Abstract

PRODUçãO DE ALIMENTOS FRITOS E COMPOSIçãO DE GORDURA. Uma composição de gordura é provida contendo de 55 a menos do que 95% em peso de diglicerídios, na qual de 55 a menos do que 93% em peso dos grupos de ácido graxo presentes são grupos de ácido graxo insaturado, e uma composição de gordura contendo a composição de gordura, bem como alimentos fritos contendo a composição de gordura, pelo que a gordura é reduzida em borbulhamento durante a fritura por imersão, e o alimento frito fornece uma paladar satisfatório na boca e crocância aumentada.
