Description
従って、本発明の目的は、高濃度にカテキンを配合した飲料における苦みや渋みを緩和し飲用しやすい容器詰飲料を提供することにある。
(A)非重合体カテキン類 0.03〜0.6質量%、
(B)2,5−ジメチル−4−ヒドロキシ−3(2H)−フラノン(フラネオール、以下、「フラネオール」は登録商標である。)、ソトロン、ホモフロノール、マルトール、エチルマルトール、バニリン、エチルバニリン、アントラニル酸メチル及びN−メチルアントラニル酸メチルよりなる群から選ばれる1種以上を、(B)/(A)(質量比)が0.00005〜0.5の範囲で含有する非茶系容器詰飲料を提供するものである。
また、カテキンガロ体とは、ガロカテキン、ガロカテキンガレート、エピガロカテキン、エピガロカテキンガレートなどをあわせての総称である。
タンナーゼとしては、タンニンアシルヒドラーゼEC3.1.1.20が好適である。市販品としては、商品名「タンナーゼ」キッコーマン(株)製及びタンナーゼ「三共」三共(株)製などが挙げられる。
タンナーゼ処理の温度は、最適な酵素活性が得られる15〜40℃が好ましく、更に好ましくは20〜30℃である。
合成吸着剤の中でも特に、特に修飾ポリスチレン系合成吸着剤及びメタクリル酸メチル系合成吸着剤が好ましい。
合成吸着剤としては具体的には、SP207などの修飾ポリスチレン系合成吸着剤(三菱化学社製)、HP2MGなどのメタクリル系合成吸着剤(三菱化学社製)が挙げられるが、特に、SP207が好ましい。
更に、緑茶抽出物を合成吸着剤に吸着させた後に水洗浄を行うが、SV=0.5〜10[h-1]の通液速度で、合成吸着剤に対する通液倍数として1〜10[v/v]で、合成吸着剤に付着した没食子酸や不純物を除去するのが好ましい。10[h-1]以上の通液速度や10[v/v]以上の通液量で水洗浄すると非重合体カテキン類が溶出する場合があり、1[v/v]以下の通液量であると没食子酸の除去が不充分である。
これらの処理は、10〜60℃で行うことができ、特に10〜50℃、更に10〜40℃で行うのが好ましい。
活性炭の細孔容積は0.01〜0.8mL/g、特に0.1〜0.8mL/gが好ましい。また、比表面積は800〜1600m2/g、特に900〜1500m2/gの範囲のものが好ましい。なお、これらの物性値は窒素吸着法に基づく値である。
活性白土は天然に産出する酸性白土(モンモリロナイト系粘土)を硫酸等の鉱酸で処理したものであり、大きい比表面積と吸着能を有する多孔質構造をもった化合物である。
本発明容器詰飲料の濁度は、好ましくは0.1〜80、より好ましくは0.5〜80、
更に好ましくは1〜75、更に好ましくは1〜70の範囲である。
ただし、ヘイズ値は0〜100の範囲で、イオン交換水を0とする。
容器詰飲料のヘイズ値が上記範囲にある場合、成分が均一に分散して存在していることを示し、酸素透過下での光照射による色調安定性に優れる。
(B)/(A)(質量比)は、0.00005〜0.5の範囲で含有するが、好ましくは0.0001〜0.5、特に好ましくは、0.0001〜0.3である。本発明者は、これら特定の成分が、リモネン等の他のフレーバー成分に比べて特に顕著に苦み、渋み抑制効果に優れていることを見出したのである。また、成分(B)は本発明容器詰飲料中に0.0001〜0.3質量%、更に0.000012〜0.3質量%、特に0.000012〜0.1質量%が好ましい。リモネンの含有は、0.0002質量%未満、好ましくは、0.0001質量%未満である。
ここで、ナトリウムイオンやカリウムイオン濃度が低すぎると、飲む場面によっては味が物足りなく感じ、効果的なミネラル補給ができなくて好ましくない。一方、多すぎると、塩類自体の味が強くなり長期間の飲用に好ましくない。
非重合体カテキン類組成物を蒸留水で希釈し、フィルター(0.8μm)でろ過後、島津製作所社製、高速液体クロマトグラフ(型式SCL−10AVP)を用い、オクタデシル基導入液体クロマトグラフ用パックドカラム L−カラムTM ODS(4.6mmφ×250mm:財団法人 化学物質評価研究機構製)を装着し、カラム温度35℃で、A液及びB液を用いたグラジエント法によって行った。移動相A液は酢酸を0.1mol/L含有の蒸留水溶液、B液は酢酸を0.1mol/L含有のアセトニトリル溶液とし、試料注入量は20μL、UV検出器波長は280nmの条件で行った。
非重合体カテキン類と同様の手法で、高速液体クロマトグラフ(型式 島津LC-VPシリーズ)を用いて行った。
市販飲料のなかで、スポーツドリンク類を飲用するユーザーを対象に、一回に一品ずつ飲用する官能評価試験を行った(10名)。比較例2((B)成分無添加品)を基準として、下記の基準で評価した。
5;比較例2より苦みや渋みが増した。
4;比較例2より苦みや渋みがやや増した。
3;比較例2と苦みや渋みが同等。
2;比較例2より苦みや渋みがやや弱くなった。
1;比較例2より苦みや渋みが弱くなった。
カテキン含量が30%の緑茶抽出物にタンナーゼ処理(タンナーゼ濃度2%;反応温度20℃)を行い、スプレードライ法により噴霧乾燥させる。得られたパウダーをエタノールと水の混合溶媒(水:エタノール=15:85)でカテキンを抽出した後に混合液に対して8質量部の活性炭を添加して精製を行って、カテキン製剤水溶液(A)を得た。得られたカテキン製剤(緑茶抽出物の精製物)のガレート体率は44質量%であった。固形分中の非重合体カテキン類濃度は71質量%であった。固形分は23.2質量%であった。固形分中の没食子酸濃度は3.1質量%であった。
カテキン含量が30%の緑茶抽出物にタンナーゼ処理を行わず、スプレードライ法により噴霧乾燥させる。得られたパウダーをエタノールと水の混合溶媒(水:エタノール=15:85)でカテキンを抽出した後に混合液に対して8質量部の活性炭を添加して精製を行ってカテキン製剤水溶液(B)を得た。得られたカテキン製剤(緑茶抽出物の精製物)のガレート体率は54質量%であった。固形分中の非重合体カテキン類濃度は71質量%であった。固形分は23.2質量%であった。固形分中の没食子酸濃度は0.33質量%であった。
表1記載の処方で、酸性飲料(pH3.5)を製造した。飲料は、UHT殺菌装置により98℃30秒間殺菌し、透明PETボトルに充填した。
Claims (7)
- 緑茶抽出物の精製物を配合したpH2〜6の容器詰飲料であって、
次の成分(A)、(B)、(D)及び(E):
(A)非重合体カテキン類 0.03〜0.6質量%、
(B)2,5−ジメチル−4−ヒドロキシ−3(2H)−フラノン、マルトール、バニリン、アントラニル酸メチル及びN−メチルアントラニル酸メチルよりなる群から選ばれる1種以上
(D)甘味料、及び
(E)酸味料
を含有し、
成分(A)と成分(B)との質量比(B)/(A)が0.0001〜0.3の範囲であり、
(F)リモネンの含有量が0.0001質量%未満
である非茶系容器詰飲料。 - pHが3〜5である請求項1記載の容器詰飲料。
- 成分(B)を0.00001〜0.3質量%で含有する請求項1又は2記載の容器詰飲料。
- 甘味料を0.0001〜20質量%含有する請求項1〜3のいずれか1項記載の容器詰飲料。
- 容器詰飲料の濁度が0〜80である請求項1〜4のいずれか1項記載の容器詰飲料。
- 透明容器に充填されたものである請求項1〜5のいずれか1項記載の容器詰飲料。
- 非重合体カテキン類中のカテキンガレート体率が50質量%未満である緑茶抽出物の精製物を配合してなる非茶系容器詰飲料であって、(C)没食子酸0.0004〜29mg/100mLを含有する請求項1〜6のいずれか1項記載の容器詰飲料。
