Abstract

1347984 Freeze-drying coffee GENERAL FOODS CORP 28 Sept 1971 [8 Oct 1970] 45234/71 Heading F4G [Also in Division A2] In a method for obtaining darkened freezedried coffee, coffee extract is frozen, ground and dried by sublimation in a vacuum at a pressure of 350 to 650 microns of mercury for the initial 1 to 5 hours of the drying cycle, and at a pressure less than 300 microns for the remainder of the cycle. The pressure, which is preferably in the range 400 to 500 microns, may be thus maintained for the first quarter to half of the drying cycle. Particles of the ground frozen extract which pass through a 40 mesh screen may be removed prior to drying.
