Abstract

Cette invention se rapporte aux industries alimentaires, pharmaceutiques et cosmétiques et concerne plus précisément un procédé de transformation d'algues brunes marines consistant à effectuer à traitement préalable de ces algues, à broyer et à faire sécher ces algues dans un dispositif de déshydratation à vide peu poussé à une température comprise entre 65 et 75 °C jusqu'à ce que l'humidité résiduelle du produit déshydraté soit comprise entre 5 et 15 % afin qu'on obtienne un produit sous forme de plaques, à traiter les algues en poudre sèches avec une solution acide, à les rincer à l'eau douce, à traiter les algues avec une solution alcaline, à chauffer et à homogénéiser la masse d'algues ainsi obtenue, à neutraliser cette masse au moyen d'une solution acide afin qu'on obtienne un produit sous forme de gel, à pasteuriser le produit obtenu, à faire sécher le produit sous forme de gel fini dans le dispositif de déshydratation à vide peu poussé à une température comprise entre 65 et 75 °C jusqu'à ce que l'humidité résiduelle du produit déshydraté soit comprise entre 5 et 15 %, et à réduire en poudre le produit déshydraté de façon qu'il soit possible de le rétablir à l'état de gel au moyen d'un trempage de 3 à 7 minutes.
