栝楼,别名药瓜、瓜萎等,葫芦科栝楼属。《纲目》记载:润肺燥,降火。治咳嗽,涤痰结,利咽喉,消痈肿疮毒。栝楼皮为葫芦科栝楼属植物栝楼或双边栝楼的干燥成熟果皮,属于常用中药,具有润肺化痰、利气宽胸等功效,临床上广泛用于治疗痰热咳嗽、痰浊黄稠、咽痛、胸痛、吐血、衄血、便秘、痈疮肿毒等症。现代药理实验及临床实践表明栝楼皮具有扩张冠状动脉、增加冠脉血流量、提高心肌耐缺氧能力、降低血清胆固醇、抗菌、抗癌等多种药理作用,尤其是对心血管疾病具有很好的治疗作用。
合欢为豆科植物,合欢的皮呈卷曲筒状或半筒状,长40~80cm,厚合欢皮0.1~0.3cm。外表面灰棕色至灰褐色,性味甘、平。有解郁、和血、宁心、消痈肿之功。有治心神不安、忧郁、失眠、肺痈、痈肿、瘰疠、筋骨折伤之效。
山楂含有维生素C、胡萝卜素等物质能阻断并减少自由基的生成,能增强机体的免疫力,有防衰老、抗癌的作用。女性多吃山楂能消除体内脂肪、减少脂肪吸收的功效。此外,山楂中的总黄酮有扩张血管和持久降压的作用。
目前,栝楼皮、合欢皮、山楂大多被入药或食用,将其加工成栝楼合欢山楂保健粉,未见有相关报道。
发明内容
本发明的目的是提供一种栝楼合欢山楂保健粉的加工方法,本方法工艺稳定、操作简单,将无污染的栝楼皮、合欢皮加工成饮用、携带方便的保健粉,不仅丰富了食品种类,而且提高了栝楼皮和合欢皮的经济价值。
本发明解决其技术问题所采取的技术方案是:
一种栝楼合欢山楂保健粉的加工方法,其特征在于,所述的加工方法采用以下步骤:
①栝楼预处理:挑选新鲜优质的栝楼皮、合欢皮、山楂和葛根,洗净去杂,取5kg的栝楼皮、2kg的合欢皮、2kg的去籽山楂和1kg的葛根,混合均匀,制得混合原料,再放入10%食盐溶液中浸渍30min捞出,用流动清水洗净,沥干;
②湿法粉碎:将混合原料进行破碎处理,粒径为0.8cm,按质量比为1:0.5的比例加入去离子水,采用湿法粉碎,制得粒径为0.5mm的原料泥;
③复合酶解:将原料泥中加入3kg浓度为15%的葡萄糖液、0.65kg的果胶酶、0.35kg的纤维素酶和0.002kg的半纤维素酶,混合均匀,在温度35℃、湿度45%的环境下酶解3.5h;再置于88℃环境下灭酶45s,过滤,得到酶解液和滤渣;
④回流提取:按1:12的比例,向滤渣中加入浓度为85%的乙醇,加热,进行回流提取2次,提取时间为1.2h,得提取液,再将提取液在72℃下旋转蒸发,除去溶剂,制得原料膏;
⑤混合:取酶解液1.5kg、原料膏2.8kg,加入青梅果浆1.2kg、莲子芯粉0.8kg、扭肚藤粉0.6kg、无花果汁0.35kg和葛仙米粉0.45kg,充分混合均匀,制得混合液;
⑥浓缩:将混合液均质处理后,装入真空渗透设备中,真空低温浓缩,在压力0.15MPa、温度58℃条件下,浓缩至相对密度1.2g/cm3的浓缩液;
⑦冷冻干燥:将浓缩液在-23℃条件下,冷冻4.7小时,将冷冻后的混合液在装载量5kg/m2、工作压力35Pa、解析压力16Pa、温度35℃的条件下干燥,经粉碎后,制得栝楼合欢山楂保健粉;
⑧包装:将栝楼合欢山楂保健粉用食品级包装材料包装,入通风干燥环境中储存。

①栝楼预处理:挑选新鲜优质的栝楼皮、合欢皮、芒果皮和牛蒡根,洗净去杂,取3kg的栝楼皮、合欢皮和芒果皮各2kg、1kg的牛蒡根,混合均匀,制得混合原料,再放入含80-100ppm二氧化硫的水溶液中浸渍10-15min捞出,用流动清水洗净,沥干;
②湿法粉碎:将混合原料进行破碎处理,粒径为1cm,按质量比为1:0.35的比例加入去离子水,采用湿法粉碎,制得粒径为0.1mm的原料泥;
③复合酶解:将原料泥中加入2kg浓度为18%的甘草液、0.45kg的果胶酶、0.2kg的纤维素酶和0.001kg的半纤维素酶,混合均匀,在温度42℃、湿度50%的环境下酶解2h;再置于78℃环境下灭酶25s,过滤,得到酶解液和滤渣;

①栝楼预处理:挑选新鲜优质的栝楼皮、合欢皮、地骨皮和北豆根,洗净去杂,取8kg的栝楼皮、4kg的合欢皮、2kg的地骨皮和1kg的北豆根,混合均匀,制得混合原料,再放入12%食盐溶液中浸渍20-25min捞出,用流动清水洗净,沥干;
②湿法粉碎:将混合原料进行破碎处理,粒径为1.2cm,按质量比为1:0.8的比例加入蒸馏水,采用湿法粉碎,制得粒径为0.05mm的原料泥;
③复合酶解:将原料泥中加入1kg浓度为23%的果糖液、0.78kg的果胶酶、0.42kg的纤维素酶和0.003kg的半纤维素酶,混合均匀,在温度28℃、湿度53%的环境下酶解4h;再置于98℃环境下灭酶32s,过滤,得到酶解液和滤渣;
④回流提取:按1:15的比例,向滤渣中加入浓度为76%的乙醇,加热,进行回流提取4次,提取时间为0.75h,得提取液,再将提取液在68℃下旋转蒸发,除去溶剂,制得原料膏;
⑤混合:取酶解液2.3kg、原料膏3.5kg,加入山楂果浆2kg、高粱果浆2kg、白果粉1kg、栝楼籽粉0.8kg、合欢花汁0.5kg和菱角粉0.45kg,充分混合均匀,制得混合液;
⑥浓缩:将混合液均质处理后,装入真空渗透设备中,真空低温浓缩,在压力0.18MPa、温度45℃条件下,浓缩至相对密度2.1g/cm3的浓缩液;
⑦冷冻干燥:将浓缩液在-10℃条件下,冷冻6小时,将冷冻后的混合液在装载量8kg/m2、工作压力28Pa、解析压力12Pa、温度40℃的条件下干燥,粉碎后,制得栝楼合欢山楂保健粉;
⑧包装:将栝楼合欢山楂保健粉用食品级包装材料包装,入通风干燥环境中储存。
实施例3:
一种栝楼合欢山楂保健粉的加工方法,其特征在于,采用以下步骤:
①栝楼预处理:挑选新鲜优质的栝楼皮、合欢皮、山楂和枸杞,洗净去杂,取10kg的栝楼皮、5kg的合欢皮、3kg的去籽山楂和2kg的枸杞,混合均匀,制得混合原料,用流动清水洗净,沥干;
②湿法粉碎:将混合原料进行破碎处理,粒径为0.2cm,按质量比为1:0.65的比例加入苏打水,采用湿法粉碎,制得粒径为0.025mm的原料泥;
③复合酶解:将原料泥中加入8kg浓度为10%的麦芽糖液、0.85kg的果胶酶、0.45kg的纤维素酶和0.006kg的半纤维素酶,混合均匀,在温度45℃、湿度56%的环境下酶解5h;再置于98℃环境下灭酶65s,过滤,得到酶解液和滤渣;
④回流提取:按1:18的比例,向滤渣中加入浓度为68%的乙醇,加热,进行回流提取2次,提取时间为2.6h,得提取液,再将提取液在63℃下旋转蒸发,除去溶剂,制得原料膏;
⑤混合:取酶解液3kg、原料膏5kg,加入槠实子果浆2kg、野枇杷叶粉1.8kg、酸枣仁粉1.5kg、百香果汁0.85kg和葫芦茶粉0.5kg,充分混合均匀,制得混合液;
⑥浓缩:将混合液均质处理后,装入真空渗透设备中,真空低温浓缩,在压力0.08MPa、温度45℃条件下,浓缩至相对密度1.85g/cm3的浓缩液;
⑦冷冻干燥:将浓缩液在-12℃条件下,冷冻5小时,将冷冻后的混合液在装载量10kg/m2、工作压力43Pa、解析压力26Pa、温度55℃的条件下干燥,粉碎后,制得栝楼合欢山楂保健粉;
⑧包装:将栝楼合欢山楂保健粉用食品级包装材料包装,入通风干燥环境中储存。
本发明未涉及部分均与现有技术相同或可采用现有技术加以实现。
Claims (1)
1.一种栝楼合欢山楂保健粉的加工方法,其特征在于,采用以下方法步骤:
①栝楼预处理:挑选新鲜优质的栝楼皮、合欢皮、山楂和葛根,洗净去杂,取5kg的栝楼皮、2kg的合欢皮、2kg的去籽山楂和1kg的葛根,混合均匀,制得混合原料,再放入10%食盐溶液中浸渍30min捞出,用流动清水洗净,沥干;
②湿法粉碎:将混合原料进行破碎处理,粒径为0.8cm,按质量比为1:0.5的比例加入去离子水,采用湿法粉碎,制得粒径为0.5mm的原料泥;
③复合酶解:将原料泥中加入3kg浓度为15%的葡萄糖液、0.65kg的果胶酶、0.35kg的纤维素酶和0.002kg的半纤维素酶,混合均匀,在温度35℃、湿度45%的环境下酶解3.5h;再置于88℃环境下灭酶45s,过滤,得到酶解液和滤渣;
④回流提取:按1:12的比例,向滤渣中加入浓度为85%的乙醇,加热,进行回流提取2次,提取时间为1.2h,得提取液,再将提取液在72℃下旋转蒸发,除去溶剂,制得原料膏;
⑤混合:取酶解液1.5kg、原料膏2.8kg,加入青梅果浆1.2kg、莲子芯粉0.8kg、扭肚藤粉0.6kg、无花果汁0.35kg和葛仙米粉0.45kg,充分混合均匀,制得混合液;
⑥浓缩:将混合液均质处理后,装入真空渗透设备中,真空低温浓缩,在压力0.15MPa、温度58℃条件下,浓缩至相对密度1.2g/cm3的浓缩液;
⑦冷冻干燥:将浓缩液在-23℃条件下,冷冻4.7小时,将冷冻后的混合液在装载量5kg/m2、工作压力35Pa、解析压力16Pa、温度35℃的条件下干燥,经粉碎后,制得栝楼合欢山楂保健粉;
⑧包装:将栝楼合欢山楂保健粉用食品级包装材料包装,入通风干燥环境中储存。
