背景技术
香肠是一种利用非常古老的食物生产和肉食保存技术,将动物的肉绞碎成泥状,再灌入肠衣制成的长圆柱体管状食品。中国的香肠有着悠久的历史,香肠的类型也有很多,但是随着人们的生活水平的提高,人们不再只注重食品的口感,还有食品的健康及保健作用也越来越受到人们的重视。
发明内容
本发明为了弥补已有技术的缺陷,提供一种银耳粒海苔香肠的制备方法。
本发明是通过以下技术方案实现的:一种银耳粒海苔香肠,由以下重量份原料组成:猪肉390-410、鸡蛋20-30、黄油30-40、鱼骨20-30、海苔30-40、银耳10-15、芹菜15-20、薄荷汁30-35、菱角10-15、山楂20-30、蓝莓20-30、酸枣仁5-6、柏子仁5-6、山药5-6、韭菜籽4-5、仙茅4-5、肉苁蓉4-5、玫瑰茄6-7、紫罗兰6-7、白酒20-30、豆浆20-30、葱汁50-60、食品添加剂适量、白糖适量、食盐适量、肠衣适量、水适量。
食品添加剂由以下重量份原料,合并混匀制成:螺旋藻粉10-15、胡椒粉20-25、当归油0.02-0.03、果胶2-3、小麦胚芽粉10-15、苦荞花粉5-6、海参粉10-15。
一种银耳粒海苔香肠的制备方法,包括以下步骤:
(1)将鱼骨、海苔洗净,烤熟后,做成鱼骨海苔粉备用;
(2)将银耳、芹菜洗净,切成碎粒,放入锅中,加入薄荷汁,焖煮20-30分钟,取银耳、芹菜备用;
(3)将山楂、蓝莓洗净,取其果肉与菱角肉一起,放入锅中,加入白酒、豆浆,加热煮至果肉烂熟,将锅中所有物料做成果泥备用;
(4)将酸枣仁、柏子仁、山药、韭菜籽、仙茅、肉苁蓉、玫瑰茄、紫罗兰用5-10倍量的水提取,将提取液喷雾干燥,得到中药粉;
(5)将鸡蛋煮熟去壳后与洗净的猪肉一起放入绞肉机,绞碎后与黄油、鱼骨海苔粉、银耳、芹菜、果泥、中药粉、食品添加剂、食盐、白糖合并,混匀后,取肠衣灌肠,烤熟后晒干即可。
