化、及び青臭さの抑制」の評価を、11名のパネルによる2点比較法により行った。コク
の定義は、香味の「持続性」、及び「複雑さ」とし、「複雑さ」については、定義を以下
のとおりとした。
「複雑さ」を感じる・・・香味を多く感じられるが、特定の香味が際立ってなく、か
つ、明確に香味を分解できない状態。

場合にも、本発明の効果を確認することができた。上記結果をまとめると、本発明に係る
アブラナ科野菜調味料の製造方法を構成するのは、少なくとも、減香加熱及び付香加熱で
あることがわかった。この付香加熱が行われるのは、当該減香加熱より後、又は同時であ
る。
