Abstract

PURPOSE: Adlay grains are soaked in water, their starch is converted into the α- form, the resultant adlay grains are pressed and swollen with a hot air so that they give soft texture and comfortable viscosity and elastisity after restored with hot water by simple operations.
CONSTITUTION: Adlay grains are washed with water, soaked in water for more than 1hr so that the water content becomes 30W40%. The soaked adlay grains are steamed at 100W140°C for 3W60min or boiled at 90W130°C for 10W120min so that the starch is converted into the α-form and the water content is adjusted to 40W 60%. Then, the water content is reduced to 25W40% and the grains are passed through 0.1W1.0mm gap between rollers. Then, the water is further reduced to 10W 25% and the grains are swollen by treating with a hot air at 160W450°C for 10W 60sec.
