Abstract
Винахід стосується способу виробництва швидкорозчинної кави, що включає етапи отримання матеріалу з обсмаженої кави тонкого помелу, приготування водного кавового екстракту, змішування матеріалу з обсмаженої кави тонкого помелу з водним екстрактом кави для отримання першої суміші і сушіння першої суміші, причому перед сушінням, матеріал з обсмаженої кави тонкого помелу нагрівають до температури від 70 до 100 °C у водному середовищі протягом проміжку часу від 1 хвилини до 3 годин, при цьому перша суміш містить від 5 до 25 мас. % матеріалу з обсмаженої кави тонкого помелу, і матеріал з обсмаженої кави тонкого помелу має значення D50 від 1 до 40 мкм, при цьому стадію нагрівання матеріалу з обсмаженої кави тонкого помелу виконують шляхом нагрівання першої суміші, при цьому стадія сушіння першої суміші являє собою стадію розпилювального сушіння першої суміші. Винахід стосується також швидкорозчинної кави, отриманої за вказаним способом.
