本发明人已认识到,需要改进用于分配诸如软质冰淇淋的冷冻甜食的***的配方。特别地,本发明人已发现,需要流变性对温度依赖较小并且因此能够在低温下挤出,但在较高温度下挤出时具有所需结构的冷冻甜食。这是重要的,因为商用和家用储存冷冻器具有可变的储存温度。本发明人发现,当用特定量和类型的凝固点降低剂配制甜食并且其中凝固点降低剂包含特定量的赤藓糖醇时,可以提供改进的甜食。
赤藓糖醇(丁烷-1,2,3,4-四醇)是已在营养食品中用作甜味剂和糖替代品的糖醇。
WO 98/16120 A公开了果汁冰糕,其含有赤藓糖醇且具有柔软质构;并且公开了其制作方法。据说这提供了低热量的果汁冰糕,即使其含有赤藓糖醇,其在冷冻状态下也显示低硬度,并因此具有柔软质构,即使刚刚将其从冷冻器中取出,也能容易地***勺子。

实施例1

实施例2
本实施例描述实施例1中制备的冰淇淋样品的流变性作为温度的函数的测量。
在流变性测量之前,将流变杯中的样品在设定为感兴趣温度下的便携式冷冻器中平衡过夜。
所有测量均在Anton Paar MCR 501流变仪上进行,该流变仪连接至用于温度控制的双循环浴。流变仪由温度受控样品架和覆盖样品的罩组成。冷空气经由罩吹到样品上,以防止冷凝和结霜。使用叶片10-4V-8.8/116几何结构,其为直径8.8mm、高度10mm且轴长度116mm的4叶叶片。
在***样品前,将叶片降低到测量位置以使叶片、样品架和罩平衡至测试温度—-14℃、-16℃、-18℃、-20℃或-22℃。测量位置设在10mm处。平衡后,将含有样品的流变杯***样品架中,并降低罩直至其接触基座。流变杯的壁是锯齿状的,以防止壁滑。然后将叶片以每秒100μm的极慢速度进一步降低到测量位置,以便不过分损坏样品结构。
在测量开始前,将样品平衡20分钟以允许内部结构恢复,并最终平衡至测试温度。由Rheoplus软件控制,对所有样品进行振幅扫描测试。以10Hz频率下在对数标度上每个十进位10个点施加0.001%至100%的应变范围。测量点持续时间固定为20s。所有测量均一式三份进行,每次测量使用新样品。

本实施例描述测量实施例1的一些样品可以多容易地分配。
将来自实施例1的四个样品的瓶中袋容器在-19℃下回火,然后使用WO 2013/124193 A中描述的装置进行分配。每个容器包含约2kg冰淇淋。冰淇淋的流速通过测量5秒内所分配的质量来确定。结果在表4中示出。

Claims (15)

1.冷冻甜食,其包含量为所述冷冻甜食的25-35重量%的凝固点降低剂,其中所述凝固点降低剂的数均分子量<M>n为200-250g mol-1,并且其中所述凝固点降低剂包含量为所述冷冻甜食的0.25-7重量%的赤藓糖醇。
2.如权利要求1所述的冷冻甜食,其中所述冷冻甜食是充气的,优选其中所述冷冻充气甜食具有70-135%的膨胀率。
3.如权利要求1或2所述的冷冻甜食,其中所述凝固点降低剂的量为所述冷冻甜食的26-32重量%,优选27-31重量%。
4.如前述权利要求中任一项所述的冷冻甜食,其中所述凝固点降低剂的数均分子量<M>n为205-230g mol-1,优选210-220g mol-1
5.如前述权利要求中任一项所述的冷冻甜食,其中所述赤藓糖醇的量为所述冷冻甜食的0.5-6重量%,优选0.7-3重量%。
6.如前述权利要求中任一项所述的冷冻甜食,其中所述凝固点降低剂包含占所述凝固点降低剂至少90重量%,优选至少92%的单糖、二糖和寡糖。
7.如权利要求6所述的冷冻甜食,其中所述凝固点降低剂中的单糖、二糖和寡糖及赤藓糖醇的总量为所述凝固点降低剂的至少98重量%,优选99-100重量%。
8.如前述权利要求中任一项所述的冷冻甜食,其中所述凝固点降低剂包含量为所述凝固点降低剂的至少5重量%,优选为所述凝固点降低剂的10-25重量%的乳糖。
9.如前述权利要求中任一项所述的冷冻甜食,其中所述冷冻甜食包含低于所述冷冻甜食的0.5重量%,优选低于0.1重量%的乙醇。
10.如前述权利要求中任一项所述的冷冻甜食,其中所述冷冻甜食的总能量含量为至少150kcal/100g冷冻甜食,优选160-250kcal/100g冷冻甜食。
11.根据前述权利要求中任一项所述的冷冻甜食,其中所述冷冻甜食包含量为所述冷冻甜食的1-15重量%,优选4-12重量%的脂肪。
12.根据前述权利要求中任一项所述的冷冻甜食,其中所述冷冻甜食包含量为所述冷冻甜食的0.5-8重量%,优选1-6重量%的蛋白质。
13.冷冻产品,其包含容器,所述容器包含含有如权利要求1-12中任一项所述的冷冻甜食的产品隔室,其中所述产品隔室包括产品出口和可移动壁,通过所述可移动壁可以传递分配力以促使所述冷冻甜食通过所述产品出口。
14.如权利要求13所述的冷冻产品,其中所述可移动壁为袋。
15.如权利要求14所述的冷冻产品,其中所述容器是瓶中袋。
