Description
Zerkleinerungsmaschine für Fleisch, Brot oder dergleichen Es sind bereits Zerkleinerungsmaschinen für Fleisch, Brot oder dergleichen bekannt, bei denen oberhalb einer Lochplatte Messer rotieren. Der Ab stand zwischen der Lochplatte und den Messern ist hierbei einstellbar. Es hat sich gezeigt, dass die Tem peratur des austretenden Zerkleinerungsgutes weit gehend vom Abstand der Messer von der Lochplatte abhängig ist. Bei verschiedenen Produkten ist es von Bedeutung, dass ihre Temperatur nach der Zerkleine rung einen bestimmten Wert aufweist oder unter einem Höchstwert liegt.
Vor allem, wenn man Fleisch zerkleinert, um Brät zur Herstellung von Wurst zu erhalten, ist eine Endtemperatur bei der Zerkleinerung von etwa 15 erwünscht, da dann die richtige Bindung vorliegt und die weitere Ver arbeitung in einfachster Weise erfolgen kann. Bei den bisher bekannten Ausführungsformen ist man ge zwungen, den Abstand der Messer von der Loch platte mehr oder weniger gefühlsmässig einzustellen, was vielfach auf Schwierigkeiten stösst.
@' Um eine gleichmässige Ausgangstemperatur des zerkleinerten Gutes in der gewünschten Höhe zu er halten, ragt erfindungsgemäss bei einer derartigen Zerkleinerungsmaschine in das durch- die Lochplatte getriebene Zerkleinerungsgut ein Temperaturfühler hinein, der mittel- oder unmittelbar eine Vorrichtung zur Abstandseinstellung zwischen Lochplatte und Messern steuert.
Die Zeichnung zeigt ein Ausführungsbeispiel der Erfindung. Es stellen dar: Fig. 1 einen teilweisen unten abgebrochenen Längsschnitt einer Zerkleinerungsmaschine, Fig. 2 eine schematische Darstellung des Schnitts 111-11t nach Fig. 1 (unter Weglassung des Gehäuses) und des Schaltplanes, Fig. 3 den Schnitt 111-11I nach Fig. 1, Fig. 4 einen Ausschnitt aus Fig. 3 mit geöffneter Spannhülse.
Die Zerkleinerungsmaschine 1 ist mit einem nicht dargestellten Antriebsmotor versehen, dessen Welle 2 an ihrem oberen Ende die Messer 3 trägt, die oberhalb einer im Gehäuse 4 gelagerten Lochscheibe 5 rotieren. Zur Verstellung der Messer 3 ist die Mes serantriebswelle 2 in axialer Richtung verschiebbar. Zu diesem Zweck ist sie in einer Hohlschraube 6 ge lagert, die sieh ihrerseits in einer mit Innengewinde versehenen Spannhülse 7 befindet. Die Drehung der Hohlschraube 6 erfolgt über ein Handrad 8, das mit einer Verstellschnecke 9 verbunden ist, die in einen Zahnkranz 10 der Hohlschraube 6 eingreift.
Ausser durch das Handrad 8 kann die Messeran triebswelle 2 auch noch durch den Verstellmotor 11 in axialer Richtung verschoben werden. Die Welle 12 des Verstellmotors 11 ist mit einer Schnecke 13 versehen, die mit dem Schneckenrad 14 kämmt. Die Handradwelle 15 ist als Hohlwelle ausgebildet und nimmt in sich einen Zuganker 16 auf, der am Hand rad 8 durch eine Mutter 17 verschraubt ist. Mittels des Zugankers 16 wird das Schneckenrad 14 an den Flansch 18 der Hohlwelle 15 gepresst und so mit dieser fest verbunden. Eine Verstellung durch das Handrad 8 ist nunmehr nur nach Lösen der Mutter 17 möglich.
Der Verstellmotor 11 ist über ein Relais 19 mit einer Stromquelle 20 verbunden. Die Stromquelle 20 ist durch einen Hauptschalter 21 schaltbar. Die Stromquelle ist in nicht dargestellter Weise so ge staltet, dass sie fortlaufend Stromimpulse an das Re lais abgibt. Diese werden je nach der Stellung des Relais dem Verstellmotor 11 zugeführt. Dabei hat das Relais 19 drei Stellungen, von denen die eine für den Vorwärtslauf, die andere für den Rückwärts lauf des Verstellmotors und die dritte für die Be- triebsunterbrechung vorgesehen ist. Der übersichtlich keit halber sind die Verbindungen jedoch lediglich in einfachen Leitungen eingezeichnet.
Mit dem Relais 19 ist ausserdem noch ein Elektro magnet 22 verbunden. Dieser wirkt auf die Spann arme 23 der Spannhülse 7 ein und presst diese ent weder zusammen oder gibt sie frei. Der Magnet 22 ist mit dem Relais 19 so verbunden, dass bei der Einschaltung des Verstellmotors 11 der Magnet 22 die Spannarme 23 freigibt, so dass die Hohlschraube 6 sehr leicht gedreht werden kann. Beim Abschalten des Verstellmotors 11 zieht der Magnet 22 dagegen die Spannarme 23 zusammen, so dass eine spielfreie Lagerung der Messerantriebswelle 2 erreicht wird.
Die Steuerung des Relais 19 erfolgt über einen Temperaturfühler 24 und ein Sollwertvergleichs-Ge- rät 25. Der Temperaturfühler 24 ist im Auswurf 26 der Zerkleinerungsmaschine 1 angeordnet und ragt in das durch die Lochplatte 5 hindurchgepresste, nicht dargestellte Zerkleinerungsgut hinein. Der Tempera turwert dieses Zerkleinerungsgutes wird als soge nannter Istwert dem Vergleichsgerät 25 zugeführt und ist an diesem durch den Zeiger 26 ablesbar. Durch den Zeiger 27 wird die gewünschte Tempera tur - nämlich der Sollwert - eingestellt.
Je nachdem, ob der Unterschied zwischen dem Soll- und Istwert negativ oder positiv ist, wird das Relais 19 entspre chend gesteuert und wird über den Verstellmotor 11 der Abstand zwischen den Messern 3 und der Loch platte 5 vergrössert oder verkleinert.
Um eine Abstandsverstellung der Messer 3 ge genüber der Lochplatte 5 über einen bestimmten Wert hinaus zu verhindern, ist ein besonderer End- schalter 28 vorgesehen. Dieser besteht aus einem Schneckenrad 29, welches in die auf der Hohlwelle 15 angeordnete Schnecke 30 eingreift. Das Schnek- kenrad 29 ist mit einem Bolzen 31 versehen, der in der Endstellung auf einen Ruhekontakt 32 einwirkt. Dieser befindet sich im Schaltbild nach Fig. 2 zwi schen dem Relais 19 und der Stromquelle 20.
Sobald der Bolzen 31 den Ruhekontakt 32 öffnet, hört der Stromfluss zum Verstellmotor 11 und dem Elektro magnet 22 auf, so dass die weitere Verstellung der Messerantriebswelle 2 unterbunden ist.
Das Schneckenrad 29 ist in axialer Richtung verstellbar. Auf seine Achse 33 wirkt eine Druck feder 34 ein, die das Schneckenrad 29 nach oben verschiebt, so dass es ausser Eingriff mit der Schnecke 30 kommt. In dieser Lage ist es möglich, das Schnek- kenrad 29 entsprechend zu verstellen. Ausserdem ist mit dem Schneckenrad 29 noch eine Spiralfeder 35 verbunden, welche das Schneckenrad 29 so dreht, dass der Bolzen 31 an den Ruhekontakt 32 zu liegen kommt, ohne diesen jedoch zu öffnen.
Die Zerkleinerungsmaschine 1 ist in bekannter Weise mit einem Einfülltrichter 36 versehen, der um eine Achse 37 schwenkbar ist. Der Einfülltrichter 36 ist mit einem Schwenkhebel 38 verbunden, der bei Abschwenken des Einfülltrichters einen Schutzschal ter 39 auslöst und somit bei offener Maschine ein Weiterdrehen der Messer 3 verhindert. Dieser Hebel 38 wirkt gleichzeitig über einen Zwischenstössel 40 auf die Welle 33 des Schneckenrades 29 ein.
Wenn - wie in Fig. 1 dargestellt - der Einfüll- trichter 36 aufgeschwenkt ist, wird das Schneckenrad 29 durch den Hebel 38 und den Stössel 40 gegen die Kraft der Feder 34 nach unten gedrückt und befindet sich in Verbindung mit dem Schneckenrad 30. Sobald jedoch der Einfülltrichter 36 abge schwenkt wird, gleitet das Schneckenrad 29 nach oben und löst sich von der Schnecke 30. Infolge der Spiral feder 35 wird das Schneckenrad 29 so weit gedreht, bis der Bolzen 31 am Ruhekontakt 32 anliegt, ohne diesen zu öffnen.
Dann kann nach Lösen der Mutter 17 die Messerantriebswelle 2 durch Drehen des Handrads 8 in die gewünschte Grundstellung bewegt werden. Nach Aufschwenken des Einfülltrichters 36 erfolgt dann wiederum die Verbindung zwischen der Schnecke 30 und dem Schneckenrad 29. Sobald der Verstellmotor 11 die Messerantriebswelle 2 über diese Stellung hinaus zu bewegen versucht, wird der Ruhe kontakt 32 geöffnet und die Verstellvorrichtung ab geschaltet.
In Fig. 3 ist die angepresste Lage der Spannarme 23 dargestellt, während aus Fig. 4 die gelöste Lage derselben erkennbar ist.

The distance between the perforated plate and the knives is adjustable. It has been shown that the temperature of the emerging material to be shredded depends largely on the distance between the knife and the perforated plate. For various products it is important that their temperature after grinding has a certain value or is below a maximum value.
Especially when you chop up meat in order to obtain sausage meat for the production of sausage, a final temperature for the chopping of about 15 is desirable, since the correct bond is then present and further processing can be carried out in the simplest way. In the previously known embodiments one is ge forced to adjust the distance between the knife from the perforated plate more or less emotionally, which often encounters difficulties.
In order to maintain a uniform starting temperature of the shredded material at the desired level, according to the invention, in such a shredding machine, a temperature sensor protrudes into the shredded material driven through the perforated plate, which directly or indirectly controls a device for adjusting the distance between the perforated plate and the knives.
The drawing shows an embodiment of the invention. The shredding machine 1 is provided with a drive motor, not shown, the shaft 2 of which carries the knives 3 at its upper end, which rotate above a perforated disk 5 mounted in the housing 4. To adjust the knife 3, the Mes serantriebswelle 2 is displaceable in the axial direction. For this purpose, it is stored in a hollow screw 6 ge, which in turn is located in an internally threaded clamping sleeve 7. The rotation of the hollow screw 6 takes place via a hand wheel 8, which is connected to an adjusting worm 9, which engages in a ring gear 10 of the hollow screw 6.
Except by the handwheel 8, the Messeran drive shaft 2 can also be moved by the adjusting motor 11 in the axial direction. The shaft 12 of the adjusting motor 11 is provided with a worm 13 which meshes with the worm wheel 14. The handwheel shaft 15 is designed as a hollow shaft and takes in a tie rod 16, which is screwed to the hand wheel 8 by a nut 17. The worm wheel 14 is pressed against the flange 18 of the hollow shaft 15 by means of the tie rod 16 and is thus firmly connected to it. Adjustment by means of the hand wheel 8 is now only possible after loosening the nut 17.
The adjusting motor 11 is connected to a power source 20 via a relay 19. The power source 20 can be switched by a main switch 21. The power source is designed in a manner not shown in such a way that it continuously delivers current pulses to the relay. These are fed to the adjusting motor 11 depending on the position of the relay. The relay 19 has three positions, one of which is intended for the forward run, the other for the reverse run of the adjusting motor and the third for the interruption of operation. For the sake of clarity, however, the connections are only shown in simple lines.
With the relay 19 an electric magnet 22 is also connected. This acts on the clamping arms 23 of the clamping sleeve 7 and presses these ent neither together or releases them. The magnet 22 is connected to the relay 19 in such a way that when the adjusting motor 11 is switched on, the magnet 22 releases the clamping arms 23 so that the banjo screw 6 can be rotated very easily. When the adjusting motor 11 is switched off, however, the magnet 22 pulls the clamping arms 23 together, so that the knife drive shaft 2 is supported without play.
The relay 19 is controlled via a temperature sensor 24 and a setpoint comparison device 25. The temperature sensor 24 is arranged in the ejection 26 of the shredding machine 1 and protrudes into the shredded material (not shown) that is pressed through the perforated plate 5. The temperature value of this material to be comminuted is fed to the comparison device 25 as a so-called actual value and can be read from this by the pointer 26. The desired tempera ture - namely the setpoint - is set by the pointer 27.
Depending on whether the difference between the setpoint and actual value is negative or positive, the relay 19 is controlled accordingly and the distance between the knives 3 and the perforated plate 5 is increased or decreased via the adjusting motor 11.
A special limit switch 28 is provided in order to prevent the distance between the knives 3 and the perforated plate 5 from being adjusted beyond a certain value. This consists of a worm wheel 29 which engages in the worm 30 arranged on the hollow shaft 15. The worm wheel 29 is provided with a bolt 31 which, in the end position, acts on a break contact 32. This is located in the circuit diagram of FIG. 2 between the relay 19 and the power source 20.
As soon as the bolt 31 opens the normally closed contact 32, the current flow to the adjusting motor 11 and the electric magnet 22 ceases, so that the further adjustment of the knife drive shaft 2 is prevented.
The worm wheel 29 is adjustable in the axial direction. A pressure spring 34 acts on its axis 33 and moves the worm wheel 29 upward so that it disengages from the worm 30. In this position it is possible to adjust the worm wheel 29 accordingly. In addition, a spiral spring 35 is connected to the worm wheel 29, which turns the worm wheel 29 in such a way that the bolt 31 comes to rest on the break contact 32, but without opening it.
The shredding machine 1 is provided in a known manner with a filling funnel 36 which can be pivoted about an axis 37. The feed hopper 36 is connected to a pivot lever 38 which triggers a protective switch 39 when the feed hopper is pivoted away and thus prevents the knife 3 from rotating further when the machine is open. This lever 38 acts simultaneously on the shaft 33 of the worm wheel 29 via an intermediate tappet 40.
When - as shown in FIG. 1 - the filling funnel 36 is pivoted open, the worm wheel 29 is pressed downwards by the lever 38 and the plunger 40 against the force of the spring 34 and is in connection with the worm wheel 30. However, as soon as the hopper 36 is pivoted abge, the worm wheel 29 slides up and detaches from the worm 30. As a result of the spiral spring 35, the worm wheel 29 is rotated until the bolt 31 rests on the normally closed contact 32 without opening it.
Then, after loosening the nut 17, the knife drive shaft 2 can be moved into the desired basic position by turning the handwheel 8. After pivoting the hopper 36, the connection between the worm 30 and the worm wheel 29 takes place again. As soon as the adjusting motor 11 tries to move the knife drive shaft 2 beyond this position, the rest contact 32 is opened and the adjusting device is switched off.
