背景技术
    香肠是一种利用非常古老的食物生产和肉食保存技术,将动物的肉绞碎成泥状,再灌入肠衣制成的长圆柱体管状食品。中国的香肠有着悠久的历史,香肠的类型也有很多,但是随着人们的生活水平的提高,人们不再只注重食品的口感,还有食品的健康及保健作用也越来越受到人们的重视。
发明内容
本发明为了弥补已有技术的缺陷,提供一种香菇粒奶油香肠的制备方法。
本发明是通过以下技术方案实现的:一种香菇粒奶油香肠,由以下重量份原料组成:鸭肉400-420、虾仁60-70、奶油40-50、菠萝30-40、鲜枣20-30、胡萝卜15-20、芝麻20-25、糯米30-40、花生10-15、红酒20-30、生姜汁10-15、黄精5-6、三七4-5、雪莲5-6、桑葚5-6、五味子3-4、淫羊藿3-4、决明子5-6、满天星5-6、马鞭草4-5、柠檬草5-6、食品添加剂10-12、食盐适量、白砂糖适量、鸡精适量、肠衣适量、水适量。
食品添加剂由以下重量份原料,合并混匀制成:螺旋藻粉10-15、胡椒粉20-25、当归油0.02-0.03、果胶2-3、小麦胚芽粉10-15、苦荞花粉5-6、海参粉10-15。
一种香菇粒鸭肉香肠的制备方法,包括以下步骤:
(1)将菠萝、鲜枣洗净,取其果肉与洗净的胡萝卜一起,切成果粒备用;
(2)将芝麻、糯米、花生洗净,加入红酒、生姜汁、适量水,加热煮成米饭,将米饭散开备用;
(3)将黄精、三七、雪莲、桑葚、五味子、淫羊藿、决明子、满天星、马鞭草、柠檬草用6-9倍量的水提取,将提取液喷雾干燥,得到中药粉备用;
(4)将鸭肉、虾仁洗净后放入绞肉机中,绞碎后与奶油、果粒、米饭、中药粉、食品添加剂、食盐、白砂糖、鸡精合并,混匀后,取肠衣灌肠,然后烤熟晒干即可。

一种香菇粒奶油香肠,由以下重量份(Kg)原料组成:鸭肉400、虾仁60、奶油40、菠萝3、鲜枣20、胡萝卜15、芝麻20、糯米30、花生10、红酒20-30、生姜汁10、黄精5、三七4、雪莲5、桑葚5、五味子3、淫羊藿3、决明子5、满天星5、马鞭草4、柠檬草5、食品添加剂10、食盐适量、白砂糖适量、鸡精适量、肠衣适量、水适量。
食品添加剂由以下重量份(Kg)原料,合并混匀制成:螺旋藻粉10、胡椒粉20、当归油0.02、果胶2、小麦胚芽粉10、苦荞花粉5、海参粉10。

所述食品添加剂由以下重量份原料,合并混匀制成:螺旋藻粉10-15、胡椒粉20-25、当归油0.02-0.03、果胶2-3、小麦胚芽粉10-15、苦荞花粉5-6、海参粉10-15。
