本发明涉及功能饮料技术领域,具体涉及一种青少年营养乳品饮料及其制备方法。
背景技术
营养是青少年生长发育的物质基础,身体各组织器官的生长发育,机体各种机能的调节,促进性成熟的各种激素的原料,均需要补充营养物质,才能保证青少年的正常发育,并最大限度地发挥遗传功能的潜能。在青少年的生长发育期间,如果营养充足,则可以促进发育,反之将推迟***的发育,甚至影响生长发育,但营养过剩又会出现超重和肥胖等症状。要保障***组织器官的正常生长发育,必须提供全面均衡的营养素,以补充身体生长发育的需要。因此如何科学合理地搭配不同营养食品来满足青少年对营养素的需求,促进其正常的生长发育,是目前亟需解决的问题。
发明内容
为了解决上述问题,本发明提供了一种青少年营养乳品饮料及其制备方法,针对青少年的生长发育的需求,全面均衡地补充营养物质,帮助青少年吸收消化,促进青少年的生长发育,还能预防青少年肥胖症的发生,提高青少年的抗氧化能力和免疫功能。
本发明通过以下技术方案来实现:
一种青少年营养乳品饮料,由以下重量份的原材料组成:核桃青皮酵素液1~12份、菠萝蜜果皮乙醇提取物0.5~4份、果粒2~9份、海马多肽0.2~0.5份、海参多肽0.3~0.8份、柠檬酸0.5~1份、氯化钠0.7~1.2份、羧甲基纤维素0.02~0.5份、明胶0.5~1.2份、琼脂0.3~0.9份、脱脂乳粉3~5份、小球藻藻粉1~2.5份、阿胶低肽0.5~1.5份、肌醇0.01~0.02份、蔗糖酯0.3~0.4份、大豆磷脂0.2~0.5份、白砂糖5~7份、食用香精0.01~0.075份、牛奶至100份。

优选地,一种青少年营养乳品饮料,由以下重量份的原材料组成:核桃青皮酵素液6.5份、菠萝蜜果皮乙醇提取物2.25份、果粒5.5份、海马多肽0.35份、海参多肽0.55份、柠檬酸0.75份、氯化钠0.95份、羧甲基纤维素0.26份、明胶0.85份、琼脂0.6份、脱脂乳粉4份、小球藻藻粉1.85份、阿胶低肽1份、肌醇0.015份、蔗糖酯0.35份、大豆磷脂0.35份、白砂糖6份、食用香精0.04份、牛奶至100份。
优选地,所述核桃青皮酵素液的制备方法为:取核桃青皮清洗干净,在浓度为8~10%的盐水中浸泡30min,于55~60℃下进行干燥,加入酵母菌在33~34℃下发酵45~60d,再加乳酸菌在18~22℃下发酵110~130d,接着加入0.1%~0.5%的低聚糖,调整糖度为10°Bx~15°Bx,静置20~28h,用200目滤布过滤,收集滤液,经0.1~0.3μ超滤柱超滤除菌,得核桃青皮酵素液。
优选地,所述乳酸菌为罗伊氏乳杆菌和双歧杆菌的混合物,接种量为核桃青皮体积的3%~8%;所述低聚糖为大豆低聚糖、牛乳低聚糖、果糖型低聚糖和半乳糖低聚糖的一种或几种,添加量为核桃青皮质量的0.1%~2%。
优选地,所述菠萝蜜果皮乙醇提取物的制备方法为:取菠萝蜜果皮用清水洗净,切成小片,置于80℃烘箱中烘干,粉碎过80目筛,取菠萝蜜果皮粉末,按料液比为1:10加入70%乙醇,在50℃,300W下超声提取3次,每次30min,合并提取液,减压回收乙醇,旋转蒸发浓缩至原体积的1/10,取浓缩液于65℃真空干燥箱中干燥,得菠萝蜜果皮乙醇提取物。
本发明还提供一种青少年营养乳品饮料的制备方法,包括以下步骤:
(1)把新鲜牛奶经检测、过滤、均质、标准化后,75~100℃杀菌4s再冷却至常温,得闪蒸牛奶;
(2)将步骤(1)35~40%的闪蒸牛奶加热至30~40℃,在循环化料、搅动状态下,缓慢加入核桃青皮酵素液,循环化料10~20min,在35~40℃下均质,再冷却至常温,得混合液A;
(3)将步骤(1)15~20%的闪蒸牛奶加热至65~75℃,加入柠檬酸、氯化钠、羧甲基纤维素、明胶、琼脂、脱脂乳粉、小球藻藻粉、阿胶低肽、肌醇、蔗糖酯、大豆磷脂、白砂糖、食用香精,循环化料10~20min,均质,得到混合液B;
(4)将闪蒸牛奶余量、步骤(2)所得混合液A、步骤(3)所得混合液B、果粒、海马多肽、海参多肽常温下混合均匀,经137~142℃杀菌4s,即得本发明制备的青少年营养乳品饮料。
本发明所述各主要功效成分作用机理如下:
核桃青皮酵素液中含有丰富的矿物质、维生素、低聚糖、多酚、黄酮、酶和次生代谢产物等营养成分,具有美白抗氧化、抗菌消炎、润肠通便、护肝保肝、增强机体免疫力、修复机体损伤等保健功能,而且还含有淀粉酶、脂肪酶、蛋白酶和超氧化物歧化酶,因此具有助消化、降脂减肥、抗自由基的功效。
菠萝蜜果皮乙醇提取物中含有环木菠萝烯酮和环桉树醇,具有抗炎杀菌,抗疲劳和提高免疫能力的作用,其对DPPH·自由基的清除率与其中抗坏血酸和多酚含量呈正相关。
与现有技术相比,本发明的有益之处为:
1、本发明用乳酸菌发酵核桃青皮,所得核桃青皮酵素液具有美白抗氧化、抗菌消炎、润肠通便、护肝保肝、增强机体免疫力、修复机体损伤等保健功能,将其添加至饮料中,不仅能提供丰富的营养物质,还能帮助青少年吸收消化,具有降脂减肥的功效;
2、本发明采用超声波法提取菠萝蜜果皮,所得菠萝蜜果皮乙醇提取物具有抗炎杀菌,抗疲劳和提高免疫能力的作用,将其添加至饮料中,能够有效清除青少年体内堆积的自由基,提高青少年的抗疲劳能力和免疫功能;
3、本发明将核桃青皮酵素液和菠萝蜜果皮乙醇提取物复配制成饮料,富含矿物质、维生素、低聚糖和酶等营养成分,能全面均衡地补充营养物质给青少年,促进青少年的生长发育,增强青少年的体质,提高免疫功能,降低青少年的胆固醇堆积,预防青少年肥胖。
具体实施方式
为了使本发明实现的技术手段、创作特征、达成目的与功效易于明白了解,下面结合具体实施例,进一步阐述本发明。
实施例1
一种青少年营养乳品饮料,由以下重量份的原材料组成:核桃青皮酵素液1份、菠萝蜜果皮乙醇提取物4份、果粒2份、海马多肽0.5份、海参多肽0.3份、柠檬酸1份、氯化钠0.7份、羧甲基纤维素0.5份、明胶0.5份、琼脂0.9份、脱脂乳粉3份、小球藻藻粉2.5份、阿胶低肽0.5份、肌醇0.02份、蔗糖酯0.3份、大豆磷脂0.5份、白砂糖5份、食用香精0.075份、牛奶至100份。
所述核桃青皮酵素液的制备方法为:取核桃青皮清洗干净,在浓度为8~10%的盐水中浸泡30min,于55~60℃下进行干燥,加入酵母菌在33~34℃下发酵45~60d,再加乳酸菌在18~22℃下发酵110~130d,接着加入0.1%~0.5%的低聚糖,调整糖度为10°Bx~15°Bx,静置20~28h,用200目滤布过滤,收集滤液,经0.1~0.3μ超滤柱超滤除菌,得核桃青皮酵素液。
所述乳酸菌为罗伊氏乳杆菌和双歧杆菌的混合物,接种量为核桃青皮体积的3%~8%;所述低聚糖为大豆低聚糖、牛乳低聚糖、果糖型低聚糖和半乳糖低聚糖的一种或几种,添加量为核桃青皮质量的0.1%~2%。
所述菠萝蜜果皮乙醇提取物的制备方法为:取菠萝蜜果皮用清水洗净,切成小片,置于80℃烘箱中烘干,粉碎过80目筛,取菠萝蜜果皮粉末,按料液比为1:10加入70%乙醇,在50℃,300W下超声提取3次,每次30min,合并提取液,减压回收乙醇,旋转蒸发浓缩至原体积的1/10,取浓缩液于65℃真空干燥箱中干燥,得菠萝蜜果皮乙醇提取物。
上述一种青少年营养乳品饮料的制备方法,包括以下步骤:

(4)将闪蒸牛奶余量、步骤(2)所得混合液A、步骤(3)所得混合液B、果粒、海马多肽、海参多肽常温下混合均匀,经137~142℃杀菌4s,即得本发明制备的青少年营养乳品饮料。
实施例2
一种青少年营养乳品饮料,由以下重量份的原材料组成:核桃青皮酵素液12份、菠萝蜜果皮乙醇提取物0.5份、果粒9份、海马多肽0.2份、海参多肽0.8份、柠檬酸0.5份、氯化钠1.2份、羧甲基纤维素0.02份、明胶1.2份、琼脂0.3份、脱脂乳粉5份、小球藻藻粉1份、阿胶低肽1.5份、肌醇0.01份、蔗糖酯0.4份、大豆磷脂0.2份、白砂糖7份、食用香精0.01份、牛奶至100份。
实施例3
一种青少年营养乳品饮料,由以下重量份的原材料组成:核桃青皮酵素液4份、菠萝蜜果皮乙醇提取物3.2份、果粒4份、海马多肽0.4份、海参多肽0.4份、柠檬酸0.9份、氯化钠0.8份、羧甲基纤维素0.38份、明胶0.6份、琼脂0.75份、脱脂乳粉3.5份、小球藻藻粉2.1份、阿胶低肽0.8份、肌醇0.018份、蔗糖酯0.32份、大豆磷脂0.4份、白砂糖5.5份、食用香精0.06份、牛奶至100份。
实施例4
一种青少年营养乳品饮料,由以下重量份的原材料组成:核桃青皮酵素液10份、菠萝蜜果皮乙醇提取物1.4份、果粒7份、海马多肽0.3份、海参多肽0.7份、柠檬酸0.6份、氯化钠1.0份、羧甲基纤维素0.14份、明胶1.0份、琼脂0.45份、脱脂乳粉4.5份、小球藻藻粉1.9份、阿胶低肽1.2份、肌醇0.01份、蔗糖酯0.38份、大豆磷脂0.3份、白砂糖6.5份、食用香精0.02份、牛奶至100份。
实施例5
一种青少年营养乳品饮料,由以下重量份的原材料组成:核桃青皮酵素液6.5份、菠萝蜜果皮乙醇提取物2.25份、果粒5.5份、海马多肽0.35份、海参多肽0.55份、柠檬酸0.75份、氯化钠0.95份、羧甲基纤维素0.26份、明胶0.85份、琼脂0.6份、脱脂乳粉4份、小球藻藻粉1.85份、阿胶低肽1份、肌醇0.015份、蔗糖酯0.35份、大豆磷脂0.35份、白砂糖6份、食用香精0.04份、牛奶至100份。
对比例1
与实施例1的区别在于,原料配方中没有添加核桃青皮酵素液,具体为:菠萝蜜果皮乙醇提取物4份、果粒2份、海马多肽0.5份、海参多肽0.3份、柠檬酸1份、氯化钠0.7份、羧甲基纤维素0.5份、明胶0.5份、琼脂0.9份、脱脂乳粉3份、小球藻藻粉2.5份、阿胶低肽0.5份、肌醇0.02份、蔗糖酯0.3份、大豆磷脂0.5份、白砂糖5份、食用香精0.075份、牛奶至100份。
对比例2
与实施例1的区别在于,原料配方中没有添加菠萝蜜果皮乙醇提取物,具体为:核桃青皮酵素液1份、果粒2份、海马多肽0.5份、海参多肽0.3份、柠檬酸1份、氯化钠0.7份、羧甲基纤维素0.5份、明胶0.5份、琼脂0.9份、脱脂乳粉3份、小球藻藻粉2.5份、阿胶低肽0.5份、肌醇0.02份、蔗糖酯0.3份、大豆磷脂0.5份、白砂糖5份、食用香精0.075份、牛奶至100份。
功效验证
试验例1
选择80只雄性小鼠进行实验,体重22-26g,随机分成7组,每组10只,在2个月内,分别灌喂本发明实施例1-5和对比例1-2制备的运动饮料50ml/d。两个月后,采取各组小鼠血液样本,分离出血清,测定各组小鼠血清中谷胱甘肽过氧化物酶活性、超氧化物歧化酶活性以及自由基清除率。测定结果如下表1所示:

如上表所示,通过实施例1与对比例1的对比可知,在本发明制备的饮料中添加栗仁提取物,能将小鼠血清中谷胱甘肽过氧化物酶和超氧化物歧化酶活性分别提高50.9%和39.9%,且能将小鼠机体在代谢过程中产生的自由基清除率提高40.4%;通过实施例1与对比例2的对比可知,在本发明制备的饮料中添加玉米胚芽浆,能将小鼠血清中谷胱甘肽过氧化物酶和超氧化物歧化酶活性分别提高59.4%和34.3%,且能将小鼠机体在代谢过程中产生的自由基清除率提高47.4%。
综上可知,在本发明制备的饮料中加入核桃青皮酵素液、菠萝蜜果皮乙醇提取物复配制作饮料,所制得的饮料具有提高机体抗氧化性的作用,能够显著提高机体自由基清除率,修复机体损伤,达到缓解疲劳、增强机体免疫力的效果。
试验例2
选择80只雄性小鼠进行实验,体重22-26g,体脂均超过正常值,随机分成8组,每组10只,每组小鼠每天进行45min游泳训练,训练周期2个月,在小鼠的每天训练后,分别灌喂本发明实施例1-5和对比例1-2制备的运动饮料50ml。试验结束后测试小鼠的血清总胆固醇(TC)和甘油三酯(TG)的含量。实验结果如下表2所示:

如上表所示,通过实施例1与对比例1的对比可知,在本发明制备的饮料中添加核桃青皮酵素液,可将小鼠的血清总胆固醇(TC)和甘油三酯(TG)的含量分别降低21.2%和23.8%;通过实施例1与对比例2的对比可知,在本发明制备的饮料中添加菠萝蜜果皮乙醇提取物,可将小鼠的血清总胆固醇(TC)和甘油三酯(TG)的含量分别降低19.9%和24.4%。
综上可知,在本发明制备的饮料中加入核桃青皮酵素液、菠萝蜜果皮乙醇提取物复配制作饮料,所制得的饮料可有效降低小鼠血清总胆固醇(TC)和甘油三酯(TG)水平,能够平衡机体脂质代谢,有助于减少肥胖症的发生。
以上所述实施例仅表达了本发明的几种实施方式,其描述较为具体和详细,但并不能因此而理解为对本发明专利范围的限制。应当指出的是,对于本领域的普通技术人员来说,在不脱离本发明构思的前提下,还可以做出若干变形和改进,这些都属于本发明的保护范围。

4.根据权利要求1~3任一项所述的一种青少年营养乳品饮料,其特征在于,所述核桃青皮酵素液的制备方法为:取核桃青皮清洗干净,在浓度为8~10%的盐水中浸泡30min,于55~60℃下进行干燥,加入酵母菌在33~34℃下发酵45~60d,再加乳酸菌在18~22℃下发酵110~130d,接着加入0.1%~0.5%的低聚糖,调整糖度为10°Bx~15°Bx,静置20~28h,用200目滤布过滤,收集滤液,经0.1~0.3μ超滤柱超滤除菌,得核桃青皮酵素液。

6.根据权利要求1~3任一项所述的一种青少年营养乳品饮料,其特征在于,所述菠萝蜜果皮乙醇提取物的制备方法为:取菠萝蜜果皮用清水洗净,切成小片,置于80℃烘箱中烘干,粉碎过80目筛,取菠萝蜜果皮粉末,按料液比为1:10加入70%乙醇,在50℃,300W下超声提取3次,每次30min,合并提取液,减压回收乙醇,旋转蒸发浓缩至原体积的1/10,取浓缩液于65℃真空干燥箱中干燥,得菠萝蜜果皮乙醇提取物。
7.一种制备如权利要求1~6任一项所述青少年营养乳品饮料的方法,其特征在于,包括以下步骤:

(2)将步骤(1)35~40%的闪蒸牛奶加热至30~40℃,在循环化料、搅动状态下,缓慢加入核桃青皮酵素液,循环化料10~20min,在35~40℃下均质,再冷却至常温,得混合液A;
