Abstract

PURPOSE: To improve the appearance and taste of a fry and prevent the peeling of the coating, by gelatinizing a starch grain, cooling the grain to change the starch grain into the β-form partly, and using a composition containing the resultant aged modified starch and/or a fine powder of gelatinized starch for powdering a fry.
CONSTITUTION: An aged modified starch prepared by gelatinizing a starch, e.g. wheat flour or potato starch, and cooling and changing the gelatinized starch to the β-form partly is used as a powdering material for a fry, e.g. a fried slice of a fish. The fry prepared by using the material is prevented from oil splashing due to bumping of water and oil in frying, gives a good texture and causes no peeling of the coating.
