Abstract
Se trata de un producto de golosina para crema helada en forma de emulsion estable en estado líquido a temperatura ambiente, conservable a temperaturaambiente en dicho líquido una vez envasado en condiciones estériles y que presenta una estructurami crocristalina al congelarse ante la ausencia de batido, quecomprende grasas alimenticias, proteínas lácteas, endulzantes, saborizantes y agua, que se caracteriza en que además comprende una composicion espesante yestabilizante que a su vezcomprende una sal que actua como estabilizador de proteína, un hidrocoloide constituido por un almidon químicamente modificado y almenos otro hidrocoloide seleccionado entre hemicelulosa hidrosoluble, pectinas que presentan un alto grado deesterificacion y me zclas de los mismos.
