Abstract
PURPOSE: To obtain cooked rice having excellent taste and flavor even from rice stored for one or two years, by adding a lipase preparation to water for immersing the rice before cooking.
CONSTITUTION: In the immersion of rice in water before cooking, a lipase preparation essentially free from protease and amylase is added to the water for immersion in an amount of e.g. 0.01W0.5% of the rice to be cooked, and the rice is cooked by conventional method.
