Abstract

PURPOSE: Pretreated flower petals are subjected to color fixing and removal of harshness and mixed with water containing saccharides and acids with heating to produce petal-containing jam keeping the original form and giving comfortably hard texture.
CONSTITUTION: Flower petals of rose or violet are washed with water, removed calyxes and dipped in hot water for a short time. Then, the resultant petals are color fixed and removed harshness by soaking in water containing 5W8% of acid such as acetic or citric acid. Then, water containing about 60W70wt% of saccharide such as sucrose and about 0.3W0.5wt% of acid is heated up to near the boiling point and the treated petals are added thereto. When necessary, the same kind of pectin as that included in the petals is added and heating is continued until gelling occurs to produce petal-containing jam containing about 0.05W0.15% based on the water included in the jam.
