Description
まず、そば種子類としては、いわゆる日本でそばと言われているものであればよく、例えば通常の普通種であるファゴピラム・エスクレンタム(Fagopyrum・esculentum)が挙げられる。また、そば種子類には、そば殻のついたもの(玄そば)、そば殻を除去したもの(抜きそば)、玄そば又は抜きそばを2〜3分割したもの(引き割りそば)、玄そば又は抜きそばを粉状にしたもの(そば粉)等があるが、本発明に用いる掛原料としてのそば種子類は、すっきりした酒質のそば焼酎とするために、後述する麹原料のみならず掛原料も抜きそばとする。
原料がすべてそばであるそば焼酎では、そば麹の安定的な供給が重要であり、抜きそばを原材料とするそば麹を用いることにより所期の目的を達成することができる。全量をそば麹とする全そば麹仕込としてもよい。

Claims (3)
- 掛原料としてそば種子類の抜きそば、麹原料としてそば種子類の抜きそばを原材料とするそば麹のみを原料としてなることを特徴とするそば焼酎。
- イソブチルアルコール含量が200ppm以上、イソアミルアルコール含量が500ppm以上であることを特徴とする請求項1記載のそば焼酎。
- 原料を糖化及び醸造することにより得られるそば焼酎を製造する方法において、抜きそばを原材料とするそば麹を用いることを特徴とする請求項1記載のそば焼酎の製造方法。
