Abstract

La presente invención se refiere a una composición de jugo espumosa simple, con una viscosidad, claridad o color del jugo original. En un aspecto, la invención se refiere a una composición de jugo espumosa de un producto de jugo y un éster de alginato grado alimenticio en una cantidad suficiente para generar o producir una capa de espuma sobre el mismo sin la adición de otros agentes de formación de espuma cuando el producto de jugo se someta a incorporación de gas sin tampoco producir un cambio significativo en la viscosidad, la claridad o el color del producto de jugo. En algunas modalidades, el éster de alginato es un éster de alginato grado alimenticio, tal como éster de alginato de propilenglicol. En algunas modalidades, el éster de alginato está presente en una cantidad de aproximadamente 0.01% a aproximadamente 0.25%, y preferiblemente de aproximadamente 0.05% a aproximadamente 0.1% de la composición de jugo espumosa. La presente invención también se refiere a un método de fabricación de una composición de jugo espumosa mediante la combinación de un producto de jugo con un éster de alginato.
