本发明涉及诸如冰淇淋的冷冻甜食。特别地,本发明涉及配制为在低温下从容器中分配的冷冻甜食。
背景技术
近年来,已经开发了用于分配诸如软质冰淇淋的冷冻甜食的***,在该***中预包装的冰淇淋通过分配装置从容器中输送。特别地,已经开发了使用瓶中袋式容器或活塞式盒的***。
WO 2013/124193 A公开了用于分配冷冻甜食的方法,其包括:提供绝热冷藏室,其容纳至少一个在-12℃或更低的温度下含有冷冻甜食的容器;其中该至少一个容器具有由自关闭阀封闭的出口;其中该容器包含位于瓶内部的含有冷冻甜食的柔性袋;在瓶内部和柔性袋外部的区域中压入气体,从而向冷冻甜食施加压力,以便使阀门打开并将冷冻甜食通过出口挤出容器;释放压力,以便使阀门关闭。

本发明人已认识到,需要改进用于分配诸如软质冰淇淋的冷冻甜食的***的配方。特别地,本发明人已发现,需要流变性对温度依赖较小并且因此能够在低温下挤出,但在较高温度下挤出时具有所需结构的冷冻甜食。这是重要的,因为商用和家用储存冷冻器具有可变的储存温度。本发明人发现,当用特定量和类型的凝固点降低剂配制甜食并且其中凝固点降低剂包含特定量的赤藓糖醇时,可以提供改进的甜食。
赤藓糖醇(丁烷-1,2,3,4-四醇)是已在营养食品中用作甜味剂和糖替代品的糖醇。
WO 98/16120 A公开了果汁冰糕,其含有赤藓糖醇且具有柔软质构;并且公开了其制作方法。据说这提供了低热量的果汁冰糕,即使其含有赤藓糖醇,其在冷冻状态下也显示低硬度,并因此具有柔软质构,即使刚刚将其从冷冻器中取出,也能容易地***勺子。
EP 0 965 277 A公开了冰冻甜点,其包含作为甜味剂和质构剂的赤藓糖醇,以及用于控制该冰甜点的融化的选自糊精和/或不可消化的糊精的试剂。该冰冻甜点特别地不加糖而配制。

平均分子量
为本发明的目的,凝固点降低剂的混合物的平均分子量由数均分子量<M>n(方程1)定义。其中wi是种类i的质量,Mi是种类i的摩尔质量,并且Ni是摩尔质量Mi的种类i的摩尔数。
凝固点降低剂
如本发明中定义的凝固点降低剂包括:
·单糖和二糖;
·含有以糖苷键连接的三至十个单糖单元的寡糖;
·右旋糖当量(DE)大于20,优选>40且更优选>60的玉米糖浆。玉米糖浆是复杂的多组分糖混合物,而右旋糖当量是普通工业分类手段。由于它们是复杂混合物,所以它们的数均分子量<M>n可由以下方程2计算。(Journal of Food Engineering,33(1997)221-226)
·赤藓糖醇、***糖醇、甘油、木糖醇、山梨糖醇、甘露糖醇、乳糖醇和麦芽糖醇;
·乙醇
膨胀率
膨胀率(OR)由以下方程3定义。
其在大气压下测量。环境温度为20℃。
发明内容
在第一方面,本发明涉及冷冻甜食,其包含量为所述冷冻甜食的25-35重量%的凝固点降低剂,其中所述凝固点降低剂的数均分子量<M>n为200-250g mol-1,并且其中所述凝固点降低剂包含量为所述冷冻甜食的0.25-7重量%的赤藓糖醇。
产品中冰的量在很大程度上由凝固点降低剂的量和分子量决定。本发明人已发现,若冰的量太高,则无论赤藓糖醇存在与否,甜食都变得在见于某些存储冷冻器中的低温(例如-22℃)下太难挤出。因此,凝固点降低剂的数均分子量<M>n不大于250g mol-1,并且其存在量为冷冻甜食的至少25重量%。
优选地,凝固点降低剂的量为冷冻甜食的至少26重量%,更优选至少27重量%。
优选地,凝固点降低剂的数均分子量<M>n不大于240g mol-1,更优选不大于230gmol-1,并且最优选不大于220g mol-1。
另一方面,若凝固点降低剂的量变得太高和/或其分子量变得太低,则在一些储存冷冻器中遇到的较高温度(例如-16℃)下,流变会太像液体。因此,凝固点降低剂的数均分子量<M>n不小于200g mol-1,并且其量不超过冷冻甜食的至少35重量%。
优选地,凝固点降低剂的量不超过冷冻甜食的32重量%,更优选不超过31重量%,并且最优选不超过30重量%。
优选地,凝固点降低剂的数均分子量<M>n不低于205g mol-1,更优选不低于210gmol-1,并且最优选不低于212g mol-1。
本发明人已发现,赤藓糖醇在向冷冻甜食赋予期望的流变性方面特别有效。此外,与某些其它糖醇相比,赤藓糖醇不产生令人不愉快的异味,不过于甜,并且不干扰食物的自然消化和***。
优选地,赤藓糖醇的量为冷冻甜食的至少0.5重量%,更优选至少0.7重量%,并且最优选至少1重量%。
优选地,赤藓糖醇的量不太高,否则甜食可能太像液体和/或可能难以配制具有期望甜度的甜食。因此,优选赤藓糖醇的量不超过冷冻甜食的6重量%,更优选不超过5重量%,进一步更优选不超过4重量%,并且最优选不超过3重量%。
除赤藓糖醇之外,优选凝固点降低剂基本上由糖类组成。优选凝固点降低剂包含占凝固点降低剂至少90重量%,更优选至少92重量%的单糖、二糖和寡糖。凝固点降低剂中的单糖、二糖和寡糖及赤藓糖醇的总量优选为凝固点降低剂的至少98重量%,更优选99-100重量%。
尤其优选的二糖是乳糖,因为其提供凝固点降低,而不产生大量甜味。优选凝固点降低剂包含量为凝固点降低剂的至少5重量%,更优选为凝固点降低剂的10-25重量%的乳糖。乳糖可作为乳固形物的一部分存在于甜食中,和/或与乳固形物分开添加。
某些凝固点降低剂是不合需要的,因为它们产生不想要的味道和/或生理效应。
优选冷冻甜食包含低于冷冻甜食的0.5重量%的乙醇,更优选低于0.1重量%,并且进一步更优选低于0.01重量%,且最优选为0重量%。
优选冷冻甜食包含低于冷冻甜食的1.5重量%的甘油,更优选低于1重量%,并且进一步更优选低于0.5重量%,且最优选为0.2-0重量%。另外或替代地,冷冻甜食中***糖醇、甘油、木糖醇、山梨糖醇、甘露糖醇、乳糖醇和麦芽糖醇的总量低于冷冻甜食的1.5重量%,更优选低于1重量%,并且进一步更优选低于0.5重量%,且最优选为0.2-0重量%。
优选冷冻甜食包含低于冷冻甜食的5重量%的果糖,更优选低于3重量%,并且最优选为0-2重量%。
优选凝固点降低剂给冷冻甜食赋予期望的甜味,而无需使用强力甜味剂。“强力甜味剂”是指阿斯巴甜、糖精、安赛蜜、阿力甜、索马甜、甜蜜素、甘草甜素、甜菊苷、新橙皮苷、三氯蔗糖、应乐果甜蛋白和纽甜。优选冷冻甜食基本上不含强力甜味剂。更优选冷冻甜食包含强力甜味剂的量低于产生与1%蔗糖同等甜度所需的量,更优选低于产生与0.5%蔗糖同等甜度所需的量,并且最优选低于产生与0.1%蔗糖同等甜度所需的量。另外或替代地,冷冻甜食包含低于0.003%的强力甜味剂,更优选低于0.001%,并且最优选为0.0001-0%。
本发明适用于多种冷冻甜食,并且尽管存在赤藓糖醇,冷冻甜食无需是营养的(dietetic)。例如,冷冻甜食的总能量含量优选为至少150kcal/100g冷冻甜食,更优选至少170kcal/100g冷冻甜食,并且最优选为160-250kcal/100g冷冻甜食。
冷冻甜食通常通过冷冻成分(如水、脂肪、凝固点降低剂、蛋白质(通常为乳蛋白))以及任选的其它成分(如乳化剂、稳定剂、色素和调味剂)的混合物(更优选为巴氏灭菌混合物)来制备。冷冻甜食包括冰淇淋、意式冰淇淋、冷冻酸奶、果汁冰糕、格兰尼它冰糕、刨冰等。优选冷冻甜食为冰淇淋。
冷冻甜食优选为充气的。“充气”是指甜食的膨胀率为至少30%。更优选冷冻充气甜食的膨胀率为70-135%,最优选为80-110%。
冷冻甜食优选包含量为冷冻甜食的1-15重量%,更优选4-12重量%,并且最优选5-10重量%的脂肪。
冷冻甜食优选包含量为冷冻甜食的0.5-8重量%,更优选1-6重量%,并且最优选1.5-5重量%的蛋白质。
冷冻甜食配制为从容器分配。因此,在第二方面,本发明涉及冷冻产品,其包含容器,所述容器包含含有根据第一方面的实施方案的冷冻甜食的产品隔室,其中所述产品隔室包括产品出口和可移动壁,通过所述可移动壁可以传递分配力以促使所述冷冻甜食通过所述产品出口。
可移动壁使得分配力可以穿过壁传递到冷冻甜食。包括可移动壁的容器的实例包括瓶中袋(其中袋用作可移动壁)和含活塞的盒(其中活塞用作可移动壁),但其它配置也是可能的,包括例如具有可变形以成为可移动壁的端壁的容器(例如US 5,893,485中所述)。在WO 2007/039158 A中描述了瓶中袋式容器的实例,并且在EP 1 449 441 A中描述了盒中活塞式容器的实例,这两篇文献整体援引加入。最优选为瓶中袋式容器。
在一个实施方案中,对容器进行调整使得壁可以在施用手的压力时移动。例如,容器可包含可用手挤压的袋。例如,WO 2006/007921 A中描述了合适的袋,该文献的整体援引加入。

实施例1
配制具有不同冰含量(在-18℃下计算)和如表1所示的赤藓糖醇量(以%w/w计的量)的冰淇淋。

通过将根据以上配方制备的混合物巴氏灭菌和匀质化来制备冰淇淋。将混合物在4℃下老化过夜,然后在刮板式换热器(标准的冰淇淋冷冻器)中冷冻和充气。控制冷冻器的空气输入,以达到100%的目标膨胀率(实际膨胀率在92-110%之间变化)。控制冷冻使目标挤出温度为-7℃(实际挤出温度在-6℃至-9℃之间变化)。
将混合物直接挤出至铝制流变杯(rheology cup)和瓶中袋容器中。然后将杯和容器硬化至-25℃储存。
实施例2
本实施例描述实施例1中制备的冰淇淋样品的流变性作为温度的函数的测量。
在流变性测量之前,将流变杯中的样品在设定为感兴趣温度下的便携式冷冻器中平衡过夜。
所有测量均在Anton Paar MCR 501流变仪上进行,该流变仪连接至用于温度控制的双循环浴。流变仪由温度受控样品架和覆盖样品的罩组成。冷空气经由罩吹到样品上,以防止冷凝和结霜。使用叶片10-4V-8.8/116几何结构,其为直径8.8mm、高度10mm且轴长度116mm的4叶叶片。
在***样品前,将叶片降低到测量位置以使叶片、样品架和罩平衡至测试温度—-14℃、-16℃、-18℃、-20℃或-22℃。测量位置设在10mm处。平衡后,将含有样品的流变杯***样品架中,并降低罩直至其接触基座。流变杯的壁是锯齿状的,以防止壁滑。然后将叶片以每秒100μm的极慢速度进一步降低到测量位置,以便不过分损坏样品结构。
在测量开始前,将样品平衡20分钟以允许内部结构恢复,并最终平衡至测试温度。由Rheoplus软件控制,对所有样品进行振幅扫描测试。以10Hz频率下在对数标度上每个十进位10个点施加0.001%至100%的应变范围。测量点持续时间固定为20s。所有测量均一式三份进行,每次测量使用新样品。
从数据获得屈服应力,因为这是冰淇淋流动性的指标。通过在弹性应力和粘性应力之间的交叉点之前找到弹性应力的最高值来确定屈服应力。通过将损耗(弹性)模量乘以应变来计算弹性应力,并且通过将损耗(粘性)模量乘以应变来计算粘性应力。表3示出每个样品的作为温度的函数的平均屈服应力(括号中的值是标准误差)。还给出了每个样品在-22℃下的屈服应力与在-16℃下的屈服应力的比率(R)。
比率(R)给出了样品在家用和商用存储冷冻器的典型温度范围(-16℃至-22℃)内的流动性的温度依赖性的指标。值越大,流动性越可变。从表3中的数据可以看出,对于含有赤藓糖醇的样品(样品B、1、2和3),屈服应力在-16℃至-22℃的温度范围内变化因数为2或更小。另一方面,对于不含赤藓糖醇的样品(样品A和C),在相同的温度范围内,屈服应力的变化因数大大超过2。样品C具有与样品1相同的冰含量(在-18℃下),但缺乏赤藓糖醇并且显示出比样品1更高的屈服应力温度依赖性。

实施例3
本实施例描述测量实施例1的一些样品可以多容易地分配。
将来自实施例1的四个样品的瓶中袋容器在-19℃下回火,然后使用WO 2013/124193 A中描述的装置进行分配。每个容器包含约2kg冰淇淋。冰淇淋的流速通过测量5秒内所分配的质量来确定。结果在表4中示出。

样品A和B均不能在此温度下分配。这两种样品的凝固点降低剂水平给出的冰含量为45%及以上(在-18℃下)。在42%的冰含量下,含有赤藓糖醇的样品(样品1)和不含赤藓糖醇的样品(样品C)均可被分配,但含有赤藓糖醇的样品具有最可接受的流速。
Claims (15)
1.冷冻甜食,其包含量为所述冷冻甜食的25-35重量%的凝固点降低剂,其中所述凝固点降低剂的数均分子量<M>n为200-250g mol-1,并且其中所述凝固点降低剂包含量为所述冷冻甜食的0.25-7重量%的赤藓糖醇。
2.如权利要求1所述的冷冻甜食,其中所述冷冻甜食是充气的,优选其中所述冷冻充气甜食具有70-135%的膨胀率。
3.如权利要求1或2所述的冷冻甜食,其中所述凝固点降低剂的量为所述冷冻甜食的26-32重量%,优选27-31重量%。
4.如前述权利要求中任一项所述的冷冻甜食,其中所述凝固点降低剂的数均分子量<M>n为205-230g mol-1,优选210-220g mol-1。
5.如前述权利要求中任一项所述的冷冻甜食,其中所述赤藓糖醇的量为所述冷冻甜食的0.5-6重量%,优选0.7-3重量%。
6.如前述权利要求中任一项所述的冷冻甜食,其中所述凝固点降低剂包含占所述凝固点降低剂至少90重量%,优选至少92%的单糖、二糖和寡糖。
7.如权利要求6所述的冷冻甜食,其中所述凝固点降低剂中的单糖、二糖和寡糖及赤藓糖醇的总量为所述凝固点降低剂的至少98重量%,优选99-100重量%。
8.如前述权利要求中任一项所述的冷冻甜食,其中所述凝固点降低剂包含量为所述凝固点降低剂的至少5重量%,优选为所述凝固点降低剂的10-25重量%的乳糖。
9.如前述权利要求中任一项所述的冷冻甜食,其中所述冷冻甜食包含低于所述冷冻甜食的0.5重量%,优选低于0.1重量%的乙醇。
10.如前述权利要求中任一项所述的冷冻甜食,其中所述冷冻甜食的总能量含量为至少150kcal/100g冷冻甜食,优选160-250kcal/100g冷冻甜食。
11.根据前述权利要求中任一项所述的冷冻甜食,其中所述冷冻甜食包含量为所述冷冻甜食的1-15重量%,优选4-12重量%的脂肪。
12.根据前述权利要求中任一项所述的冷冻甜食,其中所述冷冻甜食包含量为所述冷冻甜食的0.5-8重量%,优选1-6重量%的蛋白质。
