Description
Claims (1)
- 【特許請求の範囲】 1.マーガリン及び油中水型スプレッドに有用な脂肪ブレンドを製造する方法で あって、 (1)液性植物油(i)を30乃至55重量%、及び80%以上の脂肪酸残基が飽和 されており、炭素原子数16以上の鎖長を有する脂肪(ii)を45乃至70重量% 含む混合物をエステル交換し、 (2)エステル交換した混合物を分別し、以下の固体含量、 N10=54乃至85、好ましくはN10=55乃至80 N20=32乃至70、好ましくはN20=32乃至60 N30=4乃至30、好ましくはN30=7乃至25 N35=18未満、好ましくはN35=15未満 を有するオレインを得、より高温で融解するステアリンを分離することを含む 、方法。 2.工程(1)が、35乃至45重量%の油(i)及び55乃至65重量%の脂肪(ii) を含む混合物をエステル交換することを含む、請求項1の方法。 3.油(i)が、大豆油、ヒマワリ油、紅花油、菜種油、綿実油、コーン油、亜麻 仁油、これらの種々の油の高オレイン酸残基含有油、ピーナッツ油、オリーブ油 、及びこれらの油の2つ以上の混合物からなる群から選択される植物油である、 請求項1又は2の方法。 4.脂肪(ii)が、50乃至70℃のスリップ融点、及び10未満、好ましくは3 未満、及びより好ましくは約1のヨウ素価を有する、水素添加された油である、 請求項1乃至3のいずれか1請求項の方法。 5.脂肪(ii)が、水素化された大豆油、ヒマワリ油、紅花油、菜種油、綿実油、 コーン油又は亜麻仁油、これらの種々の水素添加された、高オレイン酸残基含有 油、水素化されたピーナッツ油又はオリーブ油、又はこれらの水素添加された油 の2つ以上の混合物である、請求項1乃至4のいずれか1請求項の方法。 6.脂肪(ii)が溶剤分別されたパーム油ステアリンである、請求項1乃至3のい ずれか1請求項の方法。 7.油(i)及び脂肪(ii)が同一起源である、請求項1乃至5のいずれか1請求項 の方法。 8.油(i)及び脂肪3が菜種油又は大豆油からなり、任意にさらに高オレインヒ マワリ油を含む、請求項1乃至5、又は7のいずれか1請求項の方法。 9.エステル交換が、酵素によって触媒される、請求項1乃至8のいずれか1請 求項の方法。 10.エステル交換が、アルカリ金属又はアルカリ金属の水酸化物又はアルコキシ ドを使用し、実質的に水分を含まず、25乃至175℃において実施されるラン ダムエステル交換である、請求項1乃至8のいずれか1請求項の方法。 11.工程(2)が、40乃至52℃の範囲の温度で乾燥分別することからなる、請 求項1乃至10のいずれか1請求項の方法。 12.工程(2)において、ステアリンが、固体脂肪含量、 N20=70乃至95 N30=50乃至95、好ましくはN30=50乃至90 N40=35乃至85、好ましくはN40=35乃至80 を有するように分離される、請求項1乃至11のいずれか1請求項の方法。 13.油(i)が、リノレン酸の脂肪酸残基の20%以上からなる、請求項1乃至1 2のいずれか1請求項の方法。 14.油(i)及び脂肪(ii)の組み合わせた量が、エステル交換される混合物の80 乃至100%、好ましくは85乃至100%、より好ましくは90乃至100% を構成する、請求項1乃至13のいずれか1請求項の方法。 15.請求項1乃至14のいずれか1請求項の方法によって得られる、脂肪ブレン ド。 16. (1)液性植物油及び (2)構造化量の、請求項15の脂肪ブレンド60乃至100%及びN20≧20 を有する構造化脂肪0乃至40%から実質的になるハードストック脂肪 を含むマーガリン脂肪であって、このマーガリン脂肪は、トランス脂肪酸のレ ベルが10%を越えない、マーガリン脂肪。 17.30乃至80%の液性植物油及び20乃至70%のハードストック脂肪、好 ましくは40乃至70%の液性植物油及び30乃至60%のハードストック脂肪 を含む、請求項16の脂肪。 18.ハードストック脂肪が75乃至100%、好ましくは85乃至100%の請 求項15の脂肪ブレンド及び0乃至25%、より好ましくは0乃至15%のN20 ≧20を有する構造化脂肪からなる、請求項16又は請求項17の脂肪。 19.トランス脂肪酸含量が0乃至6%、好ましくは0乃至3%を有する、請求項 16乃至18のいずれか1請求項の脂肪。 20. N10=10乃至50、好ましくは16乃至45 N20=5乃至30、好ましくは5乃至20 N30=0乃至11、好ましくは0乃至8、より好ましくは、2乃至7、及び 好ましくはN35<5、より好ましくは0乃至4を有する、 請求項16乃至19のいずれか1請求項の脂肪。 21.請求項16乃至20のいずれか1請求項の脂肪を実質的に含有するマーガリ ン脂肪を含むマーガリン又は油中水型スプレッド。 22.脂肪製品であって、脂肪として、任意にN20≧20を有する構造化脂肪40 %までと混合された、請求項15の脂肪ブレンドを含み、脂肪製品の脂肪が32 乃至55のN20を有する、脂肪製品。
