Abstract

PURPOSE: Rice is boiled, adjusted in water content to a specific level and frozen, thus producing the objective frozen rice porridge which becomes eatable only by putting it in hot water and heating for a short time and of which the quality bears comparison with porridge prepared in a usual way.
CONSTITUTION: Rice is processed so that more than 90% of the starch becomes α-form, then frozen. In order to convert more than 90% of the starch in rice into α-form, rice is steamed at 100°C for 30W90min or at 120°C for 60W90min. Since the rice steamed at 100°C for 30min contains water by 56.0% and that steamed at 120°C for 90min, by 60%, the steamed rice can be used directly. As the rice steamed in this way has less tackiness and adequate α-form content, it is packed and frozen to give the objective frozen rice porridge.
