LA PRÉSENTE INVENTION CONCERNE UN PROCÉDÉ PERMETTANT DE MARQUER DES FRUITS, PROCÉDÉ QUI COMPORTE UNE INCISION DANS UNE SURFACE D'UN MORCEAU DE FRUIT À L'AIDE D'UN FAISCEAU LASER ET LE DÉPÔT DANS UNE TELLE INCISION SUPERFICIELLE D'UNE SUBSTANCE DE CONTRASTE COMPORTANT DES SELS ET DES OXYDES DE FER ET DE CUIVRE SELON UNE CONCENTRATION SITUÉE ENTRE 0,001 % ET 1 % DU POIDS TOTAL. CES SELS OU OXYDES SONT EN MESURE DE RÉAGIR AVEC L'UN QUELCONQUE DES COMPOSÉS PHÉNOLIQUES ET/OU POLYPHÉNOLIQUES PRÉSENTS DANS LES TISSUS SUPERFICIELS DU FRUIT.
