本发明涉及一种八宝炒面粉,包括主料和辅料,其特征在于所述主料和辅料按重量份由以下物质组成:主料,莜麦80-85份;辅料:黄豆4-5份,胡麻4-5份,大枣2-3份,良谷米0.8-1份,枸杞0.8-1份,黑芝麻0.8-1份,苦杏仁0.8-1份,核桃仁0.4-0.5份,小茴香0.08份,八角香0.01份。本发明配方科学,营养均衡,生产手段先进,将传统工艺和现代制作方法结合起来,既保留了传统工艺的天然品味,又加入了现代方法的酥香口感,食用方便,可干食也可开水冲饮,是农村老寿星终生的主要茶食,也可作为市民方便的早餐粥。

技术领域
本发明属于食品加工领域,具体涉及一种炒面。
背景技术
北方民间制作熟面(也叫炒面)的习惯沿续至今,如会宁和定西等地采用莜麦(裸燕麦)为原料,白银和河西走廊地区采用小麦为原料,青海和西藏等地采用青稞为原料,但制作办法都很简单,主要工艺有簸干净原料,用铁锅炒熟,用钢磨磨制而成(以前用石磨),也有用普通粉碎机粉制而成。这些炒面缺乏科学配方和先进生产手段,口感和营养亟待改善。
发明内容
本发明的目的在于避免现有技术的不足提供一种营养均衡、口感酥香的八宝炒面粉。
为实现上述目的,本发明采取的技术方案为:一种八宝炒面粉,包括主料和辅料,其特征在于所述主料和辅料按重量份由以下物质组成:
主料:莜麦80-85份;
辅料:黄豆4-5份,胡麻4-5份,大枣2-3份,良谷米0.8-1份,枸杞0.8-1份,黑芝麻0.8-1份,苦杏仁0.8-1份,核桃仁0.4-0.5份,小茴香0.08份,八角香0.01份。
所述主料和辅料按重量份由以下物质组成:
主料:莜麦84份;
辅料:黄豆4.5份,胡麻4.5份,大枣2.7份,良谷米0.9份,枸杞0.9份,黑芝麻0.9份,苦杏仁0.9份,核桃仁0.45份,小茴香0.08份,八角香0.01份。
制作方法如下:
(1)主料处理:
将莜麦在96-100℃的沸水中煮至表面颜色发青,在通风的太阳能干燥室中自然干燥,待莜麦中的水份缩至14%以下后,送入远红外连续振动烤炉,在135℃~163℃温度下烤制1分钟时间,经自然冷却后备用;
(2)辅料炮制:
a、将黄豆浸泡后在笼中蒸熟后晾干,再进行烘烤,然后自然冷却备用;
b、将胡麻旺火炒熟至颜色由紫变灰褐色,自然冷却后备用;
c、将大枣洗净去核经烤箱烘干,自然冷却后备用;
d、将良谷米经炒货机炒至淡黄色,自然冷却后备用;
e、将枸杞经铁锅焙烤,自然冷却后备用。
f、将黑芝麻温火炒熟,自然冷却后备用;
g、将苦杏仁煮泡、取皮、三次换水浸泡,在铁锅里焙干,自然冷却后备用;
h、将核桃仁恒温干燥至易于粉碎,备用;
i、将小茴香和八角香中火炒熟,自然冷却后备用;
(3)配制:将步骤(1)和(2)处理过的主、辅料按上述重量份加入搅拌机,搅拌均匀后再用不锈钢粉碎机粉碎,然后用100~150目的筛网过滤,包装、入库。
本发明的有益效果是:配方科学,营养均衡,生产手段先进,将传统工艺和现代制作方法结合起来,既保留了传统工艺的天然品味,又加入了现代方法的滑润口感,由于主料经远红外连续振动烤炉的烤制,所以还有特别的酥香口感,食用方便,可干食也可开水冲饮,是农村老寿星终生的主要茶食,也可作为市民方便的早餐粥。
具体实施方式
以下对本发明的原理和特征进行描述,所举实例只用于解释本发明,并非用于限定本发明的范围。
实施例1:一种八宝炒面粉,包括主料和辅料,其特征在于所述主料和辅料按重量份由以下物质组成:
主料:莜麦84份;
辅料:黄豆4.5份,胡麻4.5份,大枣2.7份,良谷米0.9份,枸杞0.9份,黑芝麻0.9份,苦杏仁0.9份,核桃仁0.45份,小茴香0.08份,八角香0.01份。
制作方法如下:
(1)主料处理:

(3)配制:将步骤(1)和(2)处理过的主、辅料按上述重量份加入搅拌机,搅拌均匀后再用不锈钢粉碎机粉碎,然后用100~150目的筛网过滤,包装、入库。
经检测,100克产品中含蛋白质约12克,是小麦的1.19倍;脂肪约8克,是小麦的4.5倍;粗纤维1.6克,是大米的6倍;淀粉含量近49%,是五种杂粮杂豆粉中含量最高的,八宝炒面粉蛋白质中人体必需的8种氨基酸较为齐全且比较合理。
爱吃甜食者,分别用蜂蜜或糖、瓜、果等拌后吃;愿吃咸食者,加椒盐用开水拌后吃;给小孩食用时,适当的加些奶粉或鲜牛奶,粗细搭配,均衡营养。

1.一种八宝炒面粉,包括主料和辅料,其特征在于所述主料和辅料按重量份由以下物质组成:
主料:莜麦80-85份;
辅料:黄豆4-5份,胡麻4-5份,大枣2-3份,良谷米0.8-1份,枸杞0.8-1份,黑芝麻0.8-1份,苦杏仁0.8-1份,核桃仁 0.4-0.5份,小茴香0.08份,八角香0.01份;
制作方法如下:
