本发明涉及属于食品加工技术领域,尤其是涉及一种风味羊肚菌的加工方法。
背景技术
羊肚菌,别名:羊肚蘑、羊肚子、阳雀菌、蜂窝蘑。羊肚菌是一种珍稀名贵的野生食用菌,属于“菌中之王”,“蘑菇皇后”等美誉,是世界上历代皇家贵族的健康养身佳品,在菌类中,除了身价几百万一公斤的白松露和几十万一公斤的冬虫夏草而外,最名贵的就是羊肚菌了。羊肚菌过去靠野生,生长在大山区森林之中,一年只长一次,由于受地区、资源气候等条件的限制,产量稀少,采集十分困难,绝大部分没有被人们发现,而在山上自生自灭。由于它功能齐全、香味独特、食效显著、价值相当昂贵。
羊肚菌是世界上很名贵的食用菌,属高级营养滋补品,它有很多种奇特效果,现代医学表明,羊肚菌含丰富的蛋白质、多糖肽、碳水化合物、多种维生素和20多种氨基酸及微量元素。具有补肾、壮阳、补脑、提神的功能;对精肾亏损、阳萎不举、性功能减退、***冷淡有明显的改善作用;对头晕失眠、肠胃炎症、脾胃虚弱、消化不良、饮食不振有良好的疗效。长期食用可防癌、抗癌、抑制肿瘤、预防感冒、增加人体免疫力的效果。羊肚菌是子囊菌中最著名的食用菌和药用菌,它不仅味道鲜美、营养丰富,还有强身健体、防病治病、延年益寿的功能;从《本草纲目》和医学的角度表明,羊肚菌具有益肠胃,助消化、降血糖、补肾壮阳和补脑提神之功效,是一种不含任何激素,无任何副作用的纯天然滋补品。

发明内容
本发明的目的是充分开发羊肚菌原料的深加工产品,提供一种风味羊肚菌的加工方法。
本发明解决其技术问题所采取的技术方案是:
一种风味羊肚菌的加工方法,其特征在于:采用原料处理→清洗→硬化→漂洗→煮制→糖浸→沥干→烘干→包装为加工工艺流程,具体操作步骤为:
(1)原料处理:将羊肚菌干置于清水中复水,加入少许维生素C和蜂蜜,浸发温度28-35℃,浸发时间为30分钟;浸发后,用不锈钢小刀剔去菌体基部黄斑及杂质,用清水洗净,修整大小为4-5cm;
(2)清洗:将清洗好的羊肚菌浸入由0.28%的氯化钙和0.16%的焦亚硫酸钠配制的溶液中,钙化与漂白55分钟,捞出沥干,再用清水漂洗干净;
(3)金银花预处理:将金银花、鱼腥草、薄荷叶洗净后,采用沸水浸提,浸提65分钟,过滤,得浸提液,再进行浓缩;
(4)煮制:在浓缩后的金银花液中加入适量的果葡糖浆,使糖液浓度达到45%,将羊肚菌放入金银花液中煮制,先用旺火煮35分钟,再改用文火煮25分钟,然后倒入缸中,常温下浸渍8-10小时,捞出沥干;
(5)烘干:将羊肚菌放入鼓风机下,进行热风烘干,烘干温度55-58℃;
(6)包装:用聚乙烯薄膜袋密封包装,即为成品。

具体实施方式
实施例1:
一种风味羊肚菌的加工方法,具体操作步骤为:
(1)原料处理:将羊肚菌干置于清水中复水,加入少许淘米水,浸发温度35℃,浸发时间为65分钟;浸发后,用不锈钢小刀剔去菌体基部黄斑及杂质,用清水洗净,修整大小为2cm;
(2)清洗:将清洗好的羊肚菌浸入由0.13%的氯化钙和0.24%的焦亚硫酸钠配制的溶液中,钙化与漂白20分钟,捞出沥干,再用清水漂洗干净;
(3)金银花预处理:将金银花、丁香、麦芽汁、积雪草洗净后,采用沸水浸提,浸提35分钟,过滤,得浸提液,再进行真空浓缩;
(4)煮制:在浓缩后的金银花液中加入适量的冰糖、蜂蜜,使糖液浓度达到45%,将羊肚菌放入金银花液中煮制,先用文火煮40分钟,再改用旺火煮15分钟,然后倒入缸中,常温下浸渍4小时,捞出沥干;
(5)烘干:将羊肚菌放入鼓风机下,进行热风烘干,烘干温度55℃;
(6)包装:用聚乙烯薄膜袋密封包装,即为成品。
实施例2:
一种风味羊肚菌的加工方法,具体操作步骤为:
(1)原料处理:将干羊肚菌、金耳置于清水中复水,加入少许维生素C,浸发温度48℃,浸发时间为55分钟;浸发后,用不锈钢小刀剔去菌体基部黄斑及杂质,用清水洗净,修整大小为4cm;
(2)清洗:将清洗好的羊肚菌浸入由0.26%的氯化钙和0.15%的焦亚硫酸钠配制的溶液中,钙化与漂白45分钟,捞出沥干,再用清水漂洗干净;
(3)金银花预处理:将金银花、槐花、橘皮、白芍洗净后,采用沸水浸提,浸提47分钟,过滤,得浸提液,再进行高压浓缩;
(4)煮制:在浓缩后的金银花液中加入适量的果糖,使糖液浓度达到55%,将羊肚菌放入金银花液中煮制,先用旺火煮10分钟,再改用文火煮25分钟,然后倒入缸中,加入柠檬香精,搅拌均匀,常温下浸渍5小时,捞出沥干;
(5)烘干:将羊肚菌放入烘房里,进行烘干,烘干温度45-60℃;
(6)包装:用聚乙烯薄膜袋密封包装,即为成品。
