Description
Claims (1)
- 【特許請求の範囲】 1. a) 35〜45wt/vol.%の乾燥物質含量を有するコーヒー抽出物を、450〜750 g/lのフォーム重量にまでフォーミングし、 b) ペレットを形成のために、フォーミング後のコーヒー抽出物を冷却したベ ルトに滴下して、そして該ベルト上で該ペレットを-30℃未満の温度まで凍結し 、そして c) 凍結後のペレットを0.8〜1.5mbarの圧力で乾燥させる を特徴とする、コーヒー抽出物のフリーズドライ方法。 2. 前記フォーミング工程の最後の工程b)において、前記フォーム温度が-2〜 -4℃であることを特徴とする、請求項1に記載の方法。 3. 工程b)において、各場合において、ペレットが直径4〜7mm、高さ約2.5 〜3.5mmの形態になるような量で、前記フォーミング後のコーヒー抽出物を前記 冷却したベルト上に滴下することを特徴とする、請求項1または2に記載の方法 。 4. 工程b)のペレットを-30〜-40℃の間の温度まで2〜3分間凍結させること を特徴とする、請求項1〜3項に記載の方法。 5. 工程c)のペレットを150〜300g/lの密度までフリーズドライすることを特 徴とする、請求項1〜4に記載の方法。 6. 工程c)におけるフリーズドライは、全乾燥時間にわたって0.8〜1.5mbarの 範囲の圧力で実施されることを特徴とする、請求項1〜5に記載の方法。 7. 工程c)におけるフリーズドライは、全乾燥時間の10〜50%にあたる期間の み0.8〜1.5mbarの範囲の圧力で実施され、そして残りの乾燥時間についてはこれ よりも低い圧力が使用されることを特徴とする、請求項1〜5に記載の方法。 8. 工程c)におけるフリーズドライは、0.5〜2時間のみ0.8〜1.5mbarの範囲 の圧力で実施され、そして残りの乾燥時間についてはこれよりも低い圧力が利用 されることを特徴とする、請求項1〜5に記載の方法。
