Abstract

Referida a una composicion que comprende una mezcla de acidos grasos, en donde la mezcla de acidos grasos comprende por lo menos el 4,0% en peso de acidos grasos monoinsaturados de cadena muy larga y por lo menos el 1,0% en peso de acidos grasos poliinsaturados de cadena muy larga, en donde los acidos grasos son derivados de aceites naturales y en donde los acidos grasos monoinsaturados de cadena muy larga y los acidos grasos poliinsaturados de cadena muy larga tienen una longitud de cadena de 24 o mas atomos de carbono. Los aceites naturales son de origen marino o de organismos de agua dulce tales como aceite de pescado, aceite de microalgas, entre otros. En una realizacion de la invencion, la cantidad de colesterol de la mezcla de acidos grasos se minimiza y se proporciona un metodo para su produccion.
