Abstract

"BEBIDAS áCIDAS CONTENDO PURê DE TOFU". A presente invenção refere-se a bebidas ácidas que contêm um purê de tofu e têm textura e sabor aperfeiçoados, isto é, bebidas ácidas que compõem, como uma matéria-prima, um purê de tofu tendo as propriedades físico-químicas a seguir: a) ter uma viscosidade de 20 a 3.000 mpa.s, b) ter um módulo de armazenagem dinâmica de 0,2 a 600 Pa, c) ter um módulo de perda dinâmica de 0,2 a 250 Pa, e d) conter grãos tendo um diâmetro médio de grão de 2 a 15 <109>m, e 90% de diâmetro de grão de diâmetro de grão de 35 <109>m ou menos. De acordo com a presente invenção, é possível fabricar e fornecer bebidas ácidas de um tipo novo tendo uma textura excelente e um sabor favorável, que não podem ser esperados com produtos convencionais, e ser livre da separação dos componentes durante o armazenamento.
