本发明属于黄酒生产技术领域,具体涉及一种黄酒及其制作方法。
背景技术
黄酒是世界上最古老的酒类之一,源于中国,且唯中国有之,与啤酒、葡萄酒并称世界三大古酒。
黄酒含有丰富的营养,有“液体蛋糕”之称。其营养价值超过了有“液体面包”之称的啤酒和营养丰富的葡萄酒。
(1)含有丰富氨基酸:黄酒的主要成分除乙醇和水外,还含有18种氨基酸,其中有8种是人体自身不能合成而又必需的。这8种氨基酸,在黄酒中的含量比同量啤酒.葡萄酒多一至数倍。
(2)易于消化:黄酒含有许多易被人体消化的营养物质,如:糊精.麦芽糖、葡萄糖、脂类.甘油、高级醇、维生素及有机酸等。这些成分经贮存,最终使黄酒成为营养价值极高的低酒精度饮品。
(3)舒筋活血:黄酒气味苦、甘、辛。冬天温饮黄酒,可活血祛寒、通经活络,有效抵御寒冷刺激,预防感冒。适量常饮有助于血液循环,促进新陈代谢,并可补血养颜。
(4)美容抗衰老:黄酒是B族维生素的良好来源,维生素B1.B2.尼克酸、维生素E都很丰富,长期饮用有利于美容、抗衰老。
(5)促进食欲:锌是能量代谢及蛋白质合成的重要成分,缺锌时,食欲、味觉都会减退,性功能也下降。而黄酒中锌含量不少,如每100毫升绍兴元红黄酒含锌0.85毫克。所以饮用黄酒有促进食欲的作用。
(6)保护心脏:黄酒内含多种微量元素。在心血管疾病中,这些微量元素均有防止血压升高和血栓形成的作用。因此,适量饮用黄酒,对心脏有保护作用。
现有技术中黄酒采用的材料较难获得,制作方法复杂,口味欠佳,且会产生副作用。
发明内容
本发明要解决的技术问题是提供一种黄酒及其制作方法,具有清热燥湿,泻火解毒,清心化淤,活血驱寒,通经活络,抗衰护心,促进子宫收缩等保健及药用功效。
本发明采用的技术方案是:一种黄酒,包括如下重量份原料:垂盆草1-3份、芒种草1-3份、金针菜1-3份、小花鬼针草1-3份、麦麸子10-30份、大麦粉10-30份、米粉10-30份、高粱10-30份、红薯干10-30份。
一种黄酒的制作方法,包括如下步骤:
(1)取新鲜垂盆草1-3份,芒种草1-3份,金针菜1-3份,小花鬼针草1-3份,放在一容器里捣碎,去除滤渣,得到汁液;
(2)取麦麸子、大麦粉、米粉各10-30份,放在上述的容器中,加入纯净水1-5份,搅拌均匀;
(3)取步骤(2)得到的成品50-200g,团成球形丸,用新鲜麻叶包裹2-3层,再用新鲜的高粱叶包裹2-3层,然后放在室内地面上,上下均放上稻草或者麦秸秆,自然晾干;
(4)取高粱10-30份,大麦粉10-30份,红薯干10-30份,放在大锅里,加入纯净水30-100份,煮沸;
(5)将步骤(4)得到的液体冷却后,投入发酵缸中,再把步骤(3)中所制作的晾干球形丸捣碎加入其中;
(6)密封3个月,进行陈酿;
进一步地,所述的步骤(6)后还包括如下步骤:陈酿后黄酒在-3℃的条件下冷冻处理约15h,然后过滤得到酒液,将酒液升温至35-55℃并保持8h,再过滤;将得到酒液继续在上述条件下冷冻、过滤、升温、再过滤,如此反复处理2-5次,最后得高度澄清的黄酒。
进一步地,所述的步骤(3)中的自然晾干在30℃以上温度下进行。

垂盆草,中药名,为景天科植物垂盆草的干燥全草,甘、淡,凉。有利湿退黄,清热解毒之功效。常用于湿热黄疸,小便不利,痈肿疮疡。
芒种草为玄参科植物,又名兔子草、水菠菜。可活血止血,解毒消肿。用于咽喉肿痛,肺结核咯血,风湿疼痛,***,血小板减少性紫癜,跌打损伤。外用治骨折、痈疖黄疸,阴肿阴痒,带下,强中,湿疹瘙痒,目赤,耳聋,胁痛,口苦,惊风抽搐。
金针菜又名黄花菜、柠檬萱草,忘忧草,属百合目,百合科多年生草本植物,根近肉质,中下部常有纺锤状膨大。花葶长短不一,花梗较短,花多朵,花被淡黄色、橘红色、黑紫色;蒴果钝三棱状椭圆形,花果期5-9月。金针菜性味甘凉,有止血、消炎、清热、利湿、消食、明目、安神等功效,对吐血、大便带血、小便不通、失眠、乳汁不下等有疗效,可作为病后或产后的调补品。
小花鬼针草属一年生草本植物,全草性味苦平。可清热解毒,活血散於。主治感冒发热、咽喉肿痛、肠炎、阑尾炎、痔疮、跌打损伤、冻疮、毒蛇咬伤等。外用时将鲜品捣烂敷患处。
本发明的有益效果是:本发明的黄酒具有清热燥湿,泻火解毒,清心化淤,活血驱寒,通经活络,抗衰护心,促进子宫收缩等保健及药用功效。且本发明的优点是材料易得,制作简单,口味极佳,没有副作用,弥补了现有技术方法上的空缺。
具体实施方式
实施例1:
1.在每年的高温天气时间段,温度在30℃以上时,制作酒母:(1)取新鲜垂盆草100g,芒种草100g,金针菜100g,小花鬼针草100g,放在一容器里捣碎,去除滤渣,得到汁液;(2)取麦麸子1000g、大麦粉1000g、米粉1000g,放在上述的容器中,加入纯净水1 ml,搅拌均匀;(3)取(2)中的成品50g,团成球形丸,用新鲜麻叶包裹3层,再用新鲜的高粱叶包裹两层,然后放在室内地面上,上下均放上稻草或者麦秸秆,在温度在30℃以上,自然晾干。
2.在每年的低温天气时间段,发酵制作:(1)取高粱1000g,大麦粉1000g,红薯干1000g,放在大锅里,加入纯净水30ml,煮沸。(2)待冷却后,投入发酵缸中,取3个150g酒母捣碎加入其中。(3)温度4℃以下,密封3个月,进行陈酿。
3.陈酿后黄酒在-3℃的条件下冷冻处理约15h,然后过滤得酒液,将酒液升温至35-55℃保持约8h,再过滤;得到酒液继续在上述条件下冷冻、过滤、升温、再过滤,如此反复处理2-5次,最后得高度澄清的黄酒。
案例二
1.在每年的高温天气时间段,温度在30℃以上时,制作酒母:(1)取新鲜垂盆草200g,芒种草200g,金针菜200g,小花鬼针草200g,放在一容器里捣碎,去除滤渣,得到汁液;(2)取麦麸子、大麦粉、米粉各2000g,放在上述的容器中,加入纯净水3 ml,搅拌均匀;(3)取(2)中的成品100g,团成球形丸,用新鲜麻叶包裹3层,再用新鲜的高粱叶包裹2层,然后放在室内地面上,上下均放上稻草或者麦秸秆,在温度在30℃以上,自然晾干。
2.在每年的低温天气时间段,发酵制作:(1)取高粱2000g,大麦粉2000g,红薯干2000g,放在大锅里,加入纯净水60 ml,煮沸。(2)待冷却后,投入发酵缸中,酒母捣碎加入其中。(3)温度4℃以下,密封3个月,进行陈酿。
3.陈酿后黄酒在-3℃的条件下冷冻处理约15h,然后过滤得酒液,将酒液升温至35-55℃保持约8h,再过滤;得到酒液继续在上述条件下冷冻、过滤、升温、再过滤,如此反复处理2-5次,最后得高度澄清的黄酒。

Claims (5)
1.一种黄酒,其特征在于:包括如下重量份原料:垂盆草1-3份、芒种草1-3份、金针菜1-3份、小花鬼针草1-3份、麦麸子10-30份、大麦粉10-30份、米粉10-30份、高粱10-30份、红薯干10-30份。
2.一种黄酒的制作方法,其特征在于:包括如下步骤:
(1)取新鲜垂盆草1-3份,芒种草1-3份,金针菜1-3份,小花鬼针草1-3份,放在一容器里捣碎,去除滤渣,得到汁液;
(2)取麦麸子、大麦粉、米粉各10-30份,放在上述的容器中,加入纯净水1-5份,搅拌均匀;
(3)取步骤(2)得到的成品50-200g,团成球形丸,用新鲜麻叶包裹2-3层,再用新鲜的高粱叶包裹2-3层,然后放在室内地面上,上下均放上稻草或者麦秸秆,自然晾干;
(4)取高粱10-30份,大麦粉10-30份,红薯干10-30份,放在大锅里,加入纯净水30-100份,煮沸;
(5)将步骤(4)得到的液体冷却后,投入发酵缸中,再把步骤(3)中所制作的晾干球形丸捣碎加入其中;
(6)密封3个月,进行陈酿。
3.根据权利要求2所述的一种黄酒的制作方法,其特征在于:所述的步骤(6)后还包括如下步骤:陈酿后黄酒在-3℃的条件下冷冻处理约15h,然后过滤得到酒液,将酒液升温至35-55℃并保持8h,再过滤;将得到酒液继续在上述条件下冷冻、过滤、升温、再过滤,如此反复处理2-5次,最后得高度澄清的黄酒。
4.根据权利要求2所述一种黄酒的制作方法,其特征在于:所述的步骤(3)中的自然晾干在30℃以上温度下进行。
5.根据权利要求2所述一种黄酒的制作方法,其特征在于:所述的步骤(6)中的陈酿在温度4℃以下进行。
