Abstract
本发明公开了一种百香果复合酵素及其制备方法,由下述重量份配比的原料制成:百香果25‑30份、芒果10‑15份、木瓜10‑15份、香蕉10‑15份、山楂10‑30份、鲜罗汉果10‑15份、红糖粉10‑20份。制备时按重量份称取百香果、芒果、木瓜、香蕉、山楂、鲜罗汉果,分别去皮,去核,切成1‑3厘米的块状,混合搅拌均匀;然后在混合好的果浆中加入其总重量的1.5%的果胶酶进行处理,处理后进行过滤;最后将过滤后的倒入密闭的容器中,加入红糖粉混合均匀,密封发酵25‑30天,即制成。本发明将百香果和其他水果混合,通过自然发酵产生酵素,具有补益强身,提升免疫***功能,能清除自由基,促进血液循环,加速新陈代谢,保持机体健壮等显著功效。
Description
技术领域
本发明涉及酵素,具体是一种百香果酵素及其制备方法。
背景技术
酵素又称为“酶”是各种生物化学反应的催化剂,酵素存在于所有活细胞内,是它激活了细胞之活力,使细胞展现出种种生命迹象。酵素是人体不可缺少的重要物质。
百香果,又名西番莲、鸡蛋果、热情果,是一种热带藤本攀附果树。果实风味浓郁,是世界上已知最香的水果之一,被誉为“果汁之王”。我国主要分布在台湾、广西、广东、云南、福建等省区。其果实含有番桃、石榴、菠萝、芒果、香蕉等一百多种水果的香味,又富含氨基酸,维生素 A、B1 、B2 、C,磷,
铁,钙,SOD 和膳食纤维等有益成分。近几年来,广西百香果种植业发展很快,成为广西区域的特色农业产业。目前百香果主要以鲜食为主,这大大降低了百香果的应用价值。
发明内容
为了提高百香果的附加值和开发新的饮料产品,本发明提供了一种百香果复合酵素及其制备方法,将百香果和其他水果混合,通过自然发酵产生酵素,研究发现百香果酵素具有很强的自由基清除能力,如羟基自由基清除能力、超氧阴离子自由基、α ,α-二苯基-β-苦苯肼自由基清除能力。本发明百香果复合酵素具有补益强身,提升免疫***功能,清除自由基,促进血液循环,加速新陈代谢,保持机体健壮等显著功效。
本发明的技术方案是这样实现的:
一种百香果复合酵素,由下述重量份配比的原料制成:百香果25-30份、芒果10-15份、木瓜10-15份、香蕉10-15份、山楂10-30份、鲜罗汉果10-15份、红糖粉10-20份。
所述百香果采用广西桂林永福县种植的百香果。
所述鲜罗汉果采用广西桂林永福县种植的鲜罗汉果。
所述芒果采用市售台农一号品种芒果。
所述木瓜、香蕉、山楂均为市售品种。
所述红糖粉为市售红糖粉。
上述百香果复合酵素的制备方法,包括如下步骤:
(1)按重量份称取百香果、芒果、木瓜、香蕉、山楂、鲜罗汉果,分别去皮,去核,切成1-3厘米的块状,混合搅拌均匀;
(2)在步骤(1)混合好的果浆中加入其总重量的1.5%的果胶酶进行处理,处理后进行过滤;
(3)过滤后倒入密闭的容器中,加入红糖粉混合均匀,密封发酵 25-30天,即制成。
本发明百香果复合酵素中各原料的功效:
百香果的功效与作用:百香果含多种的营养成分,其中有维生素、微量元素等等,对于身体的调节起到非常重要的作用。食用百香果可助于排毒,可以更快地把体内的有害物质排到体外,保证身体健康。可以使皮肤光滑和美白。可以增强抵抗力与身体的整体素质,可以促进代谢,帮助开胃消化,对于增高与发育来说也是非常好的。
芒果的功效与作用:芒果含维生素C量高于一般水果,且具有即使加热加工处理,其含量也不会消失的特点,常食芒果可以不断补充体内维生素C的消耗,降低胆固醇、甘油三酯,有利于防治心血管疾病。据现代食疗观点而言,芒果含有大量的维生素A,因此具有防癌、抗癌的作用。由于芒果中含有大量的维生素,因此经常食用芒果,可以起到滋润肌肤的作用。芒果的糖类及维生素含量非常丰富,尤其维生素A含量占水果之首位,具有明目的作用。还可促进排便,对于防治便秘具有一定的好处。芒果中所含的芒果甙有祛疾止咳的功效,对咳嗽痰多气喘等症有辅助治疗作用。
木瓜的功效:木瓜可将脂肪分解为脂肪酸;现代医学发现,木瓜中含有一种酵素,能消化蛋白质,有利于人体对食物进行消化和吸收,故有健脾消食之功。木瓜中含有番木瓜碱和木瓜蛋白酶具有抗结核杆菌及寄生虫如绦虫、蛔虫、鞭虫、阿米巴原虫等作用,故可用于杀虫抗痨。木瓜中的凝乳酶有通乳作用,番木瓜碱具有抗淋巴性白血病之功,故可用于通乳及治疗淋巴性白血病(血癌)。木瓜中含有大量水分、碳水化合物、蛋白质、脂肪、多种维生素及多种人体必需的氨基酸,可有效补充人体的养分,增强机体的抗病能力。木瓜果肉中含有的番木瓜碱具有缓解痉挛疼痛的作用,对腓肠肌痉挛有明显的治疗作用。
木瓜的营养价值:木瓜的水分较高约有89%,而热量很低。木瓜含有17种以上的氨基酸,尤其含有丰富的色氨酸和赖氨酸,而这两种都是人体必需的氨基酸。色氨酸有助于睡眠,镇痛等作用的神经传导物质的原料,赖氨酸与葡萄糖代谢关系密切,能够抗疲劳,提高注意力。木瓜含有少量的脂肪,其中不饱和脂肪酸的含量较高,不饱和脂肪酸能够将体内多余的胆固醇排出体外。含有丰富木瓜酶,维生素C、B及钙、磷及矿物质,营养丰富,果实含大量丰富的胡萝卜素、蛋白质、钙盐、蛋白酶、柠檬酶等,具有防治高血压、肾炎、便秘和助消化、治胃病,对人体有促进新节代谢和抗衰老的作用,还有美容护肤养颜的功效。
香蕉的功效与作用:香蕉味甘、性寒;肺经、脾经。清热,润肠,解毒。治热病烦渴,便秘,痔血。从营养的角度来分析,香蕉的糖分可迅速转化为葡萄糖,立刻被人体吸收,是一种快速的能量来源。香蕉能缓和胃酸的刺激,保护胃黏膜。多吃香蕉,可降低血压,预防高血压和心血管疾病。研究显示,每天吃两条香蕉,可有效降低10%血压。香蕉内含丰富的可溶性纤维,也就是果胶,可帮助消化,调整肠胃机能。香蕉对失眠或情绪紧张者也有疗效,因为香蕉包含的蛋白质中,带有氨基酸,具有安抚神经的效果,因此在睡前吃点香蕉,多少可起一些镇静作用。
香蕉的营养价值:香蕉的含水量较高约70%,且含有丰富的碳水化合物、蛋白质、膳食纤维、磷、钾、维生素A和维生素C。香蕉含有三种天然糖份:蔗糖、果糖和葡萄糖;再加上纤维素。
山楂的功效与作用:山楂含有维生素C、胡萝卜素等物质能阻断并减少自由基的生成,能增强机体的免疫力,有防衰老、抗癌的作用;女性多吃山楂能消除体内脂肪、减少脂肪吸收的功效,对于爱美的女性可以达到美颜瘦身的效果。山楂具有降压,降脂,抗氧化,增强免疫力,清除胃肠道有害细菌等,还可预防肝癌。山楂,能助消化,具有养肝去脂功效。山楂能显著降低血清胆固醇及甘油三酯,有效防治动脉粥样硬化;山楂还能通过增强心肌收缩力、增加心输出量、扩张冠状动脉血管、增加冠脉血流量、降低心肌耗氧量等起到强心和预防心绞痛的作用。此外,山楂中的总黄酮有扩张血管和持久降压的作用。山楂具有活血化淤的作用,是血淤型痛经患者的食疗佳品。
罗汉果:味甘性凉,归肺、大肠经,有润肺止咳,生津止渴的功效,适用于肺热或肺燥咳嗽,百日咳及暑热伤津口渴等,此外还有润肠通便的功效。现代医学研究证实,罗汉果含一种比蔗糖甜300倍的甜味素,但它不产生热量,所以是糖尿病、肥胖等不宜吃糖者的理想替代饮料。鲜罗汉果富含大量的维生素C,而干罗汉果因为经过烘烤,营养成分缺失极大。新鲜罗汉果提取物的性价比极高,1瓶(80克)约相当于36-37个干罗汉果的份量,可冲泡出80-120杯味道鲜美的罗汉果茶。
红糖的功效与作用:性温、味甘、入脾,具有益气补血、健脾暖胃、缓中止痛、活血化淤的作用。红糖中所含有的葡萄糖、果糖等多种单糖和多糖类能量物质,可加速皮肤细胞的代谢,为细胞提供能量。红糖对老年体弱,特别是大病初愈的人,还有极好的疗虚进补作用;红糖对血管硬化能起到一定治疗作用,且不易诱发龋齿等牙科疾病。红糖中含有的叶酸、微量物质等可加速血液循环、增加血容量的成分,刺激机体的造血功能,扩充血容量,提高局部皮肤的营养、氧气、水分供应。红糖中含有的部分维他命和电解质成分,可通过调节组织间某些物质浓度的高低,平衡细胞内环境的水液代谢,排除细胞代谢产物,保持细胞内、外环境的清洁。另外,红糖中含有的多种维他命和抗氧化物质,能抵抗自由基,重建和保护细胞基础结构,维护细胞的正常功能和新陈代谢。红糖中含有的氨基酸、纤维素等物质,可以有效保护和恢复表皮、真皮的纤维结构和锁水能力,强化皮肤组织结构和皮肤弹性,同时补充皮肤营养,促进细胞再生。另外,红糖中含有的某些天然酸类和色素调节物质,可有效调节各种色素代谢过程,平衡皮肤内色素分泌数量和色素分布情况,减少局部色素的异常堆积。
本发明从众多的水果中精选出百香果、芒果、木瓜、香蕉、山楂、鲜罗汉和红糖粉,通过自然发酵产生酵素,研究发现百香果酵素具有很强的自由基清除能力,如羟基自由基清除能力、超氧阴离子自由基、α ,α-二苯基-β-苦苯肼自由基清除能力。本发明百香果复合酵素具有补益强身,提升免疫***功能,清除自由基,促进血液循环,加速新陈代谢,保持机体健壮等显著功效。

下面结合实施例对本发明内容作进一步的说明,但不是对本发明的限定。
实施例 1
一种百香果复合酵素,由下述重量份配比的原料制成:百香果25份、芒果10份、木瓜10份、香蕉10份、山楂10份、鲜罗汉果10份、红糖粉10份。
所述百香果复合酵素的制备方法,包括如下步骤:
(1)按重量份称取百香果、芒果、木瓜、香蕉、山楂、鲜罗汉果,分别去皮,去核,切成1-3厘米的块状,混合搅拌均匀;
(2)在步骤(1)混合好的果浆中加入其总重量的1.5%的果胶酶进行处理,处理后进行过滤;
(3)将过滤后的倒入密闭的容器中,加入红糖粉混合均匀,密封发酵 25-30天,即制成。
实施例 2
一种百香果复合酵素,由下述重量份配比的原料制成:百香果27份、芒果13份、木瓜13份、香蕉13份、山楂20份、鲜罗汉果13份、红糖粉15份。其制备方法同实施例1。
实施例 3
一种百香果复合酵素,由下述重量份配比的原料制成:百香果30份、芒果15份、木瓜15份、香蕉15份、山楂30份、鲜罗汉果15份、红糖粉30份。其制备方法同实施例1。

1.一种百香果复合酵素,其特征在于由下述重量份配比的原料制成:
百香果25-30份、芒果10-15份、木瓜10-15份、香蕉10-15份、山楂10-30份、鲜罗汉果10-15份、红糖粉10-20份。
2.根据权利要求1所述的百香果酵素的制备方法,其特征在于,包括如下步骤 :
(1)按重量份称取百香果、芒果、木瓜、香蕉、山楂、鲜罗汉果,分别去皮,去核,切成1-3厘米的块状,混合搅拌均匀;
(2)在步骤(1)混合好的果浆中加入其总重量的1.5%的果胶酶进行处理,处理后进行过滤;
(3)过滤后倒入密闭的容器中,加入红糖粉混合均匀,密封发酵 25-30天,即制成。
