Abstract
本发明公开了一种固体饮料的制备方法及其应用,由下述重量份的原料制成:生姜2-6份、红枣2-6份、山药1-2份、陈皮0.1-1份、干姜0.1-1份、红糖0.5-2份、甘草0.2-0.5份、果糖2-6份,麦芽糊精0.3-1份,β-环糊精0.3-1份。其制备方法包括生姜榨汁、干姜超临界CO2萃取、提取浓缩、喷雾干燥、制粒等步骤。本发明工艺避免了挥发油因长时间加热提取而挥发损失,最大限度的提取了药材中的有效成分,保证了功效;生姜汁用β-环糊精和麦芽糊精包合后喷雾干燥,最大化的保持了姜的原有香气;本发明的固体饮料产品口感好,仅需热水冲泡,冲饮方便、便于携带,是比较理想的药食两用饮品,经人群试验表明,服用本品具有很好的防寒暖身、健脾暖胃、预防感冒和痛经等功效。

技术领域
本发明属于保健品、食品技术领域,具体涉及一种固体饮料的制备方法及其应用。
背景技术
在炎热夏天,长期呆在低温空调房容易导致身体发冷、脾胃受寒而引起头痛、鼻塞、腹泻等各种不适症状。另外在寒冷冬天,体质虚寒者更易着凉受寒引发感冒,而女性受寒还可能引起痛经等。以生姜、红枣、红糖等原料制成红糖姜汤、生姜红枣茶等成为一些家庭中防寒暖身、健脾暖胃、预防感冒和痛经的保健饮品。但随着现代社会生活节奏的日益加快,能够在家里煮红糖姜水的机会越来越少,所以开发方便服用和携带的具有防寒暖身、健脾暖胃、预防感冒和痛经的固体饮料尤其重要。
专利201310561141.6公开了一种由山楂、生姜、红糖、红枣、陈皮和山药等制成的保健营养饮品,用于补脾健胃、补血养颜,但其制法是上述山楂、生姜等药材加水浸泡30分钟,煮沸提取30分钟,加入红糖等调配成饮品。该申请公开的药材提取时间比较短,山楂、红枣等药材中的有效成分不能完全溶出,药材利用率较低。
与液体饮料相比,固体饮料具有携带方便、风味好、速溶性好、饮用方便等特点使其备受消费者青睐。专利201310436297.1公开了一种由党参、甘草、柴胡、生姜、肉桂、红糖、红枣、陈皮、白术、茯苓等制成的冲剂,适用于各种原因导致的脾胃虚寒症状,其制法是将各药材粉碎,制成冲剂服用,由于各药材未经过提取而直接粉碎成细粉服用,对胃肠有一定刺激性。专利201310622097.5公开了一种由枸杞、干姜、红枣、红茶制成的冬日暖胃茶,其制备方法是将各原料加热煎煮,加热浓缩后制成颗粒剂,可用于预防胃寒,但由于生姜、干姜中含有挥发油,其中的姜酚、姜烯等是姜类药材加快血液循环、让身体暖和的主要有效成分,这些成分如果经过长时间加热提取、浓缩、干燥后,损失较大,最终会影响其疗效。
发明内容
为了克服上述现有技术的不足,本发明的目的在于提供一种固体饮料的制备方法,该方法既能最大限度的提取原料中的有效成分,又能保持姜的原有风味。
本发明是通过以下技术方案实现;
本发明所述的固体饮料,由下述重量份数的原料制成:生姜2-6份、红枣2-6份、山药1-2份、陈皮0.1-1份、干姜0.1-1份、红糖0.5-2份、甘草0.2-0.5份、果糖2-6份,麦芽糊精0.3-1份,β-环糊精0.3-1份。
本发明中各原料的药理作用如下报述:
生姜:味辛性微温。归肺、脾、胃经。具解表散寒,温中止呕,化痰止咳等功效。用于风寒感冒,胃寒呕吐,寒痰咳嗽等。其特有的“姜辣素”能刺激胃肠黏膜。使胃肠道充血,消化能力增强,能有效地治疗吃寒凉食物过多而引起的腹胀、腹痛、腹泻、呕吐等。 吃过生姜后,人会有身体发热的感觉,这是因为它能使血管扩张,血液循环加快,促使身上的毛孔张开,这样不但能把多余的热量带走,同时还能把体内的病菌、寒气一同带出。当身体吃了寒凉之物,受了雨淋或在空调房间里呆久了,吃生姜就能及时消除因肌体寒重造成的各种不适。
红枣:味甘性湿,归脾胃经,有补中益气,养血安神,缓和药性的功能。红枣可健脾益胃,脾胃虚弱、腹泻,倦怠无力等症。红枣可增强人体免疫力,红枣含有大量的糖类物质,主要为葡萄糖,含有果糖、蔗糖以及由葡萄糖和果糖组成的低聚糖,***聚糖及半乳醛聚糖等;并含有大量的维生素C、核黄素、硫胺素、有胡萝卜素、尼克酸等多种维生素,具有较强的补养作用,能提高人体免疫功能,增强抗病能力。
干姜:性味辛,热。归脾、胃、肾、心、肺经。干姜具有温中散寒、回阳通脉、温肺化饮等功效,用于脘腹冷痛,呕吐泄泻,肢冷脉微,寒饮喘咳。干姜比生姜含有更多的挥发油和姜辣素, 姜辣素能刺激胃肠黏膜,挥发油中的姜烯、姜酚等促进血管扩张,所以干姜具有暖胃通脉的特殊功效。
山药:山药具有健脾、补肺、固肾、益精等多种功效,并且对肺虚咳嗽、脾虚遗精、带下及小便频繁等症,都有一定的疗补作用,而山药中则含有丰富的维生素C 及矿物质,所以具有补血、助眠、清凉退火,止血散淤等功效,山药有健脾、除湿、补气、益肺、固肾益精的功效,山药还含有大量淀粉及蛋白质、B 族维生素、维生素C、维生素E、葡萄糖、粗蛋白、氨基酸、胆汁碱、尿囊素等。
陈皮:味苦、辛,性温。归肺、脾经。具理气健脾、燥湿化痰、解腻留香、降逆止呕等功效。陈皮水煎液对唾液淀粉酶活性有明显的促进作用,这是陈皮理气健脾作用的实验依据。
甘草:甘草具脾益气、清热解毒、祛痰止咳、缓急止痛、调和诸药等功效。用于脾胃虚弱,倦怠乏力,心悸气短,咳嗽痰多,脘腹、四肢挛急疼痛,痈肿疮毒,缓解药物毒性、烈性。甘草含有甘草甜素,类黄酮素,萜类,胺基酸,木酚素,植物固醇等成分,甘草甜素则可以抗发炎和提升免疫力,在临床上,甘草常被用于胃肠道溃疡、痛疽疮疡的治疗。
红糖:红糖性味温润,味甘甜,入肝脾经。具有益气、助脾化食、补血化瘀等功效,还兼具散寒止痛作用。所以,女性因受寒、瘀血所致的行经不利、痛经、月经暗红兼腹冷痛等症,喝些红糖水常能起到治疗和缓解作用。红糖所含有的葡萄糖释放能量快,吸收利用率高,可以快速的补充体力。红糖含有丰富的钙和铁,而钙和铁是人体必需的矿物质和微量元素。中医认为红糖通过“温而补之,温而通之、温而散之”而发挥补血作用。
果糖:和葡萄糖一样,也是一种单糖,能够快速给人体提供能量,其代谢途径与胰岛素无关,不会引起血糖及胰岛素水平波动。
寒邪有外寒、内寒之分,外寒包含伤寒和中寒,寒邪伤于肌表,郁遏卫阳,称为“伤寒”;寒邪直中于里,伤及脏腑阳气,则为“中寒”。内寒则是机体阳气不足,失于温煦的病理反映。寒性“凝滞”,即凝结、阻滞不通之意。一旦阴寒之邪偏盛,阳气受损,则经脉气血失于温煦推动而阻滞不通。气血阻滞不通,不通则痛,故寒邪伤人多见疼痛症状。本发明采用生姜解表散寒、干姜温中散寒,二者合用,共同驱除内寒和外寒,温煦经脉脏腑,解除因寒邪引起的各种疼痛。红枣、山药健脾益胃,益气补血,陈皮理气健脾,红糖、果糖可给机体迅速补充能量,气血充足可利于寒气排出和解除疼痛,甘草调和诸药,健脾和中,各药合在一起,可达驱寒暖身、健脾益胃、预防感冒和痛经之功效。
本发明上述固体饮料的制备方法,包括如下步骤:
a)取生姜,洗净,破碎,榨汁,生姜汁用洁净容器保存,备用;干姜,洗净,60℃以下低温干燥,粉碎成20~60目粗粉,用超临界CO2萃取得到干姜油,干姜油用洁净器保存,备用;红枣,洗净,切碎;陈皮、山药,挑选除杂;甘草,洗净,切成1-1.5cm的段;
b)取榨汁后的生姜渣、超临界CO2萃取后的干姜渣、红枣、陈皮、山药、甘草,加水煎煮提取两次,第一次加6~15倍量水,煎煮1~3小时,第二次加4~10倍量水,煎煮0.5~2小时,滤过,合并滤液,在80℃下减压浓缩到相对密度为1.03-1.13的浸膏;
c)取生姜汁,加入β-环糊精和麦芽糊精混匀,加入到上述浸膏中,混匀得中药清膏,取中药清膏进行喷雾干燥,定时收集喷干粉,得中药喷干粉;
d)取中药喷干粉、干姜油,与红糖、果糖混合均匀,制粒,包装,制成固体饮料。
本发明通过实验进一步优选了超临界CO2萃取干姜的工艺,所述超临界CO2萃取的条件为:萃取釜压力20~25MPa,分离Ⅰ压力7~12 MPa,分离Ⅱ压力4~8 MPa,萃取温度为35~50℃,分离Ⅰ温度为50~65℃,分离Ⅱ温度为30~40℃,CO2流量18~28L/h,萃取时间为1~3.0小时。上述步骤c)中,所述喷雾干燥的条件优选为:控制进风温度175~185℃,出风温度85~95℃。
本发明由上述制备方法得到的固体饮料可加入其它辅料如食用香精、甜味剂等制成不同风味的饮品,也可以加入药学上可接受的载体,采用常规的方法制成颗粒剂、片剂、胶囊等。
本发明与现有技术相比,具有如下有益效果:
(1)根据处方中各药材有效成分的理化性质特点,为充分提取本配方中生姜、干姜的有效成分挥发油,本发明采用生姜先榨汁提取生姜汁(含有挥发性成分),干姜先用超临界CO2萃取挥发油,从而避免了挥发油因长时间加热提取而挥发损失,药渣再与其它生药加水煎煮,最大限度的提取了药材中的有效成分,保证了功效;
(2)生姜汁用β-环糊精和麦芽糊精包合后再喷雾干燥,最大化的保持了姜的原有香气;
(3)本发明的固体饮料产品口感好,仅需热水冲泡,冲饮方便、便于携带,是比较理想的药食两用饮品,经人群试验表明,服用本品具有很好的防寒暖身、健脾暖胃、预防感冒和痛经等功效。
具体实施方式
下面通过具体实施方式来进一步说明本发明,以下实施例为本发明具体的实施方式,但本发明的实施方式并不受下述实施例的限制。
实施例1:
原料药配比:
生姜3份、红枣3份、干姜0.5份、陈皮1份、山药1份、甘草0.3份、红糖1份、果糖3份,麦芽糊精0.5份,β-环糊精0.8份。
其制备工艺包括如下步骤:
a)取生姜,洗净,破碎,榨汁,生姜汁用洁净容器保存,备用;干姜,洗净,60℃以下干燥,粉碎成20-60目粗粉,用超临界CO2萃取干姜油,超临界萃取条件为:萃取釜压力25MPa,分离Ⅰ压力9MPa,分离Ⅱ压力5 MPa,萃取温度为45℃,分离Ⅰ温度为60℃,分离Ⅱ温度为35℃,CO2流量20L/h,萃取时间为1.5小时,干姜油用洁净器保存,备用;红枣,洗净,切碎;陈皮、山药,挑选除杂;甘草,洗净,切成1-1.5cm的段;
b)取榨汁后的生姜渣、超临界CO2萃取后的干姜渣、红枣、陈皮、山药、甘草,加水煎煮提取两次,第一次加8倍量水,煎煮2小时,第二次加6倍量水,煎煮1小时,滤过,合并滤液,在80℃下减压浓缩到相对密度为1.05-1.08的浸膏;
c)取生姜汁,加入β-环糊精、麦芽糊精混匀,加入到上述浸膏中混匀得到中药清膏,取中药清膏进行喷雾干燥,控制进风温度175~185℃,出风温度85~95℃,定时收集喷干粉,得中药喷干粉;
d) 取中药喷干粉、干姜油,与红糖、果糖混合均匀,制粒,包装,制成固体饮料。
实施例2:
原料药配比:
生姜6份、红枣6份、干姜1份、陈皮0.5份、山药1份、甘草0.5份、红糖2份、果糖5份,麦芽糊精0.6份,β-环糊精0.7份。
其制备工艺包括如下步骤:
a)取生姜,洗净,破碎,榨汁,生姜汁用洁净容器保存,备用;干姜,洗净,60℃以下干燥,粉碎成20-60目粗粉,用超临界CO2萃取干姜油,超临界萃取条件为:萃取釜压力20MPa,分离Ⅰ压力10MPa,分离Ⅱ压力8 MPa,萃取温度为50℃,分离Ⅰ温度为50℃,分离Ⅱ温度为40℃,CO2流量25L/h,萃取时间为3.0小时,干姜油用洁净器保存,备用;红枣,洗净,切碎;陈皮、山药,挑选除杂;甘草,洗净,切成1-1.5cm的段;
b)取榨汁后的生姜渣、超临界CO2萃取后的干姜渣、红枣、陈皮、山药、甘草,加水煎煮提取两次,第一次加10倍量水,煎煮3小时,第二次加5倍量水,煎煮0.5小时,滤过,合并滤液,在80℃下减压浓缩到相对密度为1.05-1.08的浸膏;
c)取生姜汁,加入β-环糊精、麦芽糊精混匀,加入到上述浸膏中混匀得到中药清膏,取中药清膏进行喷雾干燥,控制进风温度175~185℃,出风温度85~95℃,定时收集喷干粉,得中药喷干粉;
d) 取中药喷干粉、干姜油,与红糖、果糖混合均匀,制粒,包装,制成固体饮料。
对比例1:
原料药配比:
生姜3份、红枣3份、干姜0.5份、陈皮1份、山药1份、甘草0.3份、红糖1份、果糖3份,麦芽糊精0.5份,β-环糊精0.8份。
其制备工艺包括如下步骤:
取生姜、干姜,洗净,切片;红枣,洗净,切碎;陈皮、山药,挑选除杂;甘草,洗净,
切成1-1.5cm的段;将各原料药加水煮沸煎煮3次,料液比1:10,每次30分钟,合并滤液,加热浓缩提取液,加入红糖、果糖、麦芽糊精和β-环糊精混合均匀,制粒,包装,制成固体饮料。
研究实验发现,分别取实施例1和对比例1的颗粒样品4g,加热水200ml搅拌溶解,闻香品尝,实施例1样品的姜香、辣味明显要比对比例1样品浓郁,口感独特;分别用HPLC法测定实施例1和对比例1的颗粒样品中6-姜辣素(C17H26O4)的含量,对比例1样品的含量为0.02%,实施例1样品中含量可达0.04%,明显高于对比例1。这说明本发明的制备方法不仅富集了有效成分,而且保持了姜的原有风味。
临床效果试验:
样品:按实施例1制备的颗粒,为黄棕色颗粒,味甜,辣,有明显姜香。
服用方法:取1袋样品(4g/袋),加温水或开水约200ml冲服。
预防风寒感冒:某女士,30岁,身高160cm,体重40KG,平日怕冷,易受风寒,经常感冒,感冒时出现全身发冷、鼻塞头痛等不适症状,服用常规感冒药,至少要3天后才能缓解全身发冷、鼻塞头痛的症状。服用本发明样品,1小时内全身发冷和鼻塞症状即可明显缓解,连续服用3天,每天2次,1次1袋,全身不适症状消失。后坚持每天服用1袋,连续30天,自已感觉怕冷现象消失,食欲有所增加,体重略上升。
预防痛经:某女士,25岁,身高155cm,体重45KG。有痛经史约10年,特别是在冬天寒冷天气,月经期头3天内,腹痛、腰痛明显。在月经第一天开始服用本发明样品,每天2次,1次1袋,连续5天,腹痛、腰痛等不适症状缓解。后坚持每月月经来前7天开始服用本发明样品,每天1次,每次1袋,月经间每天2次,1次1袋,腹痛、腰痛等不适症状明显缓解。
预防受寒腹泻:某女士,40岁,身高155cm,体重40KG,平时容易着凉腹泻,特别是吃完油腻食物后,如身体再受寒凉,更容易引起腹痛、腹泻等肠胃不适症状,连续服用本发明样品,每天1次,1次1袋,连续30天,自我感觉肠胃***趋向健康,因为着凉引起的腹泻次数明显减少。

1.一种固体饮料的制备方法,由下述重量份的原料制成:生姜2-6份、红枣2-6份、山药1-2份、陈皮0.1-1份、干姜0.1-1份、红糖0.5-2份、甘草0.2-0.5份、果糖2-6份,麦芽糊精0.3-1份,β-环糊精0.3-1份,其特征在于,包括如下步骤:
a)取生姜,洗净,破碎,榨汁,生姜汁用洁净容器保存,备用;干姜,洗净,60℃以下低温干燥,粉碎成20~60目粗粉,用超临界CO2萃取得到干姜油,干姜油用洁净器保存,备用;红枣,洗净,切碎;陈皮、山药,挑选除杂;甘草,洗净,切成1-1.5cm的段;
b)取榨汁后的生姜渣、超临界CO2萃取后的干姜渣、红枣、陈皮、山药、甘草,加水煎煮提取两次,第一次加6~15倍量水,煎煮1~3小时,第二次加4~10倍量水,煎煮0.5~2小时,滤过,合并滤液,在80℃下减压浓缩到相对密度为1.03~1.13的浸膏;
c)取生姜汁,加入β-环糊精和麦芽糊精混匀,加入到上述浸膏中,混匀得中药清膏,取中药清膏进行喷雾干燥,定时收集喷干粉,得中药喷干粉;
d)取中药喷干粉、干姜油,与红糖、果糖混合均匀,制粒,包装,制成固体饮料。
2.根据权利要求1所述的固体饮料的制备方法,其特征在于,步骤a)中,所述超临界CO2萃取条件为:萃取釜压力20~25MPa,分离Ⅰ压力7~12 MPa,分离Ⅱ压力4~8 MPa,萃取温度为35~50℃,分离Ⅰ温度为50~65℃,分离Ⅱ温度为30~40℃,CO2流量18~28L/h,萃取时间为1~3.0小时。
3.根据权利要求1所述的固体饮料的制备方法,其特征在于,步骤c)中,所述喷雾干燥的条件为:控制进风温度175~185℃,出风温度85~95℃。
