Abstract
本発明の課題は、ノンアルコール又は低アルコールの低Brixワイン風味飲料において、ワインらしい飲みごたえを高めることである。本発明では、ナトリウム含有量を特定範囲にする。
Description
本発明は、特定範囲のナトリウム含有量と低いBrix値を有するノンアルコール又は低アルコールのワイン風味飲料、及び関連する方法に関する。
近年、若者を中心にノンアルコール飲料又は低アルコール飲料が人気である。この流れの中で、ノンアルコール又は低アルコールのワイン風味飲料の開発が進められている。
たとえば、特許文献1には、有機酸の組成を調整して、ワイン様の風味が改善・向上されたワイン風味飲料、特にノンアルコール又は低アルコールのワイン風味飲料を提供する技術が記載されている。

また、特許文献2には、特定の高級アルコール及び脂肪酸エステルの含有量をそれぞれ調整して、ワイン風味飲料に発酵感を付与する技術が記載されている。
近年の健康志向の流れに影響され、ワインやワイン風味飲料においても糖質量を低下させることが求められている。このことは、ノンアルコール又は低アルコールの場合でも同様である。しかしながら、本発明の発明者は、糖質量を低下させるとワインらしい飲みごたえが低下することを見出した。
飲料の分野では、糖質量を示す指標としてBrixを用いる。そのため、糖質量が低いことはBrix値が低いことであるともいえる。したがって、本発明の課題は、Brix値が低いノンアルコール又は低アルコールのワイン風味飲料において、ワインらしい飲みごたえを高めることである。
本発明者は、Brix値が低いノンアルコール又は低アルコールのワイン風味飲料において、ナトリウムがワインらしい飲みごたえに影響を与えることを見出した。
本発明は、以下のものに関するが、これらに限定されない。
1.アルコール含有量が3v/v%未満であり、ナトリウムの含有量が70~950mg/kgであり、そしてBrix値が5.8以下である、ワイン風味飲料。
2.ナトリウムの含有量が120~800mg/kgである、1に記載の飲料。
3.Brix値が2.5~5.8である、1又は2に記載の飲料。
4.アルコール含有量が3v/v%未満でありBrix値が5.8以下であるワイン風味飲料におけるワインらしい飲みごたえを高める方法であって、
当該飲料におけるナトリウムの含有量が70~950mg/kgとなるように原料を混合する工程を含む、前記方法。
本発明は、以下のものに関するが、これらに限定されない。
1.アルコール含有量が3v/v%未満であり、ナトリウムの含有量が70~950mg/kgであり、そしてBrix値が5.8以下である、ワイン風味飲料。
2.ナトリウムの含有量が120~800mg/kgである、1に記載の飲料。
3.Brix値が2.5~5.8である、1又は2に記載の飲料。
4.アルコール含有量が3v/v%未満でありBrix値が5.8以下であるワイン風味飲料におけるワインらしい飲みごたえを高める方法であって、
当該飲料におけるナトリウムの含有量が70~950mg/kgとなるように原料を混合する工程を含む、前記方法。
本発明は、Brix値が低いノンアルコール又は低アルコールのワイン風味飲料において、ワインらしい飲みごたえを高めることができる。なお、本明細書における「ワインらしい飲みごたえ」とは、アルコール飲料らしい重厚感とボディ、コクと厚みを有しつつ、口当たりがやわらかく、飲み終わった後にさわやかな余韻を有することを意味する。口当たりがやわらかく、飲み終わった後にさわやかな余韻を有することが他のアルコール飲料にはない、ワインらしい飲みごたえの特徴である。
本発明の飲料、及び関連する方法について、以下に説明する。
なお、特に断りがない限り、本明細書において用いられる「ppm」は、重量/容量(w/v)のppmを意味し、これは「mg/L」と同義である。
(ワイン風味飲料)
本発明は、アルコール含有量が3v/v%未満であるワイン風味飲料に関する。

(ワイン風味飲料)
本発明は、アルコール含有量が3v/v%未満であるワイン風味飲料に関する。
本明細書における「ワイン風味飲料」とは、ワイン様の風味を有する飲料をいう。本明細書における「ワイン」は、主としてブドウの果汁を発酵させて製造されるアルコール飲料を意味する。
本明細書のワイン風味飲料は、ワイン風味を有する限り、酵母による発酵を経たものであってもよいし、経ていないものでもよく、乳酸菌や油脂生産菌などの酵母以外の微生物によって発酵されたものでもよい。また、アルコールを含んでいてもいなくてもよい。そのような飲料の例には、ワインを含有する飲料、ワインを濃縮して得られるワインエキスを含有する飲料、ワインを脱アルコールして得られる飲料及びそれを含有する飲料、果汁を乳酸発酵させて得られる飲料及びそれを含有する飲料、ワイン又はワインエキスを用いずに香料を用いてワインの味を模した飲料が含まれる。ワイン風味を有する限り、製法および原材料は特に限定されない。
ワイン風味飲料は、赤ワイン風味飲料であってもよいし、白ワイン風味飲料であってもよい。いずれの場合にも、ワインらしい飲みごたえがワインらしさを高める。
(アルコール)
本明細書において、特に断りがない限り、アルコールとはエチルアルコール(エタノール)のことをいう。

本発明のワイン風味飲料は低アルコール又はノンアルコールの飲料であり、そのアルコール含有量は3v/v%未満である。当該含有量は、2v/v%以下、1v/v%以下、または0.00v/v%でもよい。
本発明におけるアルコール含有量は、公知のいずれの方法によって測定してもよいが、例えば、振動式密度計によって測定することができる。具体的には、飲料から濾過又は超音波によって必要に応じて炭酸ガスを抜いた試料を調製し、そして、その試料を水蒸気蒸留し、得られた留液の15℃における密度を測定し、国税庁所定分析法(平19国税庁訓令第6号、平成19年6月22日改訂)の付表である「第2表 アルコール分と密度(15℃)及び比重(15/15℃)換算表」を用いて換算して求めることができる。
あるいは、アルコール含有量が極めて低い場合には、ガスクロマトグラフィーを用いてその含有量を測定してもよい。
本発明の飲料のアルコール供給源としては、酒類を用いることができる。このために用いることができる酒類は、通常の酒類として飲用されるものであれば特に限定されず、ウイスキー、ウオッカ、ラム、焼酎、スピリッツ類などの蒸留酒、日本酒、ワイン、ビールなどの醸造酒、リキュールなどの混成酒などを使用することができる。
本発明の飲料のアルコール供給源としては、酒類を用いることができる。このために用いることができる酒類は、通常の酒類として飲用されるものであれば特に限定されず、ウイスキー、ウオッカ、ラム、焼酎、スピリッツ類などの蒸留酒、日本酒、ワイン、ビールなどの醸造酒、リキュールなどの混成酒などを使用することができる。
(ナトリウム)
本発明の飲料におけるナトリウムの含有量は、70~950mg/kg、好ましくは120~950mg/kg、より好ましくは120~800mg/kg、さらにより好ましくは120~600mg/kgである。このような含有量範囲を採用することにより、ワイン風味飲料のワインらしい飲みごたえを高めることができる。
本発明の飲料におけるナトリウムの含有量は、70~950mg/kg、好ましくは120~950mg/kg、より好ましくは120~800mg/kg、さらにより好ましくは120~600mg/kgである。このような含有量範囲を採用することにより、ワイン風味飲料のワインらしい飲みごたえを高めることができる。
本発明の飲料に含有されるナトリウムは、ナトリウム塩、又はナトリウムイオンの形態であってもよく、この場合、その質量は遊離体(フリー体)の質量と実質的に同じである。また、本発明に関する、飲料(試料溶液)中のナトリウムの含有量又は濃度は、ICP発光分光分析装置を用いて公知の方法により測定することができる。
本発明においてナトリウムは、飲食品に用いることができる塩の形態で、或いはこれらを豊富に含む海洋深層水や海藻エキスなどの形態で飲料に添加することができる。
本発明の飲料にナトリウムを配合することができる塩としては、例えば、塩化ナトリウム、クエン酸三ナトリウム、グルコン酸ナトリウム、コハク酸一ナトリウム、コハク酸二ナトリウム、酢酸ナトリウム、DL-酒石酸ナトリウム、L-酒石酸ナトリウム、乳酸ナトリウム、フマル酸一ナトリウム、DL-リンゴ酸ナトリウムなどが挙げられる。したがって、一態様では、本発明の飲料は塩化ナトリウム、クエン酸三ナトリウム、グルコン酸ナトリウム、コハク酸一ナトリウム、コハク酸二ナトリウム、酢酸ナトリウム、DL-酒石酸ナトリウム、L-酒石酸ナトリウム、乳酸ナトリウム、フマル酸一ナトリウム、DL-リンゴ酸ナトリウムからなる群から選択される一以上の物質を含有する。

(Brix)
本明細書において「Brix」との用語は、溶液100gあたりの可溶性固形物重量(g)を意味し、通常は、糖度計や屈折計などを用いて20℃で測定された屈折率を、ICUMSA(国際砂糖分析法統一委員会)の換算表に基づいてショ糖溶液の質量/質量パーセントに換算して求める。飲料のBrix値が低ければ、糖質を含めた可溶性固形分の濃度が低いこととなる。

本発明の飲料は、低い糖質量を有し、そのBrix値は5.8以下である。好ましいBrix値の例は、5.0以下、又は4.5以下である。Brix値の下限値は特に重要ではないが、たとえば、1.0、1.5、2.0、2.5又は3.0であってよい。好ましいBrix値の範囲の例は、2.5~5.8、又は3.0~5.0である。そのような低い糖質量では飲みごたえが低減する傾向があるが、本発明は、そのような場合でも優れたワインらしい飲みごたえを高めることができる。
(炭酸ガス)
本発明の飲料は、炭酸ガスを含んでもよい。炭酸ガスは、当業者に通常知られる方法を用いて飲料に付与することができ、例えば、これらに限定されないが、二酸化炭素を加圧下で飲料に溶解させてもよいし、ツーヘンハーゲン社のカーボネーター等のミキサーを用いて配管中で二酸化炭素と飲料とを混合してもよいし、また、二酸化炭素が充満したタンク中に飲料を噴霧することにより二酸化炭素を飲料に吸収させてもよいし、飲料と炭酸水とを混合してもよい。これらの手段を適宜用いて炭酸ガス圧を調節する。
本発明の飲料は、炭酸ガスを含んでもよい。炭酸ガスは、当業者に通常知られる方法を用いて飲料に付与することができ、例えば、これらに限定されないが、二酸化炭素を加圧下で飲料に溶解させてもよいし、ツーヘンハーゲン社のカーボネーター等のミキサーを用いて配管中で二酸化炭素と飲料とを混合してもよいし、また、二酸化炭素が充満したタンク中に飲料を噴霧することにより二酸化炭素を飲料に吸収させてもよいし、飲料と炭酸水とを混合してもよい。これらの手段を適宜用いて炭酸ガス圧を調節する。
本発明の飲料が炭酸ガスを含有する場合、その炭酸ガス圧は、特に限定されないが、好ましくは0.7~4.5kgf/cm2、より好ましくは0.8~2.8kgf/cm2である。本発明において、炭酸ガス圧は、京都電子工業製ガスボリューム測定装置GVA-500Aを用いて測定することができる。例えば、試料温度を20℃にし、前記ガスボリューム測定装置において容器内空気中のガス抜き(スニフト)、振とう後、炭酸ガス圧を測定する。本明細書においては、特に断りがない限り、炭酸ガス圧は、20℃における炭酸ガス圧を意味する。
(他の成分)
本発明における飲料には、他にも、本発明の効果を損なわない限り、飲料に通常配合する添加剤、例えば、香料、ビタミン、色素類、酸化防止剤、保存料、調味料、エキス類、pH調整剤、クエン酸、品質安定剤等を配合することができる。

ある態様では、本発明の飲料は、よりナチュラルな味を追求するため、高甘味度甘味料を含有しないか、その含有量をできるだけ低くする。たとえば、当該飲料中の高甘味度甘味料の含有量は110ppm以下である。この濃度は、HPLC法などの公知の方法により測定することができる。
本明細書において用いられる「高甘味度甘味料」との用語は、ショ糖に比べて強い甘味を有する(例えばショ糖の数倍から数百倍の甘味を有する)天然甘味料及び合成甘味料を意味する。そのような高甘味度甘味料としては、ペプチド系甘味料、例えばアスパルテーム、アリテーム等;配糖体系甘味料、例えばステビア甘味料(ステビア抽出物およびステビアを酵素処理してブドウ糖を付加した酵素処理ステビアおよびステビアの甘味成分の中で最も甘味質のよいレバウディオサイドAを含む)、カンゾウ抽出物等;蔗糖誘導体、例えばスクラロース等;合成甘味料、例えばアセスルファムK、サッカリン等が挙げられる。
(容器詰め飲料)
本発明の飲料は、容器詰めの形態で提供することができる。容器の形態には、缶等の金属容器、ペットボトル、紙パック、瓶、パウチなどが含まれるが、これらに限定されない。例えば、本発明の飲料を容器に充填した後にレトルト殺菌等の加熱殺菌を行う方法や、飲料を殺菌して容器に充填する方法を通じて、殺菌された容器詰め製品を製造することができる。
本発明の飲料は、容器詰めの形態で提供することができる。容器の形態には、缶等の金属容器、ペットボトル、紙パック、瓶、パウチなどが含まれるが、これらに限定されない。例えば、本発明の飲料を容器に充填した後にレトルト殺菌等の加熱殺菌を行う方法や、飲料を殺菌して容器に充填する方法を通じて、殺菌された容器詰め製品を製造することができる。
(方法)
本発明は、別の側面では、アルコール含有量が3v/v%未満であるワイン風味飲料の製造方法である。当該方法は、当該飲料におけるナトリウムの含有量が70~950mg/kgとなるように原料を混合する工程を含む。当該原料には、ナトリウムを含有する材料(ナトリウム塩や果汁など)と、必要に応じて、水とが含まれる。他の原料は、飲料に関する上記記載から自明である。この方法は、アルコール含有量が3v/v%未満でありBrix値が5.8以下であるワイン風味飲料におけるワインらしい飲みごたえを高めることができるため、別の側面では、当該飲料におけるワインらしい飲みごたえを高める方法でもある。
本発明は、別の側面では、アルコール含有量が3v/v%未満であるワイン風味飲料の製造方法である。当該方法は、当該飲料におけるナトリウムの含有量が70~950mg/kgとなるように原料を混合する工程を含む。当該原料には、ナトリウムを含有する材料(ナトリウム塩や果汁など)と、必要に応じて、水とが含まれる。他の原料は、飲料に関する上記記載から自明である。この方法は、アルコール含有量が3v/v%未満でありBrix値が5.8以下であるワイン風味飲料におけるワインらしい飲みごたえを高めることができるため、別の側面では、当該飲料におけるワインらしい飲みごたえを高める方法でもある。
飲料中のナトリウムの含有量を調整する方法は、当該飲料に関する上の記載から自明である。そのタイミングも限定されない。例えば、上記工程を同時に行ってもよいし、別々に行ってもよいし、工程の順番を入れ替えてもよい。最終的に得られた飲料が、上記の条件を満たせばよい。また、上記成分の含有量等の好ましい範囲は、飲料に関して上記した通りである。さらに、追加的な他の成分やパラメーターの具体例や量も、飲料に関して上記した通りである。

具体的には、水に、一定量のワインエキス(白ワインから得られたもの:得られた飲料サンプル中1g/kg)、及び酸味料(リンゴ酸)と共に、種々の量のナトリウム塩(クエン酸三ナトリウム)及びショ糖を加え、下記表1に示された配合の複数の飲料サンプルを調製した。なお、クエン酸三ナトリウムは、塩自体の味の影響が少ないため、実験に用いた。得られたサンプルにおけるアルコール含有量は、いずれも0.00v/v%、酸度(酒石酸換算)はいずれも0.40g/100mlであった。
得られた飲料サンプルについて訓練された複数のパネラーが官能評価を実施し、「ワインらしい飲みごたえ」と「甘さ」を評価した。各パネラーは、それぞれの評価項目について1~5の5段階評価し(飲みごたえ又は甘さが強いほどスコアが大きい)、得られた評価点から平均点を求めた。そして、「ワインらしい飲みごたえ」については、平均点が2.5点以上を合格点とし、「甘さ」については、平均点が2.5点以下を合格点とした。
なお、評価の個人差を少なくするために、専門パネラーは、各スコアに対応した標準サンプルを用いて事前に各スコアと味との関係の共通認識を確立した。
結果を表1に示す。

Brix値が高い場合には、ワイン風味飲料のワインらしい飲みごたえが十分に得られやすい。一方、試験例1では、5.8以下という低いBrix値を有するワイン風味飲料では、ワインらしい飲みごたえが低くなりやすいこと、及びナトリウム含有量範囲を調整するとワインらしい飲みごたえを高めることができることが示された。
(試験例2) Brixとナトリウムの影響(2)
赤ワインおよび白ワインを希釈して得られるワイン風味飲料において、試験例1と同様の実験を実施した。

具体的には、市販のチリ産の赤ワインおよび白ワインを水で約13倍希釈して、アルコール含有量を約1.0v/v%に調整した後、それぞれの希釈ワイン(赤および白)に、一定量の酸味料(リンゴ酸)と共に、種々の量のナトリウム塩(クエン酸三ナトリウム)、及び甘味料(ショ糖)を添加して、下記表2に示された配合の飲料サンプル(赤ワイン含有飲料と白ワイン含有飲料)を調製した。得られたサンプルにおける酸度(酒石酸換算)はいずれも0.40g/100mlであった。
その後、得られた飲料について、試験例1と同様に官能評価を実施した。結果を表2に示す。
ワインを希釈して得られたワイン風味飲料においても、試験例1と同様の傾向が認められた。また、白ワインを用いた場合だけでなく、赤ワインを用いた場合でも同様の結果が得られた。
Claims (4)
- アルコール含有量が3v/v%未満であり、ナトリウムの含有量が70~950mg/kgであり、そしてBrix値が5.8以下である、ワイン風味飲料。
- ナトリウムの含有量が120~800mg/kgである、請求項1に記載の飲料。
- Brix値が2.5~5.8である、請求項1又は2に記載の飲料。
- アルコール含有量が3v/v%未満でありBrix値が5.8以下であるワイン風味飲料におけるワインらしい飲みごたえを高める方法であって、
当該飲料におけるナトリウムの含有量が70~950mg/kgとなるように原料を混合する工程を含む、前記方法。
