Abstract

Invenţia se referă la industria de panificaţie, în particular la o compoziţie şi un procedeu de fabricare a pâinii.Compoziţia pentru fabricarea pâinii, conform invenţiei, conţine făină de grâu de calitatea întâi, drojdie, sare, celoviridină Г20Х, fibre de soia alimentare praf şi apă, având următorul raport al ingredientelor, kg la 100 kg de făină de grâu:Procedeul, conform invenţiei, include amestecarea şi frământarea ingredientelor compoziţiei printr-un procedeu monofazic. Celoviridina Г20Х se utilizează sub formă de soluţie apoasă de 1%. Fibrele de soia alimentare praf se amestecă cu apă în proporţie de 1 : 3 şi se menţin timp de 15 ... 30 min la temperatura de 30 ... 35 °C. Apoi aluatul se supune fermentării, divizării în semifabricate, dospirii şi coacerii.Rezultatul invenţiei constă în intensificarea proceselor de maturare şi dospire a aluatului, reducerea scăzămintelor la coacere şi uscare, şi de asemenea în ameliorarea calităţii pâinii.
