癌、治疗贫血等功效。
黄精:又名:鸡头黄精、黄鸡菜、笔管菜、爪子参、老虎姜、鸡爪参。为黄精属植物,根茎横走,圆柱状,结节膨大。叶轮生,无柄。药用植物,具有补脾,润肺生津的作用。
大枣:即红枣,甘,温。归脾、胃经。保留枣核、枣皮,全果入药,功能主治:补脾和胃,补中益气,养血安神,解药毒,补充肝血不足,保护肝脏,增强肝脏的排毒功能。
枸杞子:甘,平。归肝、肾经。功能主治:滋补肝肾,益精明目。用于虚劳精亏,腰膝酸痛,眩晕耳鸣,内热消渴,血虚萎黄,目昏不明。枸杞中含有丰富的胡萝卜素、多种维生素和钙、铁等健康眼睛的必需营养物质,故有明目之功。枸杞子富含枸杞多糖,枸杞多糖是一种水溶性多糖,由***糖、葡萄糖、半乳糖、甘露糖、木糖、鼠李糖这6种单糖成分组成,具有生理活性,能够增强非特异性免疫功能,提高抗病能力,抑制肿瘤生长和细胞突变。
重瓣红玫瑰:味甘。有理气解郁、和血散淤,消肿止痛、美容养颜之功效,能清暑热、解烦渴、醒脾益胃及止血收敛。
桂圆:益气养血、健脾养胃,营养丰富,也有大量的蛋白质和矿物质,对肝脏的养护有益。

Claims (10)
1.一种解酒护肝的多肽饮品,由以下原料制成:食醋、蜂蜜、植物肽溶液以及中药辅料组成,其特征在于:
所述植物肽溶液包含玉米肽和绿豆肽;
所述中药辅料包括:枸杞、黄精、桑葚、桂圆、葛根、葛花、大枣、枳椇子、玉米须和重瓣红玫瑰。
2.根据权利要求1所述的一种解酒护肝的多肽饮品,其特征在于,所述原料按以下重量份制成:所述食醋10~14份、所述蜂蜜45~90份、所述植物肽溶液50~95份、所述中药辅料20~48份。
3.根据权利要求2所述的一种解酒护肝的多肽饮品,其特征在于,所述植物肽溶液中玉米肽∶绿豆肽=2∶1。
4.根据权利要求2所述的一种解酒护肝的多肽饮品,其特征在于,所述中药辅料中枸杞∶黄精∶桑葚∶大枣∶桂圆∶葛根∶葛花∶枳椇子∶玉米须∶重瓣红玫瑰=1∶1∶1∶1∶1∶2∶2∶2∶2∶1。
5.一种解酒护肝的多肽饮品的制备方法,其特征在于,包括以下步骤:
1)制备中药辅料:按比例取葛根、和枳椇子,各辅料加入到食醋中浸泡,设定浸泡时间和浸泡温度,浸泡结束后并充分搅匀;
2)熬制中药辅料:按比例取枸杞、黄精、葛花、玉米须、重瓣红玫瑰、桑葚、大枣和桂圆放入锅中,同时将制备好的中药辅料放入锅中,设定熬制时间和熬制温度,熬制结束后并充分搅匀,待其冷却;
3)发酵获得中药辅料液:将熬制好的中药辅料放入一定比例的食醋中发酵,设定发酵时间和发酵温度,发酵结束后并充分搅匀,然后将液体进行过滤获得中药辅料液;
4)制备多肽饮品:取一定量的中药辅料液,取一定量的含有玉米肽和绿豆肽的植物多肽溶液,将植物多肽溶液与中药辅料液混合并充分搅匀,初步形成多肽饮品,再向初步形成的多肽饮品中加入蜂蜜并充分搅匀,形成多肽饮品成品。
6.根据权利要求5所述的一种解酒护肝的多肽饮品的制备方法,其特征在于,所述步骤1)中的浸泡时间为30~50min,浸泡温度为20~30℃。
7.根据权利要求5所述的一种解酒护肝的多肽饮品的制备方法,其特征在于,所述步骤2)中的熬制时间为30~50min,熬制温度为140~160℃。
8.根据权利要求5所述的一种解酒护肝的多肽饮品的制备方法,其特征在于,所述步骤3)中的发酵时间为3~4天,发酵温度为20~30℃。
9.根据权利要求5所述的一种解酒护肝的多肽饮品的制备方法,其特征在于,所述步骤1)中的所述葛根使用破壁机粉碎成葛根粉末,所述枳椇子对半剖开。
10.权利要求5所述的一种解酒护肝的多肽饮品的制备方法,其特征在于,所述步骤3)中所述食醋的重量份占5%~7%。
