Abstract
Un helado congelado aireado que comprende una mezcla de ingredientes adecuada para un helado aireado congelado y por lo menos un emulsionante para facilitar la formacion y estabilizacion de cristales a de grasa, el helado tiene una sobrecarga de 20 a 250%, celdas de aire pequenas distribuidas uniformemente que tienen un tamano promedio menor de 50 micrometros, cristales de hielo, una textura uniforme y una resistencia a choque térmico. Un granizado congelado aireado que comprende una mezcla de ingredientes adecuada para granizado congelado y aireado y por lo menos un emulsificante para facilitar la formacion y estabilizacion de cristales a de grasa, el granizado tiene una sobrecarga de entre 5% y 100%, celdas de aire pequenas distribuidas uniformemente, que tienen un tamano promedio menor de 50 micrometros, textura uniforme y una resistencia a choque térmico.
