Description
しかしながら、コーヒーをベースとするガス含有飲料は、開栓時などに吹きこぼれが発生するという問題があることが知られている。コーヒーをベースとするガス含有飲料の吹きこぼれを防止する方法として、特許文献1には、コーヒー抽出液のpHを3〜4.5に調整することによりフロックを形成させ、これを除去したものを用いてガス含有飲料を製造する方法が記載されている。また、特許文献2には、原料とするコーヒー水溶液に酸を添加してpHを低下させることにより凝集沈殿を生成させて、これを清澄化した後に炭酸水化することによりコーヒー入り炭酸飲料を製造することが記載されている。しかし、コーヒー抽出液のpHは通常、ほぼ中性付近(pH5〜6)であり、上記の方法のようにpHを酸性領域(pH3〜4.5程度)に低下させると、コーヒー本来の味わいが失われるなどの問題がある。
(1)クロロゲン酸類の濃度(単位:ppm)をコーヒー固形分の濃度(単位:重量%)で除した値が300以上である、容器詰め炭酸コーヒー飲料。
(2)コーヒー固形分の濃度が0.17〜2.33重量%である、(1)に記載の容器詰め炭酸コーヒー飲料。
(3)無菌充填装置によって充填された、(1)又は(2)に記載の容器詰め炭酸コーヒー飲料。
(4)容器詰め炭酸コーヒー飲料の製造方法であって、
i) コーヒー固形分の濃度が0.17〜2.33重量%、かつ、クロロゲン酸類の濃度(単位:ppm)をコーヒー固形分の濃度(単位:重量%)で除した値が300以上に調整された炭酸コーヒー飲料を製造する工程、
ii) 得られた炭酸コーヒー飲料を無菌充填装置を用いて容器に充填する工程、
を含む、前記方法。
(5)クロロゲン酸類の濃度(単位:ppm)をコーヒー固形分の濃度(単位:重量%)で除した値が300以上となるように調整することを含む、コーヒー飲料の泡切れをよくする方法。
本発明でいう炭酸コーヒー飲料とは、コーヒー成分を含有する炭酸飲料であればどのようなものであってもよい。例えば、コーヒー抽出液に、必要に応じて甘味料、pH調整剤、フレーバー成分、着色料、保存料等を加えて調合液を作成し、次いで、これに所定のガス圧となるように常法により炭酸ガスを付与した後、容器に充填する方法で調製することができる。
本発明の炭酸コーヒー飲料には、必要に応じて、飲料に通常配合される原料、例えば、カラメル等の着色剤又は色素、消泡剤、増粘剤、乳化剤を配合してもよい。
[実施例1]
コーヒー原料としては、インスタントコーヒーやコーヒーエキスを用いて、所定のコーヒー固形分としたものに適量の温水を添加してコーヒー飲料を得た(コーヒー固形分濃度:0.33〜1.67重量%)。各原料はコーヒー豆の焙煎度や抽出条件、濃縮条件などにより、クロロゲン酸類の濃度が異なるため、得られたコーヒー飲料はクロロゲン酸類濃度を測定し、泡切れ評価試験に供した。充填時、開栓時の吹きこぼれ因子としては、炭酸ガス圧も関与があるかもしれないが、ここでは液性の評価として、炭酸ガスを付与しない水準で評価を実施した。
結果を表1および図1に示す。
実施例1で得られたコーヒー固形分1.0%のサンプルに炭酸ガスを付与して炭酸コーヒー飲料の吹きこぼれについて評価を実施した。サンプルへの炭酸ガス付与はカーボネーターによって行い、ガス付けしたサンプルは350mlのPETボトル容器に330mlを充填した後、一晩冷蔵保管した。このときのガス圧は2.1kgf/cm2であった。

Claims (5)
- クロロゲン酸類の濃度(単位:ppm)をコーヒー固形分の濃度(単位:重量%)で除した値が300以上である、容器詰め炭酸コーヒー飲料。
- コーヒー固形分の濃度が0.17〜2.33重量%である、請求項1に記載の容器詰め炭酸コーヒー飲料。
- 無菌充填装置によって充填された、請求項1又は2に記載の容器詰め炭酸コーヒー飲料。
- 容器詰め炭酸コーヒー飲料の製造方法であって、
i) コーヒー固形分の濃度が0.17〜2.33重量%、かつ、クロロゲン酸類の濃度(単位:ppm)をコーヒー固形分の濃度(単位:重量%)で除した値が300以上に調整された炭酸コーヒー飲料を製造する工程、
ii) 得られた炭酸コーヒー飲料を無菌充填装置を用いて容器に充填する工程、
を含む、前記方法。 - クロロゲン酸類の濃度(単位:ppm)をコーヒー固形分の濃度(単位:重量%)で除した値が300以上となるように調整することを含む、コーヒー飲料の泡切れをよくする方法。
