Abstract

PURPOSE: Fillets of fish meat are cut into pieces, which are mixed with ground fish meat, and the mixture is formed to produce large amounts of frozen food of processed fish meat which has good fibrous texture like skewered fry and no fishy taste.
CONSTITUTION: After it is cut into blocks, fish meat is boiled, drippings are discarded, and the meat is further taken to pieces. In the meantime, the other fish meat is ground by a usual method, seasoned by mixing with the fillets of the fish meat taken to pieces, then they are formed, when necessary boiled, battered and then frozen. The time of boiling the fillets is preferably 15W20min with regard to yield and quality. The conditions for taking the fillets to pieces depend on the state of the fillet and the broken degree of the fibers, but kneading should be avoided.
