Description
液体と気泡との混合物、
液体と気泡との混合物の上にある泡ヘッド(foam head)
から構成される発泡茶飲料であって、クリーマー、脂質及び増粘剤を含まず、
水と、茶抽出粉末を含む粉末状茶組成物とを組み合わせることによって生成される、発泡茶飲料に関する。
少なくとも0.7重量%の茶抽出粉末、及び
少なくとも1重量%の食品等級の酸、好ましくは、クエン酸
を含み、より好ましくは、
0.7〜55重量%の間の茶抽出粉末、及び
1〜55重量%の間の食品等級の酸、好ましくは、クエン酸
を含む。
0.7〜15重量%の間の茶抽出粉末、
1〜15重量%の間のクエン酸、
10〜95重量%の間の砂糖、
0.1〜20重量%の間のマルトデキストリン、
0.1〜5重量%の間のアスパルテーム、
0.1〜2重量%の間の酒石酸、
香料
に従って、茶抽出粉末、クエン酸、砂糖、香料、マルトデキストリン、アスパルテーム、酒石酸を含む。
少なくとも0.7重量%の茶抽出粉末、
少なくとも1重量%の食品等級の酸、好ましくは、クエン酸
を含む粉末状茶組成物である、方法に関する。
液体と気泡との混合物、
泡が飲料の約25%に相当する、液体と気泡との混合物の上にある泡ヘッド、
を提示する。
5gの黒茶葉を、実施例1で用いたのと同じプラスチックカプセルに入れ、同じ容量の水で抽出する。その結果、茶飲料は急速に消失する大きい気泡の薄い層を提示する。スプーンを用いて飲料を撹拌しても、液体中の気泡を分散させることができない。クリーミーな味は得られない。
実施例1の組成物中で用いられた0.25gの茶抽出粉末を、実施例1で用いられたのと同じプラスチックカプセルに入れ、同じ容量の水で抽出する。この結果、茶飲料は液相の上に飲料の5体積%未満に相当する大きい気泡の薄い層を提示する。飲料の動的効果を観察することはできない:飲料の調製の間又はスプーンで撹拌した後に、気泡は液体中に分散しない。これらの気泡は、実施例1の飲料の気泡よりも視覚的にかなり大きい。飲料はプレーン茶のような味がする。
実施例1の組成物中で用いられた5.5gの茶抽出粉末を、実施例1で用いられたのと同じプラスチックカプセルに入れ、同じ容量の水で抽出する。飲料は動的効果を示さない:気泡は、実施例1で観察されたようには飲料中に残留しないが、表面に向かって急速に上昇する。さらに、泡でできた部分は、飲料の20体積%より小さい。最後に、この飲料の味は、飲料がそのようなものとして飲用可能ではないようなものである。
Claims (8)
- 飲料調製装置における使用のためのカプセルであって、
前記装置が、前記カプセルを収容するための容器と、加圧下で前記カプセル中に流体を注入するための流体注入システムとを含み、
カプセルにおいて、
前記カプセルの内容物が、茶抽出粉末と、食品等級の酸との組合せを含む粉末状茶組成物を含み、前記内容物が、クリーマー、脂質及び増粘剤を含まないこと、
前記粉末状茶組成物が、
0.7〜15重量%の間の茶抽出粉末、
1〜15重量%の間のクエン酸、
10〜95重量%の間の砂糖、
0.1〜20重量%の間のマルトデキストリン、
0.1〜5重量%の間のアスパルテーム、
0.1〜2重量%の間の酒石酸、
香料
を含むこと、並びに
前記内容物を加圧下で前記流体により前記カプセルの内部で溶解及び/又は抽出され、液体と気泡との混合物、及び前記液体と気泡との混合物の上にある泡ヘッドから構成される発泡茶飲料が調製されることを特徴とする、カプセル。 - 流体が水である、請求項1に記載のカプセル。
- 泡でできた部分が飲料の少なくとも20体積%に相当する、請求項1又は2に記載のカプセル。
- 泡が安定的である、請求項1〜3のいずれか一項に記載のカプセル。
- 泡の平均気泡サイズが100μm未満である、請求項1〜4のいずれか一項に記載のカプセル。
- 気泡の少なくとも50%が50μmより小さいサイズのものである、請求項1〜5のいずれか一項に記載のカプセル。
- 飲料が分注されてから4分を過ぎると、液体と気泡との混合物中の液体から気泡が全体的に分離する、請求項1〜6のいずれか一項に記載のカプセル。
- 飲料を撹拌することにより、気泡を液体中で再度分散させることができる、請求項1〜7のいずれか一項に記載のカプセル。
