Description
a) 40℃未満で、水性相の材料を混合するステップと、
b) 50℃を上回る温度、好ましくは70℃を超える温度で水性相を加熱するステップと、
c) 室温を上回る温度、好ましくは50℃以上の温度で、脂肪相にある水性相を乳化するステップと、
d) 室温を上回る温度で、油中水型エマルションを冷却するステップと、
e) 油中水型エマルションの油相に粒子を加えるステップ。
同じエマルションを実施例1のように作ったが、0.2%の水を、ある乳化剤(ステアリル乳酸ナトリウム)によって代替した。
Claims (8)
- 油中水型エマルションからなる、堅い構造を有するチョコレート製品であって、水性相が最終製品の60〜90重量%であり、脂肪相が最終製品の6〜15重量%であり、
前記油中水型エマルションは、脂肪相に分散しているココア粒子と、多糖類及びタンパク質類からなる群から選ばれる少なくとも一つの構造化剤とを更に含む、
チョコレート製品。 - 最終製品の6〜13重量%の脂肪相及び最終製品の60〜85重量%の水性相を含む、請求項1に記載のチョコレート製品。
- 前記構造化剤がカラゲナンであり、前記カラゲナンが最終製品の0.5〜4重量%の量で存在する、請求項1又は2に記載のチョコレート製品。
- 前記油中水型エマルションが乳化剤をさらに含み、前記乳化剤がPGPR又は低HLBショ糖エステルであり、最終製品の0.5〜3重量%の量で存在する、請求項1〜3のいずれか一項に記載のチョコレート製品。
- 前記脂肪相に分散されている最終製品の5〜30重量%の粒子を含む、請求項1〜4のいずれか一項に記載のチョコレート製品。
- 300kcal/100g以下のカロリー含有量を有する、請求項1〜5のいずれか一項に記載のチョコレート製品。
- SSLを含む、請求項1〜6のいずれか一項に記載のチョコレート製品。
- 共懸濁液を更に含む、請求項1〜7のいずれか一項に記載のチョコレート製品。
