- フレーバー組成物または消費製品の味またはフレーバーを改変するための、式(I)

で表される化合物またはそれらの混合物の使用(ただし、前記化合物は、N−アセチルグリシンではない)。 - 式(I)で表される化合物またはそれらの混合物が、N−アセチル−DL−グルタミン酸、N−アセチル−L−グルタミン酸、N−ホルミルグリシン、N−ホルミル−DL−フェニルアラニン、N−ホルミル−L−フェニルアラニン、N−アセチル−L−イソロイシン、アルファ−N−ホルミル−L−リジンおよびそれらの混合物からなる群から選択される、請求項1に記載の使用。
- 前記味またはフレーバーが、塩味、旨味、食欲をそそるフレーバー、甘味、酸味およびコク味からなる群から選択される、請求項1または2に記載の使用。
- フレーバー組成物または消費製品の味またはフレーバーの改変方法であって、前記フレーバー組成物または消費製品に、請求項1〜3のいずれか一項において定義された式(I)で表される化合物を添加することを含む、前記方法。
- 味またはフレーバーが、塩味、旨味、食欲をそそるフレーバー、甘味、酸味およびコク味からなる群から選択される、請求項4に記載の方法。
- 請求項1または2において定義された式(I)で表される化合物、および少なくとも1種の塩味物質、旨味物質、甘味、酸味、または食欲をそそるフレーバーの化合物を含む、フレーバー組成物または消費製品。
- 塩味物質、旨味物質または食欲をそそるフレーバーの化合物が、NaCl、MSG、またはリボヌクレオチドからなる群から選択される、請求項6に記載のフレーバー組成物または消費製品。
- 式(I)で表される化合物を消費製品の重量に基づき0.01〜10,000重量ppmの濃度で含む、請求項6または7に記載の消費製品。
